Buttery graham cracker crust topped with chocolate chips, sweet coconut and toasty pecans, all bound together with sweetened condensed milk that bakes into a chewy, caramelized layer. No mixer needed, and just one pan.

Steps

Before you start
  • Position an oven rack in the center and preheat to 350°F (175°C).
  • Line the pan with parchment, leaving an overhang on the two long sides, so the bars lift out cleanly.
  • Plan for at least 3 hours of cooling. Warm bars are gooey and will fall apart if cut too soon.
  • Use sweetened condensed milk, not evaporated milk. They are not interchangeable.
  1. Prepare the panOven 350°F / 175°C

    • Position a rack in the center of the oven and heat to 350°F (175°C).
    • Line a 9×13-inch (23×33 cm) metal pan with parchment, leaving 2 inches of overhang on the two long sides.

  2. Mix the crust

    • Melt the butter in a medium microwave-safe bowl in 20-second bursts (or in a small saucepan).
    • Stir in the graham cracker crumbs, sugar and salt with a fork until all crumbs look evenly damp, like wet sand.

    Tip: If the crumbs are dry in spots, stir more rather than adding extra butter.

  3. Press the crust

    • Tip the crumbs into the pan and spread evenly.
    • Press firmly into a compact, level layer, pushing into the corners, using the flat bottom of a measuring cup.

    Tip: A firmly packed crust won't crumble when you slice the bars.

  4. Pre-bake the crustOven 350°F / 175°C

    • Bake the crust at 350°F (175°C) for 8 minutes, just until it smells toasty and looks set.
    • Remove from the oven and leave the oven on.

  5. Add chocolate and coconut

    • Sprinkle the chocolate chips evenly over the warm crust.
    • Scatter the coconut over the chocolate, then the chopped pecans, in even layers all the way to the edges.

    Tip: The warm crust lightly softens the chips, helping them cling.

  6. Pour the condensed milk

    • Stir the vanilla into the condensed milk in the can.
    • Slowly drizzle it over the toppings, working back and forth and reaching the edges and corners.
    • Do not stir or press.
    • Sprinkle with flaky salt, if using.

    Ready when: The surface is mostly moistened with thin lines of milk, with no thick pools.

    Tip: Use a spatula to scrape the can clean. Every drop helps hold the bars together.

  7. Bake the barsOven 350°F / 175°C

    • Bake at 350°F (175°C) for 20 to 22 minutes, rotating the pan after 10 minutes, until the edges are bubbling and deep golden brown and the coconut on top is toasted.

    Ready when: The edges are deep golden and bubbling, and the center looks set, not wet and glossy.

    Tip: Slightly underbaked bars stay gooey, while overbaked ones turn hard, so pull them out when the edges are deep golden.

  8. Cool completely

    • Set the pan on a wire rack and cool at room temperature for 2 hours until barely warm, then refrigerate for 1 hour to firm up completely.

    Tip: Do not cut early. The caramelized milk needs time to set.

  9. Slice and serve

    • Run a thin knife around the edges, then lift the slab out using the parchment.
    • Place on a cutting board and cut into 4 rows by 6 rows to make 24 bars, wiping the knife clean between cuts.

Good to know

Tips
  • Crush graham crackers in a zip bag with a rolling pin, or pulse in a food processor, until the crumbs are fine and sandy.
  • Toast the pecans and coconut for 5 minutes at 350°F (175°C) before layering to deepen their flavor.
  • Use a metal pan. Glass bakes the edges faster and can burn the bottom.
  • For clean slices, use a sharp knife and wipe it between cuts.
Make ahead

"Bake, cool and slice the bars up to 3 days ahead. Store them airtight, then bring to room temperature before serving for the best chew."

Storage & reheating

"Room temperature in an airtight container, layered with parchment, for up to 4 days. Refrigerate for up to 1 week. Freeze for up to 3 months, wrapped well, and thaw at room temperature for about 1 hour. No reheating is needed, though 10 seconds in the microwave makes them warm and gooey."

Substitutions
  • pecans → walnuts or almonds. Use the same weight, chopped. Or leave out for a nut-free version and add 1/2 cup (85 g) extra chocolate chips.
  • graham cracker crumbs → crushed digestive biscuits or vanilla wafers. Use the same weight of fine crumbs.
  • semisweet chocolate chips → butterscotch chips or a mix of white and semisweet chips. Use the same total amount.
  • sweetened shredded coconut → extra chopped pecans or rolled oats. Use 1 cup (100 g) for a coconut-free version. Bars will be slightly less chewy.
