Steps
Before you start
- Chill two tall glasses in the freezer for at least 15 minutes
- Have sparkling water chilled and ready
- Crush pistachios coarsely just before serving
Prepare cardamom syrup
- Combine water, sugar, and lightly crushed cardamom pods in a small saucepan.
- Bring to a boil over medium-high heat, stirring until sugar dissolves, about 2 minutes.
- Once boiling, remove from heat and stir in rosewater.
- Let the syrup cool completely at room temperature, about 10 minutes, allowing the cardamom to steep and infuse flavor.

Ready when: Syrup is clear and reaches room temperature; cardamom aroma is noticeable
Tip: Don't skip cooling the syrup—pouring hot liquid over cold yogurt may cause separation.
Strain syrup
- Pour the cooled cardamom syrup through a fine-mesh strainer into a small bowl or liquid measuring cup, discarding the cardamom pods.
- You should have about ⅔ cup (160 ml) of clear, fragrant syrup.

Ready when: Syrup is fully strained and pods are discarded
Tip: Straining removes the soft cardamom seeds and pod pieces, ensuring a smooth drink.
Layer in chilled glasses
- Divide the strained cardamom-rosewater syrup between the two chilled tall glasses, pouring about ⅓ cup (80 ml) into each.
- Add ½ cup (120 ml) ice cubes to each glass.
- Spoon ⅜ cup (90 g) of chilled Greek yogurt into each glass, letting it float slightly on top of the ice without fully stirring—this creates a layered effect.

Ready when: Yogurt sits in visible layers atop the syrup and ice
Tip: Keep the yogurt intact to showcase the beautiful layering; do not stir at this point.
Top with sparkling water
- Slowly pour ½ cup (120 ml) of chilled sparkling water into each glass, pouring over the yogurt so it cascades down and begins to blend with the layers.
- The carbonation will create a gentle bubbling effect.

Ready when: Both glasses are topped with fizzy sparkling water; slight blending at the layers is visible
Tip: Pour slowly to keep carbonation intact and to allow the flavors to mingle gradually rather than instantly.
Garnish and serve
- Divide the crushed pistachios evenly between the two glasses, sprinkling them over the top of each float.
- If using dried rose petals, scatter a few atop each glass for a decorative, floral touch.
- Insert a long spoon or stirrer into each glass and serve immediately.

Ready when: Both floats are garnished and ready to drink
Tip: Serve immediately after garnishing so the pistachios stay crispy and the drink is refreshingly cold.
Good to know
Tips
- Rosewater intensity varies by brand—start with 1.5 tablespoons if you're using it for the first time, then add more to taste in future batches.
- For a more elegant presentation, freeze a few edible rose petals or pistachios in ice cubes ahead of time and use those instead of plain ice.
- The drink is best enjoyed with a long spoon so you can mix the layers as you drink, blending the floral syrup with the creamy yogurt.
- If serving a crowd, make a larger batch of the cardamom syrup, then assemble individual floats to order.
Make ahead
The cardamom syrup (through step 2) can be made up to 2 days ahead and refrigerated. Strain it just before assembling the floats. Do not assemble the floats more than 30 minutes before serving, as the yogurt may start to dissolve and lose the layered presentation.
Storage & reheating
This is a fresh beverage best enjoyed immediately. Any leftover syrup (if you've made extra) will keep in a sealed container in the refrigerator for up to 5 days. The float itself does not store well once assembled.
Substitutions
- plain full-fat Greek yogurt or thick yogurt → Vanilla ice cream (2–3 scoops per float, about 90 g total per serving). For a richer, creamier version, use softened vanilla ice cream instead of yogurt. This transforms the float into a more indulgent dessert beverage.
- sparkling water or club soda → Still chilled water or chilled milk. If you prefer a non-carbonated drink, use still water or milk for a creamier float. The flavor will be less bright but equally delicious.
- green cardamom pods → ½ teaspoon ground cardamom (added directly to the syrup without steeping). Ground cardamom dissolves but won't require straining. Add it after removing from heat to preserve its aroma.
- roasted unsalted pistachios → Toasted sliced almonds, chopped walnuts, or crushed candied rose petals. Any crunchy, complementary garnish will work; choose based on what you have and your preference for nut flavor.
