Steps

Before you start
  • Preheat oven to 425°F (220°C) for roasting cabbage and caraway seeds
  • Have your slow cooker ready and cleaned
  • Gather all ingredients before you start—this dip benefits from advance prep
  • Plan for 4 hours of slow cooking time
  1. Roast cabbage and onionOven 425°F / 220°C

    • Toss the cabbage wedges and onion slices on a rimmed baking sheet with 3 tablespoons olive oil, 1 teaspoon kosher salt, and ½ teaspoon black pepper.
    • Spread in a single layer.
    • Roast at 425°F (220°C) for 20 minutes, stirring halfway through, until the cabbage is deeply browned and tender but still holding its shape.
    • The edges should be caramelized and slightly charred.

Ready when: Cabbage is deeply browned at edges and tender; edges slightly charred

Tip: Don't stir too early—let the bottom get caramelized undisturbed for the first 10 minutes for best browning.

  2. Toast caraway for garnish

    • While the cabbage roasts, place 2.5 tablespoons caraway seeds and 2 tablespoons butter in a small skillet over medium heat.
    • Toast, stirring frequently, for 3–4 minutes until the seeds are fragrant, darkening slightly, and the butter is foaming.
    • Watch carefully so the seeds don't burn.
    • Pour into a small bowl and set aside to cool—the seeds will crisp as they cool.

Ready when: Seeds are fragrant, butter is foaming, seeds are darker but not burned

Tip: Have the bowl ready before you start—caraway seeds can go from toasted to burnt quickly. Cool them away from heat immediately.

  3. Transfer to slow cooker

    • Remove the roasted cabbage and onion from the oven and add to a 3.5- to 4-quart slow cooker.
    • Stir in 1.5 teaspoons caraway seeds, minced garlic, smoked paprika, and freshly grated nutmeg.
    • Mix until the aromatics are distributed evenly.

Ready when: Aromatics are evenly distributed throughout cabbage

Tip: Work quickly after roasting so the warm cabbage begins to soften the garlic and bloom the spices.

  4. Add cream and cheese

    • Pour in the heavy cream and sour cream (both at room temperature).
    • Stir in the grated Parmigiano-Reggiano and mix thoroughly for 1 minute until smooth and well combined.
    • The mixture should look creamy with flecks of caramelized cabbage throughout.

Ready when: Mixture is smooth, creamy, and well combined

Tip: Cold cream can cause the slow cooker to take longer to reach temperature, so bring it to room temperature first.

  5. Cook on low in slow cooker

    • Cover the slow cooker and cook on low for 4 hours.
    • Stir every 60 minutes, scraping the sides and bottom.
    • The dip should be very creamy, with the cabbage completely softened and blended into the cream.
    • The color will deepen to a rich pale tan with golden-brown bits of caramelized cabbage.
    + Show details

Ready when: Cabbage is completely tender and blended; dip is very creamy and thick

Tip: Resist the urge to skip stirring—it prevents the bottom from sticking and ensures even cooking. The dip will thicken significantly as it cooks.

  6. Season to taste

    • Taste the dip carefully (it will be hot).
    • Add kosher salt and black pepper to taste—start with ½ teaspoon of each and add in small pinches.
    • The dip should taste rich and deeply flavored, with a subtle earthiness from the caraway and a hint of smoke from the paprika.
    + Show details

Ready when: Seasoning is balanced; no single flavor dominates

Tip: Season gradually—the cream and cheese already contain salt, and you can always add more but can't remove it.

  7. Finish and serve

    • Transfer the dip to a serving bowl or serve directly from the slow cooker on warm setting.
    • Scatter the cooled crispy caraway-butter mixture over the top and garnish with fresh dill if using.
    • Serve warm with crusty bread, crackers, cucumber slices, or bell pepper strips.

Ready when: Garnish is visible on top of creamy dip

Tip: Add the crispy caraway topping just before serving so it stays crunchy and doesn't soften into the hot dip.

Good to know

Tips
  • Room-temperature cream and sour cream are essential—cold dairy will cause the slow cooker to take much longer to come up to temperature and can lead to uneven cooking.
  • The crispy caraway-butter garnish is the signature of this dip. Don't skip it—the textural contrast between the silky cream and the crispy seeds is what elevates the dip from good to memorable.
  • For a lighter version, substitute half of the heavy cream with whole milk or half-and-half, though the dip will be less rich and may need 30 extra minutes of cooking to reach the desired thickness.
  • This dip is wonderful with Eastern European dark rye bread, but also excellent with water crackers, cucumber rounds, or warmed naan. Experiment with your favorite dippers.
Make ahead

Prepare the dip up to step 5 (before seasoning) up to 1 day ahead. Store in an airtight container in the refrigerator. To reheat, transfer to a slow cooker and warm on low for 1–2 hours, stirring occasionally, then season and add the crispy caraway topping just before serving. The dip can also be reheated gently in a heavy pot over low heat on the stovetop, stirring frequently to prevent sticking.

Storage & reheating

Room temperature: Serve immediately and do not store at room temperature. Refrigerator: Store leftover dip in an airtight container for up to 4 days. Reheat gently in a slow cooker on low or on the stovetop over low heat, stirring frequently, until warm. Do not boil. Freezer: Freeze the dip without the crispy caraway topping in a freezer-safe container for up to 3 months. Thaw in the refrigerator overnight and reheat on low heat on the stovetop or slow cooker. The crispy caraway topping is best made fresh, but can be stored separately in an airtight container for up to 2 days.

Substitutions
  • sour cream → Greek yogurt (full-fat, plain). Use an equal amount by volume. Greek yogurt will give a slightly tangier flavor and a bit more acid, which brightens the dip. The texture will be nearly identical.
  • Parmigiano-Reggiano, finely grated → Gruyère cheese, finely grated. Use the same amount. Gruyère adds a nuttier, slightly sweeter depth than Parmigiano-Reggiano and creates a more luxurious feel. It melts perfectly into the creamy base.
  • caraway seeds → Fennel seed or a mix of fennel and caraway (1 tsp fennel + 0.5 tsp caraway). If caraway is not available, fennel seed provides a similar warm, slightly sweet licorice-like note. A mix gives complexity. Do not exceed 1.5 teaspoons total, as these seeds are potent.
  • smoked paprika → Hot Hungarian paprika or sweet paprika. Use ½ teaspoon if using hot paprika (it's more potent), or 1 teaspoon if using sweet paprika for a milder, less smoky flavor.
