Steps

Before you start
  • Pat the chicken completely dry with paper towels (this is essential for crispy skin)
  • Remove chicken from the refrigerator 30 minutes before roasting to bring it closer to room temperature
  • Preheat the oven to 425°F (220°C)
  • Have all aromatics (garlic, shallots) minced or crushed and ready
  1. Make the caramel sauce

    • In a small saucepan over medium heat, combine the sugar and water.
    • Do not stir—just let the mixture heat.
    • After about 5 minutes, the sugar will begin to melt and turn golden amber.
    • Once it reaches a deep golden-brown color (about 8–10 minutes total), remove from heat.
    • Carefully pour in the fish sauce (it will bubble) and stir gently with a wooden spoon or heat-safe spatula.
    • Add the minced garlic, shallots, and freshly ground black pepper.
    • Let cool for 2 minutes so the caramel thickens slightly.
    • You should have about ¾ cup of glossy caramel sauce.

Ready when: Caramel is deep golden-brown and glossy, with aromatic garlic and shallots mixed in

Tip: Do not stir the caramel until the sugar has mostly melted, or it will crystallize. If it seizes, start over—this sauce is quick to make.

  2. Season and prepare chicken

    • Pat the chicken dry once more with paper towels (crucial for crispy skin).
    • Rub the outside and inside cavity generously with kosher salt and set the bird breast-side up in the roasting pan.
    • Rub the oil over the skin.
    • Pour half of the caramel sauce (about 6 tablespoons) over the chicken, working it under the wings and into the thighs where the meat is thickest.
    • Reserve the remaining sauce for basting.

Ready when: Chicken is well-coated and glistening

Tip: Don't skip rubbing the caramel under the wings and thighs—this is where it flavors the meat most.

  3. Roast the chickenOven 425°F / 220°C

    • Place the chicken in the preheated 425°F (220°C) oven and roast for 50–60 minutes, depending on the exact size of your bird.
    • After 30 minutes, baste with the reserved caramel sauce using a brush or spoon.
    • After another 15 minutes, baste again.
    • The skin should turn deep mahogany brown as the caramel caramelizes.
    • The chicken is done when the thickest part of the thigh (without touching bone) reaches 165°F (74°C) on a meat thermometer.

Ready when: Internal temperature reaches 165°F (74°C) in the thickest part of the thigh; skin is deep mahogany and glossy

Tip: Start checking temperature at the 50-minute mark; don't rely on time alone, as chicken sizes vary. If the skin is browning too quickly, lower the oven to 400°F (200°C).

  4. Rest and serve

    • Remove the chicken from the oven and let it rest on a cutting board or in the pan for 10 minutes.
    • This allows the juices to redistribute, keeping the meat moist.
    • Carve the chicken and transfer to a serving platter.
    • Drizzle any pan juices over the meat, then spoon any remaining caramel sauce from the bottom of the pan over the chicken.

Ready when: Chicken has rested and juices have cleared from the cavity

Tip: Don't skip the resting period—it makes a noticeable difference in juiciness.

Tips
  • Drying the chicken thoroughly is the single most important step for crispy skin. Pat it inside and out with paper towels at least twice.
  • If your caramel seizes (becomes grainy), discard it and start a fresh batch—it takes only 10 minutes and is worth the perfect result.
  • Vietnamese Caramel Roasted Chicken pairs beautifully with jasmine rice and a quick pickle of daikon and carrot. Serve with fresh lime wedges and chilies on the side.
  • For extra depth, reserve some pan drippings after the chicken rests and whisk them into a small amount of the leftover caramel sauce to make an even glossier glaze.
Make ahead

The caramel sauce can be made up to 2 days ahead and refrigerated in an airtight container. Gently reheat it in a small saucepan over low heat before brushing on the chicken. The chicken itself is best served fresh, though leftovers are excellent in sandwiches or shredded into rice bowls.

Storage & reheating

Cooked chicken keeps refrigerated in an airtight container for up to 4 days. Reheat gently in a 325°F (160°C) oven for 12–15 minutes, covering with foil to prevent drying. Freeze for up to 3 months; thaw overnight in the refrigerator before reheating.

Substitutions
  • fish sauce (nam pla or nuoc mam) → soy sauce. Use 3 tablespoons soy sauce in place of fish sauce for a milder, less pungent sauce. The result will be less authentically Vietnamese but still delicious.
  • shallots → yellow onion. One small yellow onion (about 4 oz / 115 g), minced, can replace the shallots. Shallots are more delicate, but onion works in a pinch.
  • vegetable oil → butter. Use 2 tablespoons softened butter instead of oil for a richer skin. The chicken will brown slightly less uniformly but will taste luxurious.
  • granulated sugar → honey or palm sugar. Use ⅓ cup (115 g) honey or 6 tablespoons palm sugar. Both create a slightly different caramel with deeper, more complex sweetness.
