Slow Cooker Eid Sweet Potato and Coconut Dip
A warm, creamy West African-inspired dip featuring roasted sweet potato blended with coconut milk, ginger, and warm spices. Finished with a squeeze of fresh lime, this aromatic dip is perfect for holiday gatherings and pairs beautifully with crispy flatbread, plantain chips, or fresh vegetables.
Steps
Before you start
- Choose sweet potatoes of similar size so they cook evenly
- Have an immersion blender or food processor ready
- If serving from the slow cooker, turn to warm setting before guests arrive
Pierce and arrange sweet potatoes
- Pierce each sweet potato 2–3 times with a fork to prevent steam buildup.
- Arrange them in the bottom of your 3.5–4 qt (3.3–3.8 L) slow cooker.
- They can overlap slightly if needed.

Tip: Piercing prevents the potatoes from exploding as steam builds inside the cooker.
Add coconut milk and aromatics
- Pour the 1.5 cups (360 ml) coconut milk over and around the sweet potatoes.
- Sprinkle the minced ginger, ground cinnamon (¾ tsp / 3 g), ground nutmeg (¼ tsp / 0.5 g), and cayenne pepper if using (⅛ tsp / 0.5 g) over the top.
- Stir gently to combine the spices with the coconut milk.

Tip: Distribute the spices evenly so they infuse the liquid as the potatoes cook.
Cook on low
- Cover the slow cooker and cook on low for 3½ to 4 hours.
- The sweet potatoes should be very tender when pierced with a fork—they should break apart easily, almost melting when you press them.

Ready when: Sweet potatoes yield immediately when pierced and break apart easily
Tip: Resist lifting the lid; each peek adds 15–20 minutes to cooking time.
Cool and scoop flesh
- Turn off the slow cooker and let the potatoes rest for 5 minutes so they cool slightly and are easier to handle.
- Using a spoon, scoop the soft sweet potato flesh away from the skin into a bowl.
- Discard the skins.
- You should have about 3 cups (720 ml) of cooked sweet potato.

Ready when: Flesh separates easily from skin
Tip: Some flesh may stick to the skin; that's normal. Don't overharvest the edges.
Blend with coconut cooking liquid
- Return the scooped sweet potato flesh to the slow cooker with the cooking liquid.
- Using an immersion blender, puree until completely smooth, about 1–2 minutes.
- Alternatively, transfer to a food processor and blend until smooth, then return to the slow cooker.

Ready when: Mixture is completely smooth with no lumps
Tip: An immersion blender keeps everything warm and in one vessel, making cleanup easier.
Stir in lime and honey
- Add the 3 tbsp (45 ml) fresh lime juice and 1½ tbsp (22 ml) honey to the puree.
- Stir well to combine.
- The lime adds brightness and cuts through the richness of the coconut milk.

Ready when: Dip is evenly combined and has a warm, creamy appearance
Tip: Taste and add more lime if you prefer a sharper, brighter flavor.
Season to taste
- Add sea salt and freshly ground black pepper to taste—start with ½ tsp (3 g) sea salt and ¼ tsp (0.5 g) black pepper, then adjust.
- The dip should be savory with a hint of sweetness and warm spice warmth.

Ready when: Flavors are balanced; no single note dominates
Tip: Season gradually; you can always add more salt, but you can't remove it.
Transfer to serving vessel
- Transfer the dip to a serving bowl.
- If serving immediately, it will be warm.
- If preparing ahead, leave it in the slow cooker on the warm setting (not high).
- Garnish with toasted coconut flakes and fresh cilantro if desired.

Tip: Leaving the slow cooker on warm keeps the dip at serving temperature for up to 2 hours.
Good to know
Tips
- For a smoother dip, blend for an extra minute or two; some home cooks prefer a slightly thicker, more textured consistency, so adjust to your preference.
- Toasted coconut flakes add a subtle crunch and deepen the coconut flavor. Toast unsweetened flakes yourself by spreading them on a small baking sheet and heating at 325°F (163°C) for 3–5 minutes, stirring once.
- Serve with crispy flatbread, plantain chips, roasted chickpeas, carrot sticks, or cucumber rounds. In West African tradition, it pairs beautifully with fried bean cakes or cassava chips.
- If the dip sits in the slow cooker on warm for more than 1–2 hours, stir it every 20 minutes and add small splashes of water or coconut milk if it thickens too much.
Make ahead
Prepare the sweet potatoes and store them in an airtight container in the refrigerator for up to 3 days before cooking. On the day of serving, add them to the slow cooker with the other ingredients and cook as directed. Alternatively, make the completed dip up to 2 days ahead, store it in the fridge, and reheat gently on low in the slow cooker for 30–45 minutes before serving.
Storage & reheating
Room temperature: up to 2 hours in a covered serving vessel. Refrigerator: up to 4 days in an airtight container. Freezer: up to 3 months in a freezer-safe container. To reheat, thaw overnight in the fridge and warm gently on the stovetop over medium-low heat or in a slow cooker on low for 30–45 minutes, stirring occasionally and adding a splash of water or coconut milk if it has thickened.
Substitutions
- unsweetened full-fat coconut milk → heavy cream or half-and-half. Use the same amount. The dip will be less coconutty but remain creamy. Add a pinch of vanilla extract to echo some of the original flavor complexity.
- fresh ginger → ground ginger. Use ½ tsp (1 g) ground ginger instead of 2 tbsp (20 g) fresh. Ground ginger is more concentrated, so start with less and adjust to taste.
- fresh lime juice → lemon juice. Use the same amount. Lemon is slightly less floral but provides similar acidity and brightness.
- honey → maple syrup or agave nectar. Use the same amount. Both add sweetness with their own distinctive character without overpowering the spices.
