Steps
Before you start
- Trim and thoroughly rinse leeks, as sand and grit lodge between layers
- Grate the Gruyère if not buying pre-shredded
- Have a 2-quart (1.9 L) slow cooker ready
- Read the timing—most of the work is passive slow cooking
Sauté the leeks
- Heat the butter in a large 12-inch skillet over medium heat.
- Once foaming, add the sliced leeks and minced garlic.
- Season with ¾ teaspoon kosher salt and a pinch of black pepper.
- Stir occasionally and cook for 12–15 minutes, stirring gently until the leeks are very soft, golden, and beginning to caramelize at the edges.
- This gentle cooking brings out their natural sweetness.

Ready when: Leeks are very soft, pale golden, and beginning to caramelize at the edges
Tip: Stir gently to avoid breaking down the leeks too much; you want some texture remaining.
Deglaze the pan
- Pour the white wine into the skillet with the leeks, scraping the bottom with a wooden spoon to lift any browned bits.
- Let it simmer for 1–2 minutes so the wine reduces slightly and the alcohol cooks off, leaving behind a subtle flavor.

Ready when: Wine is slightly reduced and smells mellow, not sharp
Tip: Scrape up all the caramelized bits from the pan for extra flavor.
Transfer to slow cooker
- Pour the leek mixture (including all liquid) into the 2-quart slow cooker.
- Add the heavy cream, softened cream cheese, shredded Gruyère, thyme sprigs, and ground nutmeg.
- Stir gently with a rubber spatula until the cream cheese is mostly incorporated and the ingredients are combined.

Ready when: Cream cheese is mostly blended and no large lumps remain
Tip: Don't fully blend—a few pockets of cream cheese will melt into the dip as it cooks.
Cook on low
- Cover the slow cooker and set it to low.
- Cook for 1½ hours, stirring occasionally (every 20–30 minutes) to ensure even melting and prevent the cheese from pooling or burning at the edges.
- The dip will go from loose and separated to silky and cohesive.

Ready when: Dip is smooth, creamy, and heated through; cheese is fully melted and blended
Tip: Stir gently and don't overheat, or the cream may separate slightly. Low heat keeps it silky.
Season and serve
- Fish out the thyme sprigs.
- Taste the dip and adjust seasoning with kosher salt and freshly ground black pepper.
- Transfer to a serving bowl or leave in the slow cooker on the warm setting, and serve with crusty bread, crudités, or crackers.

Ready when: Seasoning is balanced and flavors are well-integrated
Tip: If the dip is too thick, stir in a tablespoon of cream at a time to reach your preferred consistency.
Good to know
Tips
- Clean leeks thoroughly by slicing them in half lengthwise, then running cold water between the layers to rinse away hidden sand and grit.
- For the creamiest texture, stir the dip every 20–30 minutes during the slow-cooking phase. This helps the cheeses melt evenly and prevents separation.
- Keep the slow cooker on the warm setting during your party to maintain the perfect serving temperature without overcooking.
- For a richer dip, replace 2 oz (57 g) of the cream cheese with an equal amount of grated Parmesan or aged Gruyère.
Make ahead
Prepare the leeks and garlic up to 2 days ahead and store in the fridge. You can also sauté the leeks and garlic the morning of your party, then refrigerate; reheat them gently in the skillet before transferring to the slow cooker.
Storage & reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat on the stovetop, stirring occasionally and adding a splash of cream if needed. The dip does not freeze well because the cream sauce can separate.
Substitutions
- Gruyère cheese, finely shredded → Emmental or Jarlsberg cheese. Use an equal amount of another nutty, semi-hard Swiss cheese for a similar melting quality and flavor profile.
- heavy cream → Crème fraîche. Substitute half the cream with crème fraîche for a tangier, slightly lighter dip with excellent body.
- fresh thyme sprigs → 1 teaspoon dried thyme or ½ teaspoon dried tarragon. Use about one-third the amount of dried herb, as it is more concentrated. Stir it directly into the dip rather than as sprigs.
- cream cheese, softened to room temperature → Mascarpone cheese. Use an equal amount of mascarpone for a richer, slightly less tangy dip with a more velvety texture.
