Steps
Before you start
- Preheat your oven to 400°F (200°C)
- Have all spices measured and ready before you start
- Pat the drained chickpeas very dry with paper towels—moisture prevents crisping
Drain and dry chickpeas
- Pour the canned chickpeas into a fine-mesh strainer and rinse under cold running water for about 30 seconds, swirling gently.
- Transfer to a clean bowl or paper towel and pat thoroughly dry with fresh paper towels, rolling them gently to absorb as much moisture as possible.
- This step is crucial for achieving crispiness.

Ready when: Chickpeas are completely dry to the touch with no visible moisture
Tip: Don't skip the drying step—wet chickpeas will steam instead of roast and won't crisp up properly.
Combine spices
- In a small bowl, whisk together the paprika, cumin, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper until evenly mixed.

Ready when: All chickpeas are glistening and coated evenly, with spices distributed throughout
Tip: Don't use your hands—toss gently with a utensil to avoid breaking the chickpeas and to distribute the coating evenly.
Spread on sheet pan and roastOven 400°F / 205°C
- Spread the coated chickpeas in a single layer on a 13×18-inch (33×46 cm) rimmed sheet pan.
- Try to arrange them so they're not overlapping too much.
- Place in a preheated 400°F (200°C) oven and roast for 30 minutes, stirring every 10 minutes to ensure even browning.
- After 30 minutes, they should be mostly golden and crispy on the outside.

Ready when: Chickpeas are golden brown, mostly crispy, and some edges are slightly darker
Tip: Stir at 10, 20, and 30-minute marks. If the pan is crowded, the chickpeas will steam rather than roast, so don't skip this step.
Cool and crisp up
- Remove the sheet pan from the oven and spread the hot chickpeas on a fresh sheet of parchment paper or a clean, cool surface.
- Let them rest for 5 minutes at room temperature.
- They will continue to crisp up as they cool.

Ready when: Chickpeas are cool enough to touch and snap or crunch when bitten
Tip: Spreading them out on a cool surface speeds up the crisping process and prevents them from steaming.

Tips
- For extra crunch, ensure the chickpeas are completely dry before tossing—this is the single most important step for crispy results.
- Stir every 10 minutes during roasting, not once at the end, to ensure even browning and prevent burning on the edges.
- Customize the spice blend: try curry powder, garam masala, everything bagel seasoning, or za'atar for different flavor profiles.
- These chickpeas are best eaten fresh from the oven or within hours of cooling. Once they've sat for a day or two, they'll start to soften, but a quick re-crisp in a 350°F (175°C) oven for 5 minutes brings them back.
Storage & reheating
Store in an airtight container at room temperature for up to 5 days. They're best eaten within the first 2–3 days, as they'll soften over time. If they do soften, give them a quick 5-minute warm-up in a 350°F (175°C) oven to re-crisp them. Do not refrigerate or freeze; cold and moisture will make them soggy.
Substitutions
- smoked paprika → Regular (non-smoked) paprika or chili powder. Use the same amount. Chili powder will add a bit more heat; paprika keeps the flavor milder and earthier.
- ground cumin → Ground coriander or a mix of 1/2 teaspoon cumin and 1/4 teaspoon dried oregano. Coriander is citrusy and warm. The oregano blend gives a more Mediterranean flavor.
- extra-virgin olive oil → Avocado oil or grapeseed oil. Either works well and won't mask the spices. Avoid coconut oil, as it will compete with the savory flavors.
- sea salt or kosher salt → Fleur de sel or Maldon salt. Sprinkle these on after roasting for a delicate, flaky salt finish. They won't dissolve during roasting.
