Simple Beef and Eggplant Kebabs

Tender cubes of beef sirloin and hearty eggplant threaded onto skewers, seasoned with garlic and oregano, then air-fried until the beef is cooked through and the vegetables caramelize at the edges. Quick enough for weeknight dinner, impressive enough to serve guests.

Steps

Before you start
  • Soak wooden skewers in water for at least 30 minutes to prevent burning
  • Pat beef dry with paper towels so it browns properly
  • Preheat air fryer to 400°F (200°C)
  1. Make the marinade

    • In a small bowl, whisk together the olive oil, minced garlic, dried oregano, lemon juice, salt, and black pepper.
    • Stir until well combined.

    Ready when: marinade is homogeneous

Tip: Whisk thoroughly so the oil emulsifies slightly with the lemon juice.

  2. Marinate the beef

    • Add the beef cubes to the marinade bowl and toss gently but thoroughly to coat all pieces.
    • Let sit at room temperature for 15 minutes.

Ready when: all beef pieces are coated in oil and spices

Tip: Room-temperature meat cooks more evenly in the air fryer than cold meat.

  3. Thread the kebabs

    • Starting with a beef cube, thread the beef, eggplant cubes, and cherry tomatoes onto the 4 soaked skewers in an alternating pattern: beef, eggplant, beef, tomato, and repeat.
    • Leave about ½ inch (1 cm) of space between pieces so hot air can circulate.
    • Aim for 8–10 pieces per skewer.

Ready when: all 4 kebabs are evenly threaded with no pieces touching

Tip: Don't pack pieces too tightly or the centers won't cook through and some vegetables will steam instead of caramelize.

  4. Preheat and arrangeOven 400°F / 205°C

    • Ensure your air fryer is preheated to 400°F (200°C).
    • Lightly brush or spray the air fryer basket or tray with olive oil to prevent sticking.
    • Arrange the 4 kebabs in a single layer in the basket, leaving a bit of space between them.

Ready when: air fryer beeps and is ready; basket is lightly oiled

Tip: A light coating of oil in the basket helps the kebabs brown evenly and prevents them from sticking.

  5. Air fry the kebabsOven 400°F / 205°C

    • Place the kebabs in the preheated air fryer and cook at 400°F (200°C) for 12 minutes.
    • Shake the basket or flip the kebabs once halfway through (at 6 minutes) to ensure even browning and cooking on all sides.
    + Show details

Ready when: beef is opaque and feels firm when poked, eggplant is soft and lightly caramelized at edges, tomatoes show light char marks

Tip: Shaking or flipping halfway through prevents uneven cooking and ensures caramelization on all sides.

  6. Check for doneness

    • Remove one kebab and check the beef cubes.
    • They should be opaque throughout with no pink in the center.
    • The internal temperature should reach 145°F (63°C) for medium.
    • If the beef still looks undercooked, return all kebabs to the air fryer for 2–3 additional minutes.

Ready when: beef cubes are opaque throughout with no pink; internal temperature reads 145°F (63°C) for medium

Tip: Use a meat thermometer inserted into the largest piece for an accurate reading.

  7. Rest and serve

    • Remove the kebabs from the air fryer and let them rest on a clean plate for 2 minutes.
    • This allows the juices to redistribute throughout the meat.
    • Serve immediately while hot, with lemon wedges and additional fresh oregano if desired.

Ready when: kebabs are still steaming and juices have settled

Tip: A short rest prevents the juices from running out when you bite into the meat.

Good to know

Tips
  • Pat the beef dry before adding to the marinade so it browns instead of steaming in the air fryer.
  • Cut all vegetables to roughly the same size (1 inch / 2.5 cm) so they cook at the same rate as the beef.
  • If your air fryer is small, cook the kebabs in two batches rather than crowding the basket; overcrowding traps steam and prevents browning.
  • Serve the kebabs with tzatziki sauce, hummus, warm pita bread, or a simple green salad for a complete meal.
Make ahead

Assemble the kebabs up to 4 hours ahead: prepare the marinade, coat the beef, thread all skewers, cover with plastic wrap, and refrigerate. Remove from the fridge 15 minutes before air frying so the beef returns closer to room temperature for more even cooking.

Storage & reheating

Leftovers keep in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 4–5 minutes until warmed through, or gently warm in a covered skillet over medium heat with a splash of water. Do not freeze, as the eggplant texture will degrade when thawed.

Substitutions
  • beef sirloin, cut into 1-inch cubes → pork sirloin or chicken thighs, cut into 1-inch cubes. Pork and chicken cook at the same rate as beef at this size. Check chicken for 165°F (74°C) internal temperature.
  • medium eggplant → zucchini or bell peppers, cut into 1-inch chunks. Both have shorter cook times; reduce air fryer time to 10 minutes and check for tenderness.
  • cherry tomatoes → small onion chunks (cut into 1-inch pieces) or red onion. Onions add sweetness and char beautifully. Include them in the marinade if desired.
  • dried oregano → fresh oregano, thyme, or Italian seasoning. Use 1 tablespoon fresh oregano (finely chopped) or 1½ teaspoons dried thyme or Italian seasoning for the same flavor profile.
