Steps
Before you start
- Chill the milk and the serving glasses in the fridge/freezer for at least 30 minutes for the thickest, coldest shake.
- Saffron needs time to release color and aroma, so infuse it first; this is the step that makes the shake taste 'kesar'.
- Use unsalted, shelled pistachios. If they are salted, skip the pinch of salt and expect a saltier shake.
- Let the ice cream sit on the counter 5 minutes so it scoops easily.
Chill the glasses
- Place two tall glasses in the freezer (or fridge) so they are frosty when the shake is ready.
- Leave the 1½ cups (360 ml) of milk in the fridge until needed.
Warm the milk
- Pour ¼ cup (60 ml) milk into a small saucepan.
- Heat over low heat for about 2 minutes, just until small bubbles appear at the edge and steam rises.
- Do not boil.

Ready when: Steaming and faintly bubbling at the edges, comfortably hot to the touch but not boiling.
Tip: Boiling can scorch the milk and dull the saffron's flavor.
Infuse the saffron
- Remove the pan from the heat.
- Crush the saffron lightly between your fingertips and stir it into the warm milk.
- Cover and let steep for 15 minutes.

Ready when: Milk turns deep golden-orange and smells floral.
Tip: Longer steeping gives deeper flavor; up to 30 minutes is fine.
Chill the infusion
- Pour the saffron milk into a small bowl and refrigerate for 15 minutes, until completely cold.
- Adding it warm would melt the ice cream and thin the shake.

Ready when: Cold to the touch, no warmth when you hold the bowl.
Prep the pistachios
- Finely chop 1 tablespoon (8 g) pistachios with a knife for garnish and set aside.
- Keep the remaining ⅓ cup (45 g) whole for blending.

Ready when: Garnish pistachios in pieces about the size of a grain of rice.
Blend the base
- In a blender, combine the whole pistachios, sugar, cardamom, the cold saffron milk, and ½ cup (120 ml) of the cold milk.
- Blend on high for 45–60 seconds.

Ready when: Mixture is pale green-gold with no large pistachio chunks; tiny flecks are fine.
Tip: A standard blender may need 90 seconds; stop and scrape down the sides once.
Add ice cream
- Add the ice cream and remaining 1 cup (240 ml) cold milk.
- Blend on medium-high for 20–30 seconds, only until smooth and pourable but still thick.

Ready when: Thick, uniform pale golden color; it slowly coats the back of a spoon.
Tip: Over-blending warms and thins the shake. If too thick, add a splash of milk.
Serve right away
- Pour into the chilled glasses.
- Top with the chopped pistachios and, if using, a few whole saffron threads.
- Serve immediately with wide straws.

Ready when: Shake is thick, cold and evenly colored with a nutty garnish on top.
Tip: Taste before pouring; add 1 more tsp sugar if you like it sweeter.
Good to know
Tips
- Don't skip the chilled infusion; warm saffron milk melts the ice cream and gives a thin shake.
- For a smoother texture, soak the pistachios in hot water for 10 minutes, drain, and peel before blending.
- Crush saffron with a pinch of the sugar in a mortar for faster, deeper color release.
- Add the ice cream last and blend briefly to keep the shake thick.
Make ahead
"The saffron milk can be infused and refrigerated up to 24 hours ahead. Pistachios can be chopped a day ahead. Blend just before serving."
Storage & reheating
"Best served immediately. Leftover shake keeps in a covered jar in the freezer up to 1 week; thaw 10–15 minutes and re-blend briefly, or refrigerate up to 4 hours and stir well. Do not store at room temperature longer than 30 minutes."
Substitutions
- vanilla ice cream → Kulfi or pistachio ice cream. Kulfi gives a more traditional dense, milky flavor; pistachio ice cream intensifies the nuttiness.
- whole milk → Oat milk or other full-fat plant milk. Use with a dairy-free vanilla ice cream for a vegan version; the shake will be slightly thinner.
- granulated sugar → Honey or condensed milk. Use 1½ tbsp (30 g) honey or 2 tbsp (40 g) sweetened condensed milk; reduce to taste.
- unsalted shelled pistachios → Blanched almonds. Gives a milder flavor and paler color; the shake will be less green-flecked.
