Steps

Before you start
  • Preheat oven to 350°F (175°C)
  • Remove phyllo dough from the fridge 30 minutes before using so it warms to room temperature and becomes pliable
  • Have all filling and syrup ingredients measured and ready—phyllo dries quickly once uncovered
  • Line a 9×13-inch (23×33 cm) baking pan with parchment paper for easy removal
  1. Make the tamarind-honey syrup

    • In a small saucepan over medium heat, combine the water, honey, tamarind paste, cinnamon, and lemon juice.
    • Stir constantly until the mixture comes to a gentle simmer, about 3–4 minutes.
    • The tamarind will dissolve into the honey and create a glossy, fragrant syrup.
    • Remove from heat and let cool to room temperature (about 15 minutes).
    • The syrup will thicken slightly as it cools.

Ready when: Mixture simmers gently and tamarind dissolves completely

Tip: Stir frequently to avoid sticking and to ensure the tamarind paste fully incorporates without lumps

  2. Prepare the pecan filling

    • In a medium bowl, combine the chopped pecans, cajeta, tamarind paste, cinnamon, and a small pinch of salt.
    • Stir gently until the mixture is evenly combined but still textured.
    • The cajeta should coat the pecans and tamarind should be distributed throughout.
    • Do not overmix, as you want to maintain some pecan pieces.

Ready when: Pecans are evenly coated with cajeta and tamarind mixture

Tip: Keep this filling near your work station—you'll apply it quickly as you build the bites

  3. Assemble the baklava bites

    • Unroll the phyllo sheets on a clean, dry work surface and cover them with a barely damp kitchen towel to prevent drying.
    • Working with one sheet at a time, place it on your work surface and lightly brush with melted butter using even, quick strokes.
    • Layer a second phyllo sheet on top and brush again with butter.
    • Cut the buttered phyllo stack into six equal rectangles (arrange in 2 columns × 3 rows).
    • For each rectangle, place ½ teaspoon of the pecan-cajeta filling near one short end, leaving a ½-inch border.
    • Fold the sides in slightly, then roll tightly toward the opposite end to create a small, compact packet.
    • Place seam-side down on the lined baking pan.
    • Repeat with remaining phyllo sheets and filling until you have 24 bites.
    • Brush the tops of each bite lightly with any remaining melted butter.

Ready when: All 24 bites are rolled, arranged seam-side down, and brushed with butter

Tip: Work quickly with phyllo and keep unused sheets covered; phyllo dries out fast. Use less filling per bite than you might think—overstuffing causes them to burst open during baking

  4. Bake until golden and crispOven 350°F / 175°C

    • Place the baking pan in the preheated 350°F (175°C) oven.
    • Bake for 20–25 minutes, until the phyllo is deep golden brown and crispy-looking.
    • The bites should feel light and hollow when ready.
    • Rotate the pan halfway through if the oven bakes unevenly.

Ready when: Phyllo is deep golden brown and bites sound crispy when gently tapped

Tip: Don't open the oven door during the first 15 minutes—heat fluctuations can prevent even crisping. If the phyllo is browning too fast, lower the heat to 325°F (163°C)

  5. Drizzle with warm syrup

    • Remove the baking pan from the oven and place it on a cooling rack.
    • While the baklava bites are still hot (this allows them to absorb the syrup), slowly and evenly drizzle the cooled tamarind-honey syrup over all 24 bites, using about 1 teaspoon per bite.
    • Work methodically to ensure even coverage.
    • The bites will absorb the syrup as they cool.

Ready when: All bites are evenly glazed with syrup

Tip: Pour the syrup slowly and let it soak in; rushing this step causes pooling. If you wait until the bites cool completely, they won't absorb the syrup as effectively

  6. Cool and set

    • Allow the baklava bites to cool completely on the pan for at least 2–3 hours at room temperature.
    • As they cool, the syrup sets and the phyllo firms up, creating a crispy-chewy texture.
    • Once fully cooled, they can be transferred to an airtight container.

Ready when: Baklava bites are completely cool and the phyllo is crispy throughout

Tip: Resist the urge to move them around while cooling; let them sit undisturbed for the best texture

Good to know

Tips
  • Phyllo dough is delicate and dries quickly; keep unused sheets covered with a barely damp towel while you work. Cold phyllo is easier to handle but too-cold sheets may crack when folded.
  • The key to crispy baklava is even butter distribution and proper oven temperature. If your oven runs hot, start at 325°F (163°C) and monitor closely.
  • Don't skip cooling the baklava completely before storing; warm pastry traps steam inside containers, which softens the phyllo. Two to three hours at room temperature is ideal.
  • Tamarind paste varies in intensity by brand; start with the recommended amount and adjust to your taste in future batches. A small taste of the syrup before drizzling lets you confirm the balance of sweet and tart.
Make ahead

You can prepare the filling and syrup up to 2 days ahead. Store the filling in an airtight container in the fridge and reheat the syrup gently over low heat before using. Assemble and bake the bites on the day you plan to serve them for maximum crispness.

Storage & reheating

Room temperature: Store in an airtight container for up to 5 days; the phyllo will gradually soften but remain edible. Refrigerator: Place in an airtight container for up to 1 week. To refresh, warm in a 275°F (135°C) oven for 8–10 minutes until crispy again. Freezer: Freeze unbaked, assembled bites on a baking sheet, then transfer to a freezer bag for up to 3 months. Bake directly from frozen, adding 5–7 minutes to the baking time.

Substitutions
  • pecan halves → walnuts or pistachios. Use the same weight and chop finely. Walnuts provide earthiness; pistachios add a subtle green color and nuttiness
  • Mexican cajeta (dulce de leche) → dulce de leche or caramel sauce. Use the same amount. Dulce de leche is nearly identical; caramel will be slightly less rich but still delicious
  • tamarind paste (concentrate) → lime juice or pomegranate molasses. Reduce the amount to 1.5 tablespoons of lime juice (9 ml) or use 1.5 tablespoons (22 ml) of pomegranate molasses, which is closer in flavor. Both add tartness but with different flavor profiles
  • honey → agave syrup or light corn syrup. Use the same amount. Agave is slightly thinner, so the syrup may be a touch runnier; corn syrup will mimic honey's thickness well
