Party Creamed Crab and Old Bay Dip with Crispy Panko
A rich, savory hot dip loaded with lump crab meat, cream cheese, and sour cream, seasoned with Old Bay spice and topped with a golden, buttery panko crust. Baked until bubbly and served warm with crackers, bread, or vegetables.
Steps
Before you start
- Preheat oven to 375°F (190°C)
- Pick through crab meat to remove any shell fragments
- Bring cream cheese to room temperature for easier mixing
Mix base ingredients
- In a medium bowl, whisk together softened cream cheese, sour cream, and mayonnaise until smooth and well combined, about 1 minute.
- The mixture should be creamy with no lumps.

Ready when: Cream cheese is completely smooth and incorporated
Tip: Use room-temperature cream cheese—it mixes in smoothly without lumps. Cold cream cheese will clump.
Fold in crab and seasonings
- Gently fold the picked crab meat into the cream cheese mixture using a rubber spatula, being careful not to break up the lumps.
- Add Old Bay seasoning, Worcestershire sauce, lemon juice, hot sauce (if using), salt, and black pepper.
- Fold gently until just combined, about 2 minutes.
- Taste and adjust seasoning if needed.

Ready when: Crab meat is evenly distributed and seasonings are incorporated
Tip: Fold gently to keep crab pieces intact. Overmixing will break up the delicate lumps and make the dip dense.
Transfer to baking dish
- Spread the crab mixture evenly into an 8-inch (20 cm) baking dish or similar 2-cup (480 ml) shallow ceramic dish.
- Smooth the top with a spatula.

Ready when: Mixture is spread in an even layer
Make crispy panko topping
- In a small bowl, toss panko breadcrumbs with melted butter and garlic powder until all crumbs are evenly coated and moistened.
- The mixture should feel slightly damp and clump together slightly.

Ready when: Panko is evenly coated and glistens with butter
Tip: Don't skip the melted butter—it's what makes the panko golden and crispy, not just dry on top.
Top and bakeOven 375°F / 190°C
- Sprinkle the buttered panko evenly over the crab mixture.
- Bake in a preheated 375°F (190°C) oven for 18–20 minutes, until the panko is deep golden brown and the dip is bubbling around the edges.
- The center should feel warm when you touch the dish with the back of a spoon.

Ready when: Panko is deep golden brown; dip bubbles at the edges
Tip: Watch during the last 2–3 minutes so the panko doesn't burn. If it's browning too fast, you can loosely cover with foil.
Finish and serve
- Remove from the oven and let rest for 2 minutes.
- Scatter fresh scallions over the top if desired.
- Serve warm with crackers, toasted bread, crostini, or fresh vegetables.

Ready when: Dip has cooled enough to serve safely
Tip: Serve immediately while the panko is still crispy. The dip will soften as it sits, but it's still delicious at room temperature.
Good to know
Tips
- Pick through fresh crab meat carefully, especially if using pre-packaged lump crab—shell fragments are common and ruin the dip.
- Don't overmix once the crab is added. Gentle folding preserves those prized chunks of crab.
- For a deeper Old Bay flavor, increase to 2 tsp, but taste as you go since it can become overpowering.
- This dip stays warm in a slow cooker on low for 1–2 hours at a party, which is perfect for a crowd.
Make ahead
Assemble the dip in the baking dish (without the panko topping) up to 4 hours ahead. Cover and refrigerate. When ready to serve, top with the buttered panko and bake at 375°F (190°C) for 22–25 minutes (add 2–3 minutes for cold dip), until the panko is golden and the filling is hot.
Storage & reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a 325°F (160°C) oven for 8–10 minutes until warmed through. The panko topping will soften on reheating; for best texture, reheat the dip in a separate dish and sprinkle fresh panko on top just before serving.
Substitutions
- lump crab meat, fresh or refrigerated → Lump imitation crab meat (surimi). Works in a pinch, but fresh crab has better flavor and texture. Use the same amount.
- sour cream → Greek yogurt (plain, non-fat or full-fat). Substitute 1:1 for a tangier, slightly lighter dip with similar texture.
- Old Bay seasoning → Seafood seasoning blend or 1 tsp paprika + ½ tsp celery salt + ¼ tsp cayenne. Old Bay is ideal, but this blend approximates its warm, savory spice.
- panko breadcrumbs → Crushed saltine crackers or bread crumbs. Won't be quite as crispy, but still effective. Use the same volume.
