Tahini Date Oatmeal

Creamy stovetop rolled oats simmered with chopped Medjool dates, cinnamon and a pinch of salt, then swirled with nutty tahini and finished with a drizzle of extra tahini, toasted sesame and walnuts. Naturally sweet, rich and filling.

Steps

Before you start
  • Stir the jar of tahini well first; the oil separates and the top can be thin while the bottom is stiff.
  • Pit the dates and check for stray pit fragments before chopping.
  • Use old-fashioned rolled oats, not instant or steel-cut, for the timing given here.
  • Have the milk measured and a small saucepan (2-quart) ready, since the oats need regular stirring.
  1. Toast nuts and seeds

    • Set a small dry skillet over medium heat.
    • Add the chopped walnuts and cook, stirring often, for 3 minutes.
    • Add the sesame seeds and toast 1 to 2 minutes more.
    • Tip everything onto a plate to stop the cooking.

    Ready when: Walnuts smell nutty and the sesame seeds turn pale golden.

    Tip: Move them to a plate right away; they burn quickly in a hot pan.

  2. Heat the liquids

    • In the 2-quart saucepan, combine the milk, water, chopped dates, cinnamon and salt.
    • Warm over medium heat, stirring occasionally, for about 3 minutes until small bubbles form around the edge and steam rises.

    Ready when: Tiny bubbles ring the edge of the pan, just below a boil.

    Tip: Don't let milk boil hard or it can scorch and boil over.

  3. Simmer the oats

    • Stir in the oats and reduce the heat to medium-low.
    • Simmer gently, stirring every minute or so and scraping the bottom of the pan, for 6 to 7 minutes.

    Ready when: Oats are tender with a slight chew, and the mixture is thick and creamy but still slightly loose; it will tighten as it rests.

    Tip: Keep the simmer gentle, with only a lazy bubble now and then.

  4. Stir in tahini

    • Remove the pan from the heat.
    • Add the 3 tablespoons tahini and the vanilla.
    • Stir vigorously for about 30 seconds until the tahini fully disperses and the oatmeal looks creamy and uniformly tan.

    Ready when: No visible streaks of tahini remain (unless you want a swirl) and the surface looks glossy.

    Tip: Adding tahini off the heat keeps its flavor smooth rather than bitter.

  5. Rest the oatmeal

    • Cover the pan and let it stand for 2 minutes.
    • The oats absorb the remaining liquid and thicken to a spoonable porridge.

Make ahead

"Cook the oatmeal through step 4, cool, and refrigerate in an airtight container up to 4 days. Toast the nuts and seeds up to 3 days ahead and keep them airtight at room temperature."

Storage & reheating

"Room temperature: not recommended beyond 1 hour. Fridge: airtight container up to 4 days. Freezer: portion into containers and freeze up to 2 months; thaw overnight in the fridge. Reheat in a saucepan or microwave with 2 to 4 tablespoons milk or water per serving, stirring until hot and creamy, 1 to 2 minutes in the microwave. Add toppings after reheating."

Substitutions
  • whole milk (or unsweetened oat milk) → unsweetened almond or oat milk. Makes the dish dairy-free; the result is slightly less rich.
  • Medjool dates → dried figs or pitted prunes, chopped. Use the same weight; figs add a seedy crunch and prunes a deeper flavor.
  • walnut halves → pistachios or sliced almonds. Toast for the same time; pistachios need only about 2 minutes.
  • tahini → smooth almond or cashew butter. Flavor will be sweeter and less savory, but the creaminess is similar.
