Thai Basil Beef Skewers with Sweet Chili
Tender sirloin beef threaded with fresh Thai basil and garlic on skewers, air-fried until lightly charred and caramelized. A quick marinade infuses the meat with lime, fish sauce, and toasted spice, then a glossy sweet chili glaze adds heat and brightness. Ready in under 30 minutes—ideal for weeknight dinner or appetizers.
Steps
Before you start
- Soak 12 bamboo skewers in water for 30 minutes
- Pat the beef dry with paper towels before marinating
- Preheat the air fryer to 390°F (200°C) for 3 minutes
Toast the spice
- Heat a dry skillet over medium heat.
- Add the ground coriander and stir constantly for 30 seconds until fragrant.
- Transfer to a small bowl to cool.

Ready when: Spice is aromatic and lightly darkened
Tip: Toasting releases the coriander's essential oils for deeper flavor
Make the marinade
- In a medium bowl, whisk together the cooled coriander, black pepper, minced garlic, fish sauce, lime juice, palm sugar, and oil until the sugar dissolves completely.
- Add the beef cubes and toss until every piece is coated.
- Let sit for 10 minutes.

Ready when: Sugar is fully dissolved and beef glistens with marinade
Tip: Don't marinate longer than 15 minutes or the lime juice will toughen the meat
Thread the skewers
- Working with one skewer at a time, thread the beef cubes and basil leaves alternately, starting and ending with beef.
- Use 2–3 torn basil leaves per skewer, tucking them between the meat pieces.
- Leave a small gap between pieces for even air circulation.

Ready when: All 12 skewers are assembled with beef and basil
Tip: If basil leaves are large, tear them into pieces smaller than the beef cubes so they cook evenly
Air fry the skewersOven 390°F / 200°C
- Arrange the skewers in a single layer in the air fryer basket, leaving ½ inch between them.
- Air fry at 390°F (200°C) for 12 minutes, shaking the basket halfway through at 6 minutes.
- The beef should be medium-rare to medium inside and caramelized on the outside.

Ready when: Meat is deeply browned on all sides and feels firm when pressed lightly
Tip: If your air fryer is smaller, work in batches rather than overcrowding—cramped baskets steam the meat instead of crisping it
Warm the glaze
- While the skewers cook, pour the sweet chili sauce into a small saucepan and warm over low heat for 1–2 minutes, stirring occasionally.
- Do not boil.

Ready when: Sauce is warm throughout and pourable
Tip: Warming the glaze helps it coat the hot meat more evenly
Glaze and rest
- Transfer the hot skewers to a serving platter.
- Drizzle generously with the warm sweet chili glaze, turning to coat all sides.
- Let rest for 2 minutes before serving.

Ready when: Glaze clings to beef and glistens
Tip: Resting allows the meat fibers to relax, keeping it juicy when you bite into it
Garnish and serve
- Scatter sliced green onions and toasted sesame seeds over the skewers just before serving.
- Serve immediately with extra sweet chili sauce on the side if desired.

Ready when: Skewers are garnished and ready to eat
Tip: Add garnishes just before serving so the basil stays vibrant and the sesame seeds don't soften
Good to know
Tips
- Pat the beef completely dry before marinating—excess moisture prevents browning and creates steam in the air fryer.
- Fresh Thai basil is worth seeking out at Asian or specialty grocery stores; it's different from Italian basil and worth the effort for authentic flavor.
- If using bamboo skewers, soak them for at least 30 minutes to prevent charring. Metal skewers are also excellent and reusable.
- For medium-rare beef, use a meat thermometer to check the thickest piece during the last minute of cooking (aim for 125–130°F / 52–54°C).
Make ahead
Marinate the beef for up to 4 hours in the refrigerator (beyond 4 hours, the lime juice will break down the meat texture). Keep the basil separate and thread the skewers just before air frying for best flavor and color.
Storage & reheating
Cooked skewers keep in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer at 350°F (175°C) for 3–4 minutes until warmed through. Do not freeze—the basil and meat texture will degrade. Leftover glaze keeps refrigerated for 1 week.
Substitutions
- fresh Thai basil leaves → Fresh mint or regular basil leaves. Thai basil has a subtle anise note; mint adds coolness and regular basil is milder. Use the same quantity and adjust seasoning to taste.
- sirloin steak, 1-inch thick → Beef tenderloin, flank, or chicken breast (cubed). All are tender and cook quickly. Tenderloin is premium; chicken requires the same 12-minute cook time but watch for dryness—don't overcook.
- Thai sweet chili sauce → Sriracha mixed with 1 tbsp honey, or bottled chili-garlic sauce. Sriracha-honey is spicier; chili-garlic sauce is thicker. Adjust quantity based on heat and sweetness preference.
- palm sugar or light brown sugar → Brown sugar, white sugar, or honey. Palm sugar adds subtle caramel notes, but brown sugar is nearly identical. Use equal amounts; honey is sweeter, so reduce to 2 tsp.
