Slow Cooker Salted Caramel Fudge Brownies

Dense, fudgy brownies baked in a slow cooker with ribbons of salted caramel running through the batter. The gentle, even heat creates an intensely moist crumb with a slight crust, while melted caramel and fleur de sel on top add sweet-salty contrast. Perfect for feeding a crowd or meal prep.

Steps

Before you start
  • Line slow cooker with parchment paper, leaving overhang on two sides for easy removal
  • Have caramel sauce at room temperature; warm it slightly if it's too stiff to drizzle
  • Cut parchment to fit the bottom and sides of your slow cooker for no-mess removal
  1. Melt chocolate and butter

    • Combine dark chocolate chips and butter in a small saucepan.
    • Heat over low heat, stirring occasionally, until fully melted and smooth, about 3–4 minutes.
    • Alternatively, microwave in a microwave-safe bowl in 30-second bursts, stirring between each, until smooth.
    • Set aside to cool to room temperature, about 5 minutes.
    + Show details

Ready when: Chocolate and butter fully melted and smooth

Tip: Avoid overheating chocolate; it can seize and become grainy if heated above 120°F (49°C)

  2. Mix sugars and eggs

    • In a large mixing bowl, whisk together granulated sugar, brown sugar, and eggs until pale and slightly fluffy, about 2 minutes.
    • Add vanilla extract and whisk until combined.
    + Show details

Ready when: Mixture is pale, thick, and takes 3 seconds to fall from whisk

Tip: Room-temperature eggs whisk more easily and create a better emulsion

  3. Combine wet ingredients

    • Pour the cooled melted chocolate mixture into the egg mixture and stir gently with a spatula until just combined, about 10 folds.
    • Don't overmix; small streaks of chocolate are fine.
    + Show details

Ready when: Chocolate is mostly incorporated; no large pools of liquid chocolate remain

Tip: Gentle folding preserves the airy texture you built in the egg mixture

  4. Dry ingredients and fold

    • In a small bowl, whisk flour, cocoa powder, baking powder, and salt.
    • Add to the chocolate batter and fold in with a spatula in 8–10 strokes until the flour just disappears.
    • The batter should be thick and smooth.
    + Show details

Ready when: No white streaks of flour visible

Tip: Overmixing develops gluten and makes brownies tough; use a folding motion, not stirring

  5. Line slow cooker

    • Line the inside of a 6-quart slow cooker with parchment paper, letting it hang over two opposite sides for easy removal later.
    • Smooth out wrinkles.
    + Show details

Ready when: Parchment sits flat, no major wrinkles

Tip: Overhang is essential—you'll use it as handles to lift the whole brownie block out when done

  6. Layer batter and caramel

    • Spread half the brownie batter (about 2 cups / 500 ml) evenly in the lined slow cooker.
    • Drizzle half of the caramel sauce (about 6 tablespoons / 90 ml) over the batter in a thin, even stream.
    • Add the remaining batter and spread gently to level.
    • Top with remaining caramel in a thin drizzle pattern.
    + Show details

Ready when: Caramel is visible through batter in ribbons; top is level

Tip: Drizzle caramel slowly so it sinks into the batter and creates distinct ribbons instead of pooling on top

  7. Cook on low

    • Cover the slow cooker and set to LOW.
    • Cook for 3 hours (180 minutes).
    • The edges will pull slightly away from the parchment sides, and a toothpick inserted in the center should come out with a few moist crumbs—not wet batter, but not fully clean either.
    + Show details

Ready when: Toothpick from center shows moist crumbs; edges pull away from sides slightly; top looks set but not dry

Tip: Slow cookers vary in temperature; if your brownie still jiggles in the very center after 3 hours, cook 15 minutes more. Underbaked is better than overbaked here—the residual heat will continue to set it as it cools

  8. Cool in slow cooker

    • Turn off the slow cooker and leave the cover off.
    • Let the brownies cool in the slow cooker for 20 minutes.
    • This gentle cooling prevents cracking on the surface.
    + Show details

Ready when: Top feels warm but not hot to the touch

Tip: Removing the cover lets steam escape gradually so the surface doesn't crack

  9. Remove and finish

    • Using the parchment overhang as handles, carefully lift the entire brownie block from the slow cooker and place on a wire rack or cutting board.
    • Let cool to room temperature, about 10 minutes.
    • Sprinkle fleur de sel evenly over the top.
    • Cut into 12 pieces with a sharp, wet knife (wipe between cuts).
    + Show details

Ready when: Brownies are cool enough to handle; caramel is set but still soft

Tip: A wet, warm knife slices through fudgy brownies cleanly without crumbling—dip in hot water and wipe between each cut

  10. Serve

    • Serve at room temperature or lightly warm.
    • Brownies are best within 2 days but stay delicious for up to 5 days.
    + Show details

Tip: A light reheat of 10–15 seconds in the microwave per brownie brings back the fudgy texture if they've firmed up in the fridge

Good to know

Tips
  • Slow cookers heat from the sides, so brownies cook slower than in an oven. The edges may cook faster than the center—this is normal and creates the fudgy texture. Trust the toothpick test, not time alone.
  • If your slow cooker runs hot, set it to LOW and start checking at 2.5 hours. If it runs cool, you may need the full 3 hours or up to 3 hours 15 minutes.
  • Caramel sauce hardens when cold, so use it at room temperature and drizzle it slowly so it blends into the batter. Cold caramel will seize into hard bits.
  • For extra fudginess, use natural cocoa powder (not Dutch-process), which has a richer, less acidic flavor that pairs beautifully with salted caramel.
Make ahead

Batter can be mixed up to 4 hours ahead and held in the slow cooker (lined but uncooked) in the refrigerator. Bring to room temperature (about 30 minutes) before cooking, then proceed. Finished brownies keep well for 5 days, so make them the day before serving for a make-ahead dessert.

Storage & reheating

Room temperature (in an airtight container): 5 days. Refrigerator (in an airtight container): 7 days; brownies may firm up—microwave 10–15 seconds per piece to restore fudginess. Freezer (wrapped individually in plastic wrap, then in a freezer-safe container): up to 3 months. Thaw at room temperature for 1–2 hours before eating, or microwave straight from frozen for 20–30 seconds.

Substitutions
  • dark chocolate chips (60% cacao) → milk chocolate chips or semi-sweet chocolate chips. Brownies will be sweeter and less intense. Use the same weight.
  • salted caramel sauce → dulce de leche or homemade caramel (thinned with 1 tablespoon heavy cream for drizzling consistency). Both work beautifully. Dulce de leche is slightly thicker, so warm it gently before drizzling.
  • fleur de sel or sea salt → finishing salt or kosher salt (use half the amount, as it's coarser). Any finishing salt adds the sweet-salty contrast. Avoid table salt, which is too fine and salty.
  • vanilla extract → omit or replace with 0.5 tsp bourbon or coffee extract. Coffee or bourbon deepens chocolate flavor. Vanilla is subtle here, so omitting is fine.
