
Rich Hot Chocolate with Whipped Cream
A thick, velvety stovetop hot chocolate made with both cocoa powder and chopped dark chocolate, gently simmered with whole milk and finished with a cloud of softly whipped cream.

Steps
Before you start
- Chop the chocolate finely so it melts quickly and evenly without scorching.
- Chill the mixing bowl and whisk for 10 minutes in the freezer if your kitchen is warm; cream whips faster and holds better when cold.
- Use real dark chocolate (60–70% cacao) in bar form, not chips, which contain stabilizers and melt less smoothly.
- Have mugs ready and warm them with hot tap water if you like; the drink stays hot longer.
Whip the cream
- Pour the cold heavy cream and powdered sugar into a chilled medium bowl.
- Whisk vigorously by hand (about 2 minutes) or with a hand mixer on medium speed (about 1 minute) until the cream forms soft peaks that droop slightly when the whisk is lifted.
- Cover and refrigerate while you make the hot chocolate.

Ready when: Soft, billowy peaks that hold a shape but still slump gently at the tip.
Tip: Stop as soon as soft peaks form; overwhipped cream turns grainy and won't float nicely on the drink.
Make the cocoa paste
- In the saucepan, whisk together the cocoa powder, sugar, and salt.
- Pour in ½ cup (120 ml) of the milk.
- Set over medium-low heat and whisk constantly for 1–2 minutes until the cocoa and sugar dissolve into a smooth, glossy paste with no dry lumps.

Ready when: Smooth, thick paste with no visible dry cocoa specks and no sugar granules when rubbed against the pan.
Tip: Making a paste first prevents floating cocoa lumps that are hard to whisk out later.
Add remaining milk
- Slowly pour in the remaining 3½ cups (840 ml) milk while whisking.
- Increase the heat to medium and warm the mixture, whisking occasionally, for about 4 minutes.

Ready when: Steam rises and tiny bubbles form around the edge of the pan; the milk is hot (about 160–170°F / 70–75°C) but not boiling.
Tip: Don't let the milk boil. It can scorch on the bottom and develops a skin.
Melt in chocolate
- Reduce the heat to low.
- Add the chopped dark chocolate and whisk continuously for 1–2 minutes, until every piece has melted and the drink looks uniform and slightly thickened.

Ready when: No visible chocolate pieces; the surface is smooth and the liquid coats the back of a spoon.
Tip: Scrape the corners of the pan with the whisk so no chocolate sticks and burns.
Finish with vanilla
- Remove the pan from the heat and stir in the vanilla extract.
- Taste and, if you like it sweeter, whisk in another 1–2 teaspoons sugar until dissolved.
- Whisk briskly for 10 seconds to create a light foam.

Ready when: Lightly frothy surface and a rich chocolate aroma.
Tip: Vanilla added off the heat keeps its flavor, since heat dulls its aroma.
Pour and top
- Ladle or pour the hot chocolate into 4 mugs, filling each about three-quarters full.
- Spoon or pipe a generous mound of whipped cream on top of each and sprinkle with chocolate shavings, if using.
- Serve right away.

Make ahead
The hot chocolate base (through step 5) can be made up to 3 days ahead and refrigerated. Whip the cream up to 4 hours ahead and keep it covered in the fridge; re-whisk briefly if it loosens.
Storage & reheating
Room temperature: serve immediately; do not leave out more than 2 hours. Fridge: store leftover hot chocolate (without cream) in a covered container for up to 3 days; whisk well before reheating. Freezer: freeze the base in an airtight container for up to 2 months; thaw overnight in the fridge. Reheat gently in a saucepan over medium-low heat, whisking, until steaming (do not boil), or microwave in 30-second bursts, stirring between each.
Substitutions
- whole milk → unsweetened oat milk or 2% milk. Oat milk gives the creamiest dairy-free result; 2% milk gives a slightly thinner drink.
- dark chocolate bar (60–70% cacao) → semisweet or milk chocolate, chopped. Milk chocolate makes a sweeter drink, so reduce the sugar to 1–2 tablespoons.
- heavy whipping cream → chilled full-fat coconut cream. Whips well when very cold and keeps the drink dairy-free; coconut flavor will be noticeable.
- pure vanilla extract → ¼ teaspoon ground cinnamon or a drop of peppermint extract. Adds a warm spice or minty twist; use peppermint sparingly.
