Steps
Before you start
- Gather all ingredients and have them prepped and measured
- If using dried chickpeas, cook them ahead of time until tender
- Slice the telera bread lengthwise and warm it lightly if desired
Toast the pine nuts (optional)
- If using pine nuts, place them in a small dry skillet over medium heat.
- Toss occasionally for 2–3 minutes until fragrant and lightly golden.
- Transfer to a plate and set aside.
- Skip this step if using raw nuts.

Ready when: Nuts are fragrant and light golden
Tip: Watch closely; pine nuts burn quickly and become bitter if overtoasted.
Sauté the garlic
- Heat the olive oil in a large skillet over medium heat.
- When shimmering, add the minced garlic and cook for 1 minute, stirring constantly, until fragrant but not browned.

Ready when: Garlic is fragrant and just beginning to soften
Tip: Do not let garlic brown or it will taste acrid. Keep the heat at medium.
Add spinach and wilt
- Add the roughly chopped spinach to the skillet in handfuls, stirring to combine with the garlic and oil.
- Continue cooking and stirring for 3–4 minutes until all the spinach is wilted and any excess liquid has mostly evaporated.

Ready when: All spinach is wilted and the pan is nearly dry
Tip: Stir frequently to ensure even cooking and prevent sticking. The spinach will release water as it cooks; let it cook off.
Add chickpeas and spices
- Add the drained chickpeas, smoked paprika, and cumin to the skillet.
- Stir well to coat the chickpeas and spinach with the spices.
- Cook for 2 minutes to allow the spices to bloom and the chickpeas to warm through.

Ready when: Mixture is warm and smells fragrant; chickpeas are heated through
Tip: Blooming the spices in the hot mixture brings out their deep, complex flavors.
Fold in raisins and nuts
- Remove the skillet from heat.
- Stir in the golden raisins and toasted pine nuts (if using).
- Season with salt and black pepper to taste.
- Stir gently to combine all ingredients.

Ready when: Raisins and nuts are evenly distributed; filling is seasoned to taste
Tip: Remove from heat before adding raisins so they stay plump and chewy rather than hardening from prolonged cooking.
Assemble the bocadillos
- Split each telera roll lengthwise and lightly warm the rolls in the skillet (or toaster) if desired, about 30 seconds per side.
- Divide the warm spinach and chickpea filling evenly between the two rolls, spooning it onto the bottom halves.
- Top each with the upper halves.

Ready when: Bread is lightly warmed and filling is evenly distributed
Tip: Warming the bread makes it more pliable and helps it hold the warm filling better. Do not over-toast or the bread will be too crispy to eat comfortably.
Good to know
Tips
- For deeper flavor, add a small pinch of ground cinnamon (about 1/8 teaspoon) along with the paprika and cumin. It echoes the warmth of the raisins.
- If you can't find telera bread, look for pan de sándwich or any crusty white Spanish rolls at a bakery.
- The filling is quite forgiving: add more or less paprika and cumin based on your spice preference.
- This filling is also delicious served warm over rice, couscous, or as a side dish to roasted fish or chicken.
Make ahead
The spinach and chickpea filling can be made up to 2 days ahead and reheated gently on the stovetop or in the microwave just before serving. Assemble the sandwiches with warm filling for the best texture and flavor.
Storage & reheating
Store any leftover filling (no bread) in an airtight container in the refrigerator for up to 3 days. Reheat gently over medium-low heat, stirring occasionally, until warmed through. Do not freeze as the spinach texture will suffer. Assembled sandwiches are best eaten immediately but can be wrapped in foil and eaten at room temperature within 2 hours.
Substitutions
- telera rolls or similar crusty white sandwich bread → crusty baguette, ciabatta, or Portuguese rolls. Any sturdy, crusty white bread works. Cut into sandwich-sized pieces if using a baguette.
- canned chickpeas, drained and rinsed → white beans or cannellini beans. Use the same quantity. Mild-flavored beans work well and absorb the spices nicely.
- golden raisins → dried currants or chopped dried apricots. Either adds sweetness and texture. Use the same amount. Apricots will have a tangier flavor.
- pine nuts → toasted almonds or walnuts, roughly chopped. Almonds or walnuts provide similar crunch and richness. Toast them the same way.
