Turnip Green Salad with Roasted Garlic and Chickpeas
A warm salad of tender turnip greens tossed with crispy roasted chickpeas and mellow roasted garlic cloves, finished with a bright lemon vinaigrette. The roasted garlic becomes creamy and sweet, the chickpeas add crunch and protein, and the greens wilt slightly from the warm components while keeping their peppery bite—a Southern-inspired take on a classic green salad.

Steps
Before you start
- Preheat oven to 400°F (200°C)
- Have all greens washed and dried before you start roasting
- Bring chickpeas to room temperature if using canned
Roast chickpeas and garlicOven 400°F / 205°C
- On a 9×13-inch (23×33 cm) sheet pan, toss the dried chickpeas and unpeeled garlic cloves with 3 tablespoons (45 ml) olive oil, a pinch of sea salt, black pepper, and the red pepper flakes if using.
- Spread in a single layer.
- Roast in a 400°F (200°C) oven for 25–30 minutes, shaking the pan halfway through, until the chickpea skins are blistered and golden and the garlic is very soft when squeezed.
- The chickpeas should sound hollow when tapped.

Ready when: Chickpeas are blistered and golden, garlic cloves are soft and golden
Tip: Pat the chickpeas very dry before roasting so they crisp instead of steam. Shake the pan halfway to ensure even browning.
Make the vinaigrette
- While the chickpeas roast, whisk together the lemon juice, 2 tablespoons (30 ml) olive oil, and whole-grain mustard in a small bowl.
- Season with a small pinch of sea salt and a few grinds of black pepper.
- Set aside at room temperature.

Ready when: Ingredients are combined and mustard is dispersed throughout
Cool and peel garlic
- Remove the roasted chickpeas and garlic from the oven and let sit for 5 minutes.
- Once cool enough to handle, gently squeeze each garlic clove out of its papery skin into a small bowl.
- The flesh should slip out easily.

Ready when: Garlic cloves have cooled enough to handle and slip easily from their skins
Tip: If garlic is still too hot, let it cool another minute or two. The roasted garlic will be very tender.
Assemble the salad
- Place the washed, dried turnip greens and thinly sliced red onion into a large mixing bowl.
- Whisk the vinaigrette once more to recombine, then pour it over the greens.
- Gently toss to coat—the warm chickpeas and garlic will be added next, and their heat will soften the greens slightly.

Ready when: Greens are evenly coated with dressing
Tip: If your turnip greens are very large, tear them into bite-sized pieces before tossing with the dressing.
Add warm components and finish
- Top the dressed greens with the warm roasted chickpeas and roasted garlic cloves.
- Scatter the lemon zest over the top if using.
- Give the salad a gentle final toss to combine all elements, letting the warmth from the chickpeas and garlic wilt the greens slightly.
- Taste and adjust the seasoning with a bit more sea salt or pepper as needed.
- Serve immediately while the chickpeas are still warm.

Ready when: All components are combined and the greens are wilted but still hold their shape
Tip: Toss gently to keep the roasted chickpeas intact. Serve right away so the warmth is preserved.
Good to know
Tips
- Drying the chickpeas thoroughly is essential for crispiness—use a kitchen towel or paper towels and rub them to remove surface moisture.
- Roasted garlic becomes sweet and creamy rather than sharp. You can mash some cloves into the vinaigrette if you like a more garlicky dressing.
- If you prefer a warm salad, you can toss the greens with just a light amount of warm oil from the roasting pan before adding the chickpeas and garlic, though the full vinaigrette is richer.
- Red onion adds bite and color here, but if you prefer a milder onion flavor, reduce the amount to 2 tablespoons (15 g) or omit it entirely.
Make ahead
You can roast the chickpeas and garlic up to 4 hours ahead and store them in an airtight container at room temperature. Reheat in a 350°F (175°C) oven for 5 minutes before serving. The vinaigrette can be made up to 2 hours ahead and left at room temperature; whisk again before using. Do not dress the greens until you are ready to serve.
Storage & reheating
Best served immediately. Leftovers can be refrigerated in an airtight container for up to 1 day, though the greens will soften and the chickpeas will no longer be crisp. To reheat, warm the chickpeas and garlic separately in a 350°F (175°C) oven for 5 minutes and recombine with the cold greens.
Substitutions
- fresh turnip greens, stems removed → mustard greens, collard greens, or kale. Any sturdy bitter green works well here. Collards will be milder; mustard greens are peppery like turnips. Use the same weight.
- canned chickpeas, drained and rinsed → white beans or cannellini beans. Roast the same way. White beans will be slightly creamier but also roast well and become crispy. Use the same amount.
- fresh lemon juice → white wine vinegar or apple cider vinegar. Use 2 tablespoons (30 ml) vinegar mixed with 1 tablespoon (15 ml) water to keep acidity balanced. The flavor will be slightly more tangy.
- whole-grain mustard → Dijon mustard or wholegrain spicy mustard. Dijon will be smoother and less textured; use the same amount. Adjust to your heat preference.
