Steps

Before you start
  • Chill the milk and serving glasses in the fridge/freezer at least 30 minutes ahead for a thicker, colder shake.
  • Basil seeds (sabja/tukmaria) need about 15 minutes to soak and swell, so start them first.
  • Use falooda sev (thin cornstarch or wheat vermicelli) from an Indian grocer; regular angel hair pasta is not the same.
  • Use rose syrup (like Rooh Afza or rose sharbat) and taste it first, since sweetness varies by brand.
  1. Soak basil seeds

    • Stir the rinsed basil seeds into ½ cup (120 ml) cool water in a small bowl.
    • Set aside.
    + Show details

Ready when: Seeds are plump, each surrounded by a clear jelly-like coating, and look about 3 times their original size.

Tip: Use cool, not hot, water; hot water makes the seeds clump and turn slimy.

  2. Boil the vermicelli

    • Bring 2 cups (480 ml) water to a rolling boil in a small saucepan.
    • Add the broken vermicelli and cook 3 to 5 minutes, stirring once or twice, per package directions.
    + Show details

Ready when: Strands are soft, translucent and slippery, with no hard white core when you bite one.

Tip: Do not overcook or the strands turn mushy in the shake.

  3. Drain and cool

    • Drain the vermicelli in a fine-mesh strainer, rinse under cold running water for 30 seconds, and shake well.
    • Let it sit in the strainer for 5 minutes to cool fully.
    • Drain the basil seeds too if there's excess water.

Ready when: Noodles feel cold and no longer steam or stick together.

Tip: Cold rinsing stops the cooking and keeps the strands from clumping.

  4. Prep the glasses

    • Spoon 1 tbsp (15 ml) rose syrup into the bottom of each chilled glass, then tilt and turn each glass so a little syrup streaks up the sides.
    + Show details

Ready when: Pink syrup coats the bottom and drips in streaks on the glass walls.

  5. Layer the base

    • Divide about two-thirds of the soaked basil seeds and two-thirds of the vermicelli between the two glasses, spooning them over the syrup.
    • Save the rest for the top.
    + Show details

Ready when: Each glass has an even layer of seeds and noodles about 1½ inches (4 cm) deep.

  6. Blend the shake

    • In a blender, combine the cold milk, 2 scoops of ice cream and 4 tbsp (60 ml) rose syrup.
    • Blend on high for 20 to 30 seconds.
    • Taste and add a little more syrup if you want it sweeter or more floral.
    + Show details

Ready when: Shake is smooth, pale pink and frothy, with no ice cream lumps.

Tip: Don't over-blend; it warms and thins the shake.

  7. Pour gently

    • Slowly pour the shake over the layered seeds and vermicelli, dividing it evenly and leaving about 1 inch (2.5 cm) of space at the top.
    + Show details

Ready when: Shake sits in a pink layer above the noodles, with the base still visible.

Tip: Pour down the side of the tilted glass to keep the layers distinct.

  8. Top and serve

    • Add the remaining seeds and vermicelli on top, then crown each glass with 1 scoop of ice cream.
    • Sprinkle with chopped pistachios and rose petals if using.
    • Serve right away with a long spoon and a wide straw.
    + Show details

Ready when: Ice cream scoop holds its shape and the garnish sits on top.

Tip: Serve immediately; the ice cream melts quickly and the shake thins out.

Good to know

Tips
  • Chill the glasses and milk first so the shake stays thick and cold longer.
  • Rose syrups differ in sweetness and strength; start with 4 tbsp and adjust to taste.
  • Rinse basil seeds before soaking to remove dust, but don't soak longer than 30 minutes or they get slippery.
  • For a more traditional touch, add a spoonful of soft jelly cubes or tutti-frutti to the base layer.
Make ahead

"Soak the basil seeds and cook the vermicelli up to 1 day ahead; store each separately, covered, in the fridge (cover vermicelli with a splash of cold water). Blend and assemble just before serving."

Storage & reheating

"Best served immediately. Leftover blended shake (without toppings) keeps in the fridge up to 4 hours; re-blend briefly before serving. Cooked vermicelli and soaked basil seeds keep refrigerated in airtight containers for up to 2 days. Do not freeze the assembled drink; the shake alone can be frozen up to 1 month and re-blended with a splash of milk."

Substitutions
  • whole milk → Oat milk or almond milk. Use a creamy, unsweetened version; the shake will be slightly thinner and less rich.
  • vanilla ice cream → Rose, strawberry or kulfi ice cream. Rose or kulfi adds extra flavor; reduce the syrup slightly if the ice cream is sweet.
  • basil seeds (sabja) → Chia seeds. Soak 15 to 20 minutes; they have a similar gel texture but a slightly nuttier taste.
  • unsalted pistachios → Sliced almonds or cashews. Chop finely for a similar crunch.
