Virgin Islands Seasoning Blend
A fragrant Caribbean spice and herb blend featuring thyme, garlic, cumin, and warm spices. This seasoning captures the essence of Virgin Islands cooking and works beautifully for marinating chicken or fish, seasoning rice dishes, or adding depth to soups and stews. Mix fresh and ground ingredients for maximum flavor.
Steps
Before you start
- Make sure garlic is completely dry before blending
- Use a clean, dry spice grinder or mortar and pestle
- Store in an airtight glass jar away from heat and light
Dry fresh thymeOven 200°F / 95°C
- Strip fresh thyme leaves from the stems and discard the woody stems.
- Spread the leaves on a clean kitchen towel or paper towel and let them air-dry for 1–2 hours at room temperature until completely dry.
- This removes moisture that could compromise the blend's shelf life.
- If thyme still feels slightly damp, place it in a 200°F (93°C) oven for 5 minutes to finish drying.

Ready when: Thyme leaves are brittle and crumble easily between your fingers
Tip: Do not skip the drying step—fresh moisture will cause the blend to clump and spoil faster.
Dry minced garlicOven 200°F / 95°C
- Mince the garlic cloves very finely with a knife.
- Spread the minced garlic in a thin, even layer on a piece of parchment paper or a clean towel.
- Let it air-dry at room temperature for 2–3 hours, stirring occasionally, until completely dry and no moisture remains.
- If garlic still feels even slightly damp, place it in a 200°F (93°C) oven for 5–10 minutes until crispy.

Ready when: Garlic pieces are hard and brittle, not soft or tacky
Tip: Garlic must be completely dry or it will introduce mold risk. A food dehydrator at 110°F (43°C) for 2 hours is ideal if available.
Toast whole spices
- Place a dry skillet over medium heat.
- Add the cumin seeds, coriander seeds, allspice berries, and black peppercorns.
- Toast, stirring frequently, for 3–4 minutes until the spices become fragrant and darken slightly in color.
- Pour the toasted spices onto a clean plate to cool to room temperature, about 10 minutes.
- Do not let them burn—if they begin to smoke, remove from heat immediately.

Ready when: Spices smell deeply aromatic and have darkened slightly; they feel warm but handle easily
Tip: Toasting releases the essential oils in whole spices, amplifying their flavor. Watch carefully to avoid burning, which will make them bitter.
Grind spices and herbs
- Once the toasted spices have cooled to room temperature, add them to a spice grinder or mortar and pestle.
- Grind until they form a coarse powder with small visible pieces of the seeds—do not over-grind into a fine dust, as this reduces the blend's aromatic quality.
- If using a mortar, grind in batches of about 1 tablespoon at a time for best control.

Ready when: Spices are broken down into small visible bits, releasing visible oils and strong aroma
Tip: Stop grinding before the mixture becomes a fine powder—a texture with visible spice bits will give better flavor bursts in finished dishes.
Combine all ingredients
- Transfer the ground spices to a clean, dry bowl.
- Add the dried thyme leaves, dried minced garlic, sea salt, and the dried scotch bonnet pepper if using.
- Stir well to combine evenly.
- If the scotch bonnet is added, handle carefully with gloves to avoid hand irritation from the capsaicin.

Ready when: All ingredients are evenly distributed throughout the blend with no pockets of single ingredients
Tip: Wear gloves when handling dried hot peppers to avoid skin and eye irritation from the oils.
Store in airtight containers
- Transfer the finished seasoning blend to clean, dry glass jars with tight-fitting lids.
- Leave minimal headspace to reduce air exposure.
- Label each jar with the contents and today's date.
- Store in a cool, dark cupboard away from direct sunlight, heat, or humidity.
- Properly stored, the blend will stay flavorful for up to 4 months.

Ready when: Jars are sealed and labeled
Tip: Use small glass jars so you can use the blend while it's still at peak potency; once opened, the flavor begins to fade.
Good to know
Tips
- Use this blend as a dry rub for chicken, fish, or pork: combine 2–3 tablespoons of the seasoning with 2 tablespoons oil and rub generously over meat 2–4 hours before cooking, or overnight.
- For a marinade, mix 3 tablespoons of the seasoning blend with ¼ cup lime juice, ¼ cup olive oil, and ¼ cup chopped fresh cilantro or culinary pepper for added depth.
- Toast the finished blend in a dry skillet for 30 seconds just before using to reawaken its aroma and increase potency.
- The blend also seasons rice, beans, soups, and stews beautifully—start with 1–2 teaspoons per 4 servings and adjust to taste.
Make ahead
Prepare up to 4 months ahead. Store in airtight glass jars in a cool, dark place for maximum shelf life and flavor retention.
Storage & reheating
Room temperature in airtight glass jars away from heat, light, and humidity: up to 4 months. Refrigerator: not necessary but will extend shelf life. Freezer: not recommended as moisture can condense when thawing. Once opened, use within 2–3 months for best flavor. No reheating needed—use directly as a dry rub or marinade base.
Substitutions
- Fresh thyme leaves, loosely packed → 1 tablespoon (3 g) dried thyme. Use half the amount of dried thyme since it is more concentrated. Omit the drying step and mix directly into the final blend.
- Dried scotch bonnet or habanero pepper → ½ teaspoon cayenne pepper. Adds heat without the deep fruity notes of scotch bonnet. For a milder blend, omit entirely.
- Fine sea salt → Fine kosher salt or table salt. Use the same weight (18 g or 1 tablespoon). Avoid coarse salts, which won't distribute evenly throughout the dry blend.
- Cumin seeds → Ground cumin (1½ tablespoons / 15 g). Skip the toasting step if using pre-ground. Add it in the final step with the other dry ingredients. Flavor will be slightly less intense.
