Steps

Before you start
  • Line a 6-quart or larger slow cooker with two crisscrossed pieces of parchment paper (for easy removal)
  • Have all ingredients measured and ready
  • Prepare a water bath for the slow cooker (see instructions)
  • Toast the pecans lightly in a 350°F oven for 5 minutes if desired, for deeper flavor
  1. Prepare the slow cooker

    • Line a 6-quart or larger slow cooker with parchment paper, crisscrossing two sheets to cover the bottom and sides for easy removal.
    • If your slow cooker has a removable ceramic insert, you can line that separately and nest it into the slow cooker.
    • Fill the slow cooker with 2 inches of hot water around the insert (creating a water bath), and heat on high for 15 minutes while you prepare the batter.

    Ready when: Water steams gently

Tip: A water bath ensures even, gentle heat and prevents the bottom from overcooking.

  2. Make the crust

    • In a medium bowl, combine softened butter (6 tablespoons), brown sugar (1 cup), rolled oats (1.5 cups), and salt (0.25 teaspoon).
    • Mix with a wooden spoon or your hands until the mixture resembles coarse sand and holds together when squeezed.
    • Press this mixture firmly and evenly into the bottom of the parchment-lined slow cooker insert, creating an even layer about 1/4 inch thick.

Ready when: Mixture is well combined and pressed firmly into pan

Tip: Use the bottom of a measuring cup to pack the crust evenly so it supports the filling without crumbling.

  3. Prepare the filling

    • In a small or medium saucepan, melt butter (4 tablespoons) over medium heat.
    • Once melted and foaming, remove from heat and whisk in maple syrup (0.75 cup), brown sugar (0.5 cup), and heavy cream (0.25 cup) until smooth.
    • Stir in vanilla extract (1 teaspoon) and salt (0.5 teaspoon).
    • Fold in chopped pecans (1.5 cups) gently until evenly distributed.

Ready when: Mixture is smooth, warm, and well combined

Tip: Don't boil the mixture—just warm and whisk gently to avoid creating air bubbles that could cause the filling to puff or separate.

  4. Assemble and cook

    • Remove the preheated slow cooker from heat carefully.
    • Reduce the water level to 1.5 inches (the water will continue to heat the insert gently from below).
    • Pour the warm maple-pecan filling over the oat crust, spreading evenly to the edges.
    • Place the insert back into the slow cooker with the water bath.
    • Cover with the slow cooker lid and cook on low for 3 hours.
    • Do not lift the lid during cooking.
    + Show details

Ready when: Edges are set and slightly firm, center jiggles very slightly when gently shaken

Tip: The slow cooker's gentle heat prevents the filling from bubbling over. Resist opening the lid—it releases heat and extends cooking time.

  5. Cool in the slow cooker

    • Turn off the slow cooker and remove the lid.
    • Let the bars cool in the slow cooker for 30 minutes.
    • They will continue to firm up as they cool.
    + Show details

Ready when: Bars are warm to the touch but visibly set at the edges

Tip: This gradual cooling prevents cracking or sudden temperature shock.

  6. Remove and final cool

    • Carefully lift the bars out of the slow cooker using the parchment paper overhangs.
    • Place on a wire rack or cutting board and let cool completely at room temperature for at least 1 hour, until firm enough to cut cleanly.
    + Show details

Ready when: Bars are cool to the touch and hold their shape when cut

Tip: Cutting while still slightly warm will cause them to crumble; patience ensures clean edges.

  7. Cut and serve

    • Using a sharp, lightly oiled knife (wipe between cuts), cut the bars into 16 squares (4 rows by 4 columns).
    • If desired, sprinkle lightly with fleur de sel.
    • Store in an airtight container.

Ready when: Bars cut cleanly with minimal crumbling

Tip: Oil your knife blade between cuts to prevent the maple filling from sticking and tearing the crust.

Good to know

Tips
  • A 6-quart slow cooker is ideal for this recipe. In a larger (8-quart) cooker, you may need to add a slightly larger quantity of water to the bath.
  • For extra richness, brush the top of the finished bars with a light coating of maple syrup while still warm.
  • If you don't have a removable ceramic insert, you can line the slow cooker itself with a sturdy double layer of parchment, but you'll have less control over the water bath temperature.
  • The bars will have a chewy, fudgy center and a sturdy oat crust—more like a pecan pie bar than a traditional brownie. This texture is intentional and develops because of the gentle, moist heat of the slow cooker.
Make ahead

Bars can be baked up to 2 days ahead. Store covered in the refrigerator; let come to room temperature before serving for best flavor.

Storage & reheating

Room temperature, airtight container: up to 5 days. Refrigerator: up to 1 week. Freezer: up to 3 months (wrap individually or layer with parchment, then wrap the whole container). Thaw at room temperature for 1 hour before serving.

Substitutions
  • toasted pecan halves, chopped → walnuts or toasted almonds. Same amount. Walnuts add an earthier flavor; almonds are slightly more delicate.
  • pure maple syrup → honey or brown rice syrup. Use the same amount. Honey will be slightly less intense; brown rice syrup is very similar in flavor.
  • heavy cream → whole milk or half-and-half. Use the same amount. The filling will be slightly thinner; add 1 extra tablespoon of brown sugar for body.
  • old-fashioned rolled oats → crushed shortbread cookies or almond flour. 1.5 cups crushed shortbread for a richer crust, or 1 cup almond flour mixed with 0.5 cup oats for a nuttier base.
