  • Plan for about 3 hours 15 minutes in total. The bars must cool for 2 hours before cutting, or the jam will run and the bars will crumble.
  • Melt the butter and let it cool for about 5 minutes. It should be warm, not hot.
  • Use a thick, spreadable jam. Runny jam can seep into the crust and make it soggy.

    • Lightly grease the bottom and sides of a 9×9-inch (23 cm) pan with a little softened butter.
    • Line with a strip of parchment that covers the bottom and hangs over two opposite sides as a sling.

  2. Mix dry ingredients

Tips

Make ahead

Room temperature: airtight container, up to 3 days. Refrigerator: up to 7 days; bring to room temperature for 20 minutes before serving, or warm a bar at 300°F (150°C) for 5 minutes. Freezer: wrap individual bars well and freeze up to 3 months; thaw overnight in the refrigerator or for 1 hour at room temperature.

Substitutions
  • seedless or seeded raspberry jam → Strawberry, blackberry, apricot, or cherry jam or preserves. Use the same weight and choose a thick jam. Taste first and omit the lemon zest if the jam is already tart.
  • light brown sugar → Dark brown sugar. Gives a deeper molasses flavor and slightly chewier crust.
  • all-purpose flour → 1:1 gluten-free baking flour blend. Use certified gluten-free oats too. The bars will be slightly more delicate, so cool them fully and chill before cutting.
  • unsalted butter → Vegan butter sticks. Use a stick-style vegan butter, not a spread from a tub, and melt as directed.
