- Have all ingredients measured and a pastry brush or spoon ready for glazing.
Preheat and mix glazeOven 400°F / 205°C

Ready when: Glaze is smooth and well combined; oven is fully preheated
Tip: Mix the glaze while the oven preheats to save time.
Line and arrange bacon
- Line a large rimmed baking sheet (18×13 inches / 45×33 cm) with parchment paper.
- Arrange the bacon strips flat on the sheet in a single layer, with strips slightly overlapping if needed.
- Ensure bacon is not crowded so it cooks evenly.

Tip: If your bacon strips are very uneven in thickness or length, trim to similar sizes so they cook evenly.
Bake until partial colorOven 400°F / 205°C
- Place the baking sheet in the preheated 400°F (200°C) oven.
- Bake for 12 to 15 minutes, until the bacon is light golden brown and beginning to render fat, but is still pliable and not fully crisp.

Ready when: Bacon is light golden-brown and still pliable; edges are beginning to brown
Tip: Check the bacon around 12 minutes, especially if your oven runs hot. You want it partially cooked, not yet fully crisp.
Brush with glaze
- Remove the baking sheet from the oven (be careful—it's hot).
- Using a pastry brush or the back of a spoon, generously coat both sides of each bacon strip with the honey-sriracha glaze, working quickly while the bacon is still warm.

Ready when: All bacon strips are coated with glaze on both sides
Tip: Work quickly so the glaze doesn't cool and become sticky. If it does, thin with a few drops of water.
Bake until crispy and glazedOven 400°F / 205°C
- Return the baking sheet to the 400°F (200°C) oven and bake for 8 to 10 minutes, until the bacon is fully crisp and dark golden brown, and the glaze is caramelized and slightly tacky.

Ready when: Bacon is dark golden, crispy, and curled; glaze is caramelized and glossy
Tip: Watch closely at the 8-minute mark—glaze can go from perfectly caramelized to burned quickly, especially at the edges.
Top with sesame seeds and cool
- Remove the baking sheet from the oven.
- While the bacon is still hot, sprinkle the sesame seeds evenly over the strips, pressing them gently so they adhere to the sticky glaze.
- Transfer the strips to a paper-towel-lined plate to cool for 3 to 5 minutes.

Ready when: Sesame seeds are set onto glaze as it cools
Tip: Sprinkle seeds on the hot bacon so they stick; if you wait until it's cool, they won't adhere well.
Serve
- Arrange the glazed bacon on a serving platter and serve immediately while warm, or allow to cool to room temperature (the bacon will become crispier as it cools).
- Serve on its own or with your favorite appetizer sides.
Good to know
Tips
- For extra-crispy bacon, bake an additional 2–3 minutes in the final stage, but watch carefully as the glaze can char.
- If the glaze seems too thick, thin it with a teaspoon of water to make it easier to brush on.
- Set up your sesame seeds in a small dish right next to the oven so you can sprinkle them immediately when the bacon comes out—the glaze must still be tacky for them to adhere.
- For a spicier kick, use the full 2 tablespoons of sriracha or add a pinch of cayenne pepper to the glaze.
Make ahead
The glaze can be prepared up to 1 day ahead and stored in an airtight container at room temperature. The finished bacon is best enjoyed fresh but can be made up to 8 hours ahead.
Storage & reheating
Store in an airtight container at room temperature for up to 8 hours, or cover and refrigerate for up to 3 days. To reheat, place on a baking sheet and warm in a 300°F (150°C) oven for 5 to 7 minutes until warmed through and the glaze is tacky again. Do not microwave, as it can make the bacon soggy.
