Steps

Before you start
  • Measure all spices accurately with dry measuring spoons or a kitchen scale for consistency
  • Use an airtight jar for storage to keep the blend fresh throughout the week
  • If paprika or thyme is clumpy, crush it gently before measuring
  1. Prepare your workspace

    • Gather a small mixing bowl and set it on a clean, dry work surface.
    • Lay out all dry measuring spoons and your six spice containers within reach.
    • This ensures you won't miss any ingredients and keeps the process organized.
    + Show details

Ready when: All equipment and ingredients are visible and within reach

Tip: Pre-organizing prevents you from forgetting any spices, which is easy to do when measuring multiple ingredients

  2. Break up paprika clumps

    • Open your smoked paprika container.
    • If the paprika has any large clumps (common in humid environments), crush them between your fingers or gently press them against the side of the container with the back of a spoon.
    • This ensures you measure loose powder rather than compressed clumps, which will throw off your measurements.
    • Do the same for any clumped thyme.

Ready when: Paprika and thyme are loose and crumbly with no visible clumps

Tip: Paprika especially compacts over time; if it's very hard, the recipe may be old and losing flavor—replace it if purchased more than 6 months ago

  3. Measure smoked paprika, onion, and garlic powders

    • Using a dry measuring tablespoon, carefully measure 3 tablespoons (27 g) smoked paprika into the mixing bowl.
    • Then measure 2.5 tablespoons (18 g) onion powder and add it.
    • Finally, measure 1.5 tablespoons (10 g) garlic powder and add it.
    • Level off each spoonful with the back of a knife for accuracy.
    • Do not pack the spoons.
    + Show details

Ready when: Three powders are in the bowl with roughly 7–8 tablespoons total

Tip: Measuring spoons are volumetric, not by weight—scoop gently and level off. If you have a kitchen scale, it's more accurate: aim for 27 g paprika, 18 g onion powder, and 10 g garlic powder for consistency batch to batch

  4. Measure herbs and seasonings

    • Measure 1 tablespoon (3 g) dried thyme and add to the bowl.
    • Then measure 1 teaspoon (6 g) kosher salt and stir it in briefly so it doesn't settle to the bottom.
    • Finally, measure ½ teaspoon (1 g) freshly ground black pepper and add it.
    + Show details

Ready when: All six ingredients are in the bowl, looking speckled and uneven

Tip: Add salt last and give it a quick stir to prevent it from settling; salt is denser and will sink to the bottom if not stirred in immediately

  5. Combine and mix thoroughly

    • Using a spoon or small whisk, stir the blend vigorously for 1–2 minutes, making sure to scrape the bottom and sides of the bowl.
    • Keep stirring until the color is uniform throughout—you should see no streaks of red paprika, white onion powder, or green thyme.
    • The final blend should look evenly mottled and consistent from spoonful to spoonful.

Ready when: Spices are evenly mixed with uniform color throughout and no visible clumps or streaks

Tip: Mix more thoroughly than you think necessary—it's easy to think the blend is done when you can still see patches of single ingredients

  6. Test and adjust (optional)

    • Pinch a small amount (about ¼ teaspoon) of the blend and taste it on your tongue.
    • You should taste paprika first, followed by garlic and onion, with a subtle thyme note and a whisper of heat from black pepper.
    • If you want it spicier, add a pinch more pepper; if it's too smoky, add a pinch more onion powder.
    • Stir in any adjustment thoroughly.

Ready when: Flavor is balanced and to your preference

Tip: Tasting helps you know whether your batch is consistent with previous batches or if spices have aged and lost strength

  7. Transfer to storage container

    • Using a spoon or a small funnel, carefully pour the finished blend into an airtight glass jar or container.
    • Use a spoon to scrape any remaining spices from the bowl into the jar—don't leave any behind.
    • Fill the jar so it is about three-quarters full, leaving a little headspace.
    • Seal the lid tightly until you hear it click or feel resistance.
    + Show details

Ready when: Blend is in a sealed container with a tight lid and a small air gap at the top

Tip: Use glass jars over plastic to prevent the blend from absorbing flavors or odors from the container material; glass also lets you see when you're running low

  8. Label and store

    • Using a permanent marker, write the blend name and today's date on a label or piece of masking tape on the jar.
    • For example: "Smoky Paprika Onion Blend – Oct 18, 2026." Place the jar in a cool, dark cupboard away from direct sunlight, heat, and humidity (not near the stove).
    • The blend is ready to use immediately.
    + Show details

Ready when: Jar is labeled with name and date and placed in a dry, cool, dark spot

Tip: Dating your blend helps you track freshness; spices begin to fade after 2–3 months, so replace or refresh if flavor weakens

Good to know

Tips
  • This blend works beautifully on roasted vegetables, grilled chicken, or as a rim for Bloody Mary cocktails. Use 1–1.5 teaspoons per pound (450 g) of meat, vegetables, or soup as a starting point; adjust to taste.
  • For a spicier blend, add ¼ teaspoon cayenne pepper or a pinch of smoked chili powder after mixing and stir in thoroughly.
  • Toast the dried thyme in a dry skillet over low heat for 30 seconds before measuring to intensify its aroma, then cool completely before adding to the other spices.
  • Store away from the stove and any heat source; spices lose potency quickly when exposed to heat and steam from cooking.
Make ahead

Prepare this blend up to 2 weeks ahead and store in an airtight container at room temperature. For longer storage, keep it for up to 3 months in a cool, dark cupboard away from heat and humidity. The blend is ready to use immediately after mixing.

Storage & reheating

Room temperature: up to 3 months in an airtight, opaque glass container away from heat, light, and humidity. Once opened, use within 3 months for best flavor. Do not refrigerate or freeze—any moisture will degrade the spices and cause clumping.

Substitutions
  • dried thyme → dried oregano or marjoram. Maintains the herbal note; oregano is more peppery and bright, marjoram is milder and sweeter. Use the same amount.
  • smoked paprika → sweet (non-smoked) paprika plus ¼ teaspoon liquid smoke mixed into the blend. Recreates the smoky flavor if smoked paprika is unavailable. The liquid smoke adds depth without overwhelming.
  • kosher salt → sea salt or table salt, but reduce to ¾ teaspoon. Table salt is denser than kosher salt, so less is needed. Measure by weight (4–5 g) for accuracy.
  • freshly ground black pepper → white pepper or freshly cracked black pepper. White pepper is milder and less sharp; cracked pepper adds visible specks and a coarser texture. Adjust to taste.
