Steps

Before you start
  • Preheat oven to 400°F (200°C)
  • Have all ingredients measured and prepped before you start cooking
  • Use a 9-inch (23 cm) shallow baking dish or gratin dish for even cooking
  1. Roast the asparagusOven 400°F / 205°C

    • Spread the asparagus pieces on a rimmed baking sheet.
    • Drizzle with 1 tablespoon of the olive oil, season generously with salt and black pepper, and toss to coat evenly.
    • Roast at 400°F (200°C) for 12–14 minutes, stirring halfway through, until the asparagus is tender and the tips begin to brown.
    • Remove from the oven and set aside to cool slightly.

Ready when: Asparagus is fork-tender and tips are lightly browned

Tip: Cut pieces into 1-inch pieces so they roast quickly and evenly without drying out

  2. Cook the prosciutto

    • While the asparagus roasts, place the chopped prosciutto in a dry skillet over medium-high heat.
    • Cook, stirring frequently, for 3–4 minutes until the prosciutto is crispy and the edges are darkened.
    • Transfer to a paper towel-lined plate and set aside.

Ready when: Prosciutto is crispy and golden brown at the edges

Tip: Don't overcrowd the pan; if needed, work in batches so the prosciutto crisps rather than steams

  3. Mix the base

    • In a large mixing bowl, combine the softened cream cheese, sour cream, minced garlic, 1 tablespoon of the remaining olive oil, and half of the grated Parmesan.
    • Stir and fold with a wooden spoon until smooth and well combined.
    • Season with salt and black pepper to taste.

Ready when: Mixture is creamy and no lumps of cream cheese remain

Tip: Make sure the cream cheese is truly softened—if it's still cold, it will be lumpy and hard to blend

  4. Combine dip components

    • Fold the roasted asparagus and crispy prosciutto into the cream cheese mixture until evenly distributed.
    • Transfer to the 9-inch (23 cm) baking dish.
    • Sprinkle the remaining Parmesan over the top.
    • If desired, add the lemon zest and red pepper flakes for brightness and a subtle heat.

Ready when: Ingredients are evenly distributed and the top is covered with cheese

Tip: Reserve a few asparagus tips and prosciutto pieces to scatter on top before baking for a more attractive presentation

  5. Bake until bubblyOven 400°F / 205°C

    • Bake at 400°F (200°C) for 12–15 minutes until the top is golden brown and the dip is bubbly around the edges.
    • You should see a gentle bubble breaking the surface at the edges and the Parmesan beginning to turn light golden.

Ready when: Cheese topping is light golden and dip bubbles gently around the edges

Tip: If the top is browning too quickly, tent loosely with foil for the final 5 minutes

  6. Rest and serve

    • Remove from the oven and let the dip rest for 2–3 minutes so it firms up slightly and is easier to scoop.
    • Transfer to a serving board or keep in the baking dish, and serve warm with crackers, crostini, toasted baguette slices, or fresh vegetable crudités.

Ready when: Dip has firmed slightly but remains creamy and warm

Tip: Warm dips continue to soften as they cool slightly, so a short rest helps them hold their shape when scooped

Good to know

Tips
  • For the best flavor and texture, use freshly grated Parmesan rather than pre-grated. Pre-grated cheese contains anti-caking agents that prevent it from melting smoothly.
  • If your asparagus spears are very thick (thicker than a pencil), split them lengthwise before cutting into 1-inch pieces for more even roasting and a tender bite.
  • Crispy prosciutto is key to this dip—it adds textural contrast and savory depth. Don't skip the crisping step or simply mix it raw into the dip.
  • Serve this dip warm for the best flavor and creaminess. It can sit at room temperature for up to 2 hours, but it will thicken and lose its appeal if allowed to cool completely.
Make ahead

Prepare the dip up through step 4 (combined in the baking dish but not yet baked) up to 8 hours ahead. Cover and refrigerate. Bake for an extra 3–5 minutes to ensure the center is hot throughout.

Storage & reheating

Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently in a 350°F (175°C) oven for 8–10 minutes until warm, or microwave in a serving dish in 30-second intervals, stirring between, until heated through. Do not freeze, as the texture will become grainy.

Substitutions
  • prosciutto → crispy bacon (about 6 strips) or pancetta. Cook the same way until crispy. Pancetta will give a deeper, slightly more peppery flavor.
  • cream cheese → mascarpone or ricotta mixed with softened butter (1 part butter to 3 parts ricotta). Both will create a slightly lighter, airier dip. Adjust salt as needed since butter is unsalted.
  • fresh asparagus spears → roasted broccoli, roasted green beans, or sun-dried tomatoes. Keep the amount the same. Roasted broccoli works especially well; sun-dried tomatoes add sweetness and tanginess.
  • freshly grated Parmigiano-Reggiano → Pecorino Romano or Gruyère. Pecorino will be saltier and more peppery; Gruyère will be richer and slightly sweeter. Use the same amount.
