Slow Cooker Hot Apple Cider

Fresh apple cider slowly warmed with cinnamon, cloves, allspice, and orange until the whole house smells like autumn. Set it and forget it, then ladle it out for a crowd.

Before you start
  • Use fresh, unfiltered apple cider (in the refrigerated section in fall), not clear apple juice, for deeper flavor.
  • Use whole spices, not ground. Ground spices make the cider cloudy and gritty.
  • Plan on 3 hours on LOW or 2 hours on HIGH before serving. The cider then holds on WARM for up to 4 hours.
  • Scrub the orange well, since the peel simmers in the cider.
  1. Prep the orange

    • Scrub the orange under warm running water and dry it.
    • Trim off the ends, then slice into ¼-inch (6 mm) rounds.
    • Pick out any visible seeds.

    Tip: Thicker slices release more bitter pith over a long steep, so keep them thin.

  2. Bundle the spices

    • Place the cinnamon sticks, cloves, allspice berries, and star anise (if using) in the center of a double layer of cheesecloth.
    • Gather the corners and tie tightly with kitchen twine.
    • If you skip the bundle, plan to strain the cider before serving.

  3. Fill the slow cooker

    • Pour the 3 quarts (2.84 L) of cider into a 5- to 6-quart slow cooker.

  4. Sweeten if needed

    • Taste the cold cider.
    • If it is tart rather than sweet, stir in the brown sugar until dissolved.

  5. Slow-cook the cider

    • Cover and cook on LOW for 3 hours, or on HIGH for 2 hours.

    Tip: Boiling makes the spices bitter and dulls the fresh apple flavor.

  6. Remove the aromatics

    • Use the twine to lift out the spice bundle, then scoop out the orange slices with a ladle or slotted spoon and discard.
    • Stir the cider and taste; add a little more brown sugar if you like.

Tips
  • For an adult version, stir 2 tablespoons (30 ml) bourbon, spiced rum, or brandy into each mug rather than the pot so everyone can choose.
  • Lightly toast the whole spices in a dry skillet over medium heat for 1 minute before bundling for a deeper flavor.
  • Keep the lid on while cooking to hold heat and aroma; lifting it adds about 15 minutes each time.
  • Pierce a few cloves into an orange slice for a pretty garnish.
Make ahead

Slice the orange and bundle the spices up to 1 day ahead; store the orange covered in the refrigerator. The finished cider can also be made 2 days ahead and reheated.

Storage & reheating

Refrigerate strained cider in a covered container up to 5 days. Freeze up to 3 months in freezer-safe containers, leaving 1 inch (2.5 cm) headspace. Reheat on the stovetop over medium-low heat or in the microwave until steaming, about 1–2 minutes per mug. Do not leave at room temperature longer than 2 hours once the slow cooker is turned off.

Substitutions
  • fresh apple cider → Unfiltered apple juice. Works in a pinch but is sweeter and less tangy; skip the brown sugar.
  • light brown sugar → Maple syrup. Use 3 tablespoons (45 ml) in place of the brown sugar.
  • large navel orange → Fresh cranberries (1 cup / 100 g). Adds tartness and color in place of the orange rounds.
  • cinnamon sticks, 3-inch (7.5 cm) → Ground cinnamon. Use 1 teaspoon, but expect a slightly cloudy cider.
