A toasted spice blend that captures the warmth and depth of Trinidadian cuisine. This homemade curry powder combines coriander, cumin, fenugreek, and mustard seeds with turmeric for a balanced, aromatic blend with subtle bitterness and heat. Steps
Before you start
- Have all spices measured and ready before you start toasting
- Ensure your spice grinder or food processor is clean and dry
- Work in a well-ventilated area—toasted spice aromas can be intense
Measure whole spices
- Measure out 3 tablespoons (30 g) coriander seeds, 2 tablespoons (20 g) cumin seeds, 1 tablespoon (10 g) fenugreek seeds, and 1 tablespoon (10 g) brown or yellow mustard seeds.
- Keep these separate from the ground turmeric and black peppercorns.

Tip: Whole spices are fresher and more potent than pre-ground; they toast more evenly.
Toast whole spices
- Heat a small heavy-bottomed skillet over medium heat.
- Once hot, add the coriander seeds, cumin seeds, fenugreek seeds, and mustard seeds.
- Stir constantly for 4–5 minutes.
- You'll notice the spices darken slightly, become fragrant, and start to pop.
- Watch carefully—they can burn if left unattended.
- Stop toasting as soon as the aroma becomes rich and warm (not acrid or burnt-smelling).

Ready when: Spices are fragrant, slightly darker, and beginning to pop; aroma is warm and toasted, not burnt.
Tip: Keep the heat at medium and stir constantly to avoid burning. Burnt spices taste bitter and ruin the blend.
Cool toasted spices
- Pour the toasted spices onto a clean plate or shallow dish.
- Spread them out and let them cool to room temperature for about 5–10 minutes.
- This stops the cooking process and makes grinding easier.

Ready when: Spices are cool to the touch.
Grind toasted spices
- Once cool, transfer the toasted spices to a spice grinder, coffee grinder, or food processor.
- Grind in short pulses until you reach a fine powder (about 30 seconds to 1 minute depending on your equipment).
- You want a uniform, flour-like texture with no large chunks.

Ready when: Spices are ground to a fine powder with no visible whole seeds or large pieces.
Tip: Don't over-grind; excessive grinding can heat the spices and diminish their aroma. Use short pulses.
Sift and combine all spices
- Transfer the ground toasted spices to a small fine-mesh sieve or strainer.
- Gently sift them into a clean bowl to remove any coarse particles and create a consistent texture.
- Add 1.5 tablespoons (15 g) ground turmeric and 0.5 teaspoon (2 g) black peppercorns to the sifted mixture.
- Stir well until the turmeric and peppercorns are evenly distributed throughout.

Ready when: Curry powder is uniform in color (golden-yellow with darker specks) and no streaks of turmeric or peppercorn remain.
Tip: Sifting removes lumps and ensures the blend tastes consistent in every tablespoon.
Store in airtight container
- Let the curry powder cool completely (a few minutes).
- Pour it into a clean, dry airtight glass jar or container.
- Label it with the date.
- Store away from direct sunlight and heat.

Ready when: Curry powder is sealed in an airtight container.
Tip: Glass jars preserve flavor better than plastic. Avoid storing in direct sunlight or near heat sources.

Tips
- Toast all whole spices together for even flavor development; toasting pre-ground turmeric makes it bitter, so add it after grinding.
- Use 1 to 1.5 teaspoons (5–7 g) of this blend per serving of curry, roti, or stew as a base, adjusting to taste.
- If your curry powder darkens or smells burnt, discard it and start again; burnt spices cannot be salvaged.
- For best flavor, use within 3 weeks when stored at room temperature, or freeze for up to 6 months.
Make ahead
Prepare this blend up to 2 weeks ahead (or longer if frozen). Store in an airtight container in a cool, dark pantry or spice cabinet.
Storage & reheating
Room temperature: up to 3 weeks in an airtight glass container away from heat and light. Refrigerator: up to 1 month (for extra freshness in warm climates). Freezer: up to 6 months in a sealed freezer bag or airtight container. No reheating needed—use straight from storage.
Substitutions
- fenugreek seeds → an additional 1 tablespoon (10 g) coriander seeds. Fenugreek adds a subtle maple-like sweetness; omitting it makes the blend earthier but still delicious.
- brown or yellow mustard seeds → 0.5 teaspoon (2 g) dry mustard powder (ground mustard). Adds sharpness but less depth than whole seeds. Mix in after grinding the toasted spices, not before.
- black peppercorns → 0.25 teaspoon (0.5 g) cayenne pepper or dried red chili flakes. For more heat. Start with less and taste; cayenne is significantly hotter than black pepper.
- coriander seeds → 2 tablespoons (20 g) fennel seeds. Fennel brings a licorice note instead of coriander's citrusy warmth. Use half the amount if mixing both together.
