Slow Cooker Chicken Escarole and Bean Soup
A rustic Italian-inspired soup with tender chicken thighs, hearty cannellini beans, and wilted escarole in a garlicky broth. Minimal prep work makes this perfect for busy weekdays—just combine ingredients in the slow cooker and let it simmer until the flavors meld and the chicken becomes fall-apart tender.

Steps
Before you start
- Pat chicken thighs dry with paper towels so they brown better
- Rinse and drain canned beans if using to reduce sodium
- Chop escarole and garlic ahead of time; store separately in the fridge
- Check that your slow cooker is clean and ready to go
Prep and layer base
- Combine the diced onion, minced garlic, chicken broth, drained cannellini beans, canned diced tomatoes (with their juice), olive oil, salt, black pepper, and Italian seasoning in the 6-quart slow cooker.
- Stir well to distribute seasonings evenly.
- Arrange the patted-dry chicken thighs on top, nestling them slightly into the broth so they're mostly submerged or resting just above the liquid.

Tip: Pat the chicken thighs completely dry so they stay tender and cook evenly; any surface moisture slows browning and can make them rubbery.
Cook on low for 6–8 hours
- Cover the slow cooker with its lid and cook on LOW for 6 to 8 hours.
- The chicken thighs should be very tender and easily fall apart with a fork, and the broth should be gently simmering.
- Do not open the lid frequently; each opening adds 15–20 minutes of cooking time.

Ready when: Chicken is fork-tender, pulls apart easily, and internal temperature is 165°F (74°C)
Tip: Resist lifting the lid to peek; it extends cooking time. If your slow cooker runs hot, begin checking at 5 hours.
Shred chicken and adjust seasoning
- Using a slotted spoon, transfer the cooked chicken thighs to a cutting board and let cool for 2–3 minutes.
- Shred the meat into bite-sized pieces, discarding any fat or cartilage.
- Return the shredded chicken to the slow cooker.
- Taste the broth and adjust salt, pepper, and Italian seasoning as needed.
- If you want a touch of heat, stir in red pepper flakes now.

Ready when: Chicken is shredded and broth is well-seasoned to your taste
Tip: Taste before adding escarole so you can adjust saltiness—the greens will soften quickly and blend into the broth without diluting it.
Add escarole and wilt
- Stir the chopped escarole into the slow cooker, pushing it down gently into the broth.
- The greens will seem like a lot at first but will rapidly collapse and wilt.
- Cover the slow cooker and let cook on LOW for 5 to 10 minutes, until the escarole is tender and bright green, with no tough stems remaining.

Ready when: Escarole is soft and fully wilted, bright green, no raw or tough pieces visible
Tip: Do not overcook the escarole; once it turns fully green and tender, remove from heat to keep it from becoming mushy and losing color.
Serve and garnish
- Ladle the soup into bowls, making sure each serving gets chicken, beans, vegetables, and plenty of broth.
- Top each bowl with grated Parmesan cheese if desired, and a drizzle of olive oil.
- Serve hot.

Tip: Fresh Parmesan adds a sharp, salty finish that lifts the entire dish; avoid pre-shredded versions, which contain anti-caking agents and don't melt as smoothly.
Good to know
Tips
- Use low heat, not high: high heat can toughen the chicken and cause the beans to break apart, muddying the broth.
- If your slow cooker runs very hot, you can cook this on HIGH for 3.5–4 hours instead, but LOW yields more tender chicken and better-developed flavor.
- For a brothier soup, use 10 cups of broth instead of 8 cups (2400 ml). For a heartier, thicker consistency, reduce broth to 6 cups (1440 ml) or leave the lid off for the last 30 minutes.
- This soup tastes even better the next day as flavors settle; make it a day ahead and reheat gently for best results.
Make ahead
Assemble the slow cooker insert the night before: add onion, garlic, broth, beans, tomatoes, oil, and seasonings. Refrigerate. In the morning, set the insert on the slow cooker base, add the chicken, and proceed. This cuts morning prep to just 2 minutes.
Storage & reheating
Refrigerate in an airtight container for up to 4 days. Freeze in portions for up to 3 months. To reheat: thaw overnight in the fridge if frozen, then warm gently on the stovetop over medium heat or in a microwave, stirring occasionally. The escarole may soften further upon reheating, which is normal; the soup only improves as flavors deepen.
Substitutions
- fresh escarole → spinach, kale, or Swiss chard. Use the same quantity. Spinach wilts in 2–3 minutes; kale and chard may need up to 10 minutes and benefit from thinner cuts. Avoid delicate greens like arugula, which turn bitter when cooked.
- canned cannellini beans → white kidney beans, Great Northern beans, or navy beans. Any white bean works; choose one you enjoy. Avoid dark beans like black or kidney beans, which muddy the broth's color and have a stronger flavor that overpowers the delicate chicken and escarole.
- diced tomatoes (canned) → tomato paste (2 tbsp / 30 g) mixed into the broth, or omit entirely. Tomato paste adds depth; omitting it gives a cleaner, brothier result. Do not use tomato sauce—it's too thick and sweet. If using fresh tomatoes, dice 2 medium tomatoes (about 400 g) and stir in with the escarole.
- boneless, skinless chicken thighs → bone-in, skin-on chicken thighs or boneless chicken breasts. Bone-in thighs take longer (7–9 hours) and yield more flavorful broth; boneless breasts are drier and should cook only 4–5 hours. Drumsticks also work but need 6–7 hours. Avoid all white meat unless you prefer a leaner result.
