Tunisian Orange Blossom Limeade
A delicate, floral citrus drink inspired by Tunisian flavors. Fresh lime juice is sweetened with honey and perfumed with orange blossom water, then topped with sparkling water for a refreshing mocktail. Orange slices and a touch of mint make it a graceful choice for warm afternoons or after dinner.

Steps
Before you start
- Chill four glasses in the freezer for at least 10 minutes, or fill them with ice
- Have sparkling water chilled and ready
- Use fresh limes—avoid bottled juice for best flavor
Juice the limes
- Cut the limes in half and juice them using a citrus juicer or reamer, pressing firmly to extract as much juice as possible without pressing the pith.
- You should have about 180 ml (6 fl oz) of fresh lime juice.

Ready when: Lime juice is freshly extracted and appears clear and fragrant
Tip: Warm your limes for 30 seconds in the microwave or roll them under your palm on the counter to loosen the juice and get 20% more liquid.
Combine lime juice and honey
- In a small bowl or measuring cup, combine the lime juice with the warmed honey and orange blossom water.
- Stir well with a spoon or whisk to dissolve the honey completely into the liquid.

Ready when: Honey is fully dissolved and the mixture is uniform in color and consistency
Tip: Warm the honey briefly so it dissolves smoothly without clouding the drink; cold honey can make the mixture look murky.
Chill the base and prepare glasses
- Let the lime-honey mixture rest in the refrigerator for 5 minutes to chill slightly.
- While it chills, fill four 10–12 oz (300–355 ml) glasses with fresh ice cubes, filling each about halfway.

Ready when: Base is cold to the touch and glasses are filled with ice
Tip: Pre-chilling the glasses in the freezer prevents the drink from becoming too diluted as the ice melts.
Build the drinks
- Divide the chilled lime-honey mixture evenly among the four glasses, pouring it over the ice—about 3 oz (90 ml) per glass.
- Top each glass with 3 oz (90 ml) of chilled sparkling water, pouring it gently so the bubbles don't escape too quickly.

Ready when: Glasses are filled to just below the rim with a bubbly, golden liquid
Tip: Pour the sparkling water last and slowly to preserve the carbonation; if it sits, the drink will become flat.
Garnish and serve
- Stir each drink gently with a long spoon to combine the base with the sparkling water.
- Top each with a fresh orange slice and a mint sprig, if using.
- Serve immediately while the drink is cold and effervescent.

Ready when: Drink is well mixed, garnished, and frothy at the surface
Tip: Lightly bruise the mint between your palms before adding it to release its oils and intensify the aroma.
Good to know
Tips
- Orange blossom water is potent—start with 1 tsp (5 ml) and taste, then add up to an additional 0.5 tsp (2.5 ml) if you prefer a more pronounced floral flavor. It's easy to overdo.
- For a prettier presentation, freeze edible flowers (if available) or a thin slice of orange inside each ice cube the night before.
- This drink is naturally low in sugar and relies on honey for sweetness. If you like it sweeter, increase the honey to 4 tbsp (60 ml), or let guests add extra honey to taste.
- Serve within a minute or two of assembly; the carbonation is fleeting and the ice melts quickly, diluting the delicate flavor.
Storage & reheating
The lime-honey base (without sparkling water) can be made up to 8 hours ahead and kept covered in the refrigerator. Add the sparkling water and serve immediately so it remains fizzy. The complete drink does not store well; serve right after assembly.
Substitutions
- orange blossom water → rose water. Use the same amount (1.5 tsp / 7.5 ml). Rose water imparts a different floral note but maintains the elegance of the drink. Choose high-quality food-grade rose water.
- raw or clover honey → agave nectar or simple syrup. Use 2.5 tbsp (37 ml) of agave or 2.5 tbsp (37 ml) of simple syrup. These blend more easily into cold liquid than honey, though they lack honey's subtle flavor.
- sparkling water or club soda, chilled → ginger ale or lemon-lime sparkling water. Use the same amount. These add complementary spice or citrus but will change the delicate floral balance of the drink.
- fresh limes → fresh lemon juice. Use the same amount (180 ml / 6 oz). Lemon will make the drink slightly less tart and more mellow, shifting the character from lime-forward to more traditionally floral.
