Steps

Before you start
  • Preheat oven to 375°F (190°C)
  • Pit the dates if using whole dates
  • Have all ingredients measured and ready before starting
  1. Toast almonds and breadcrumbs

    • Heat 1 tablespoon (15 ml) of ghee in a medium skillet over medium heat.
    • Add the chopped almonds and panko breadcrumbs.
    • Toast for 3–4 minutes, stirring frequently, until fragrant and light golden.
    • The almonds should release their aroma and the breadcrumbs should turn pale golden.
    • Transfer to a small bowl and set aside.

Ready when: almonds fragrant and light golden, breadcrumbs pale brown

Tip: Watch the pan constantly—breadcrumbs burn quickly. If they brown too fast, reduce heat to medium-low.

  2. Sauté dates until caramelized

    • In the same skillet, add the remaining 2 tablespoons (30 ml) ghee.
    • Once melted and foamy, add the halved dates.
    • Sauté over medium-high heat for 2–3 minutes, stirring gently, until the dates soften slightly and their edges begin to caramelize.
    • They should smell sweet and rich.
    • Set aside to cool for 1 minute.

Ready when: dates softened with caramelized edges, sweet aroma

Tip: Don't stir too vigorously—you want the dates to stay mostly intact. Gentle folding is best.

  3. Prepare baking vessel

    • Lightly coat an 8×10-inch (20×25 cm) baking dish (or four 6-oz ramekins) with a thin layer of ghee or butter.
    • Spread the sautéed dates evenly on the bottom.
    • Scatter half of the toasted almond and breadcrumb mixture over the dates.

Tip: Reserve the other half of the almond mixture for topping so it stays crispy after baking.

  4. Whisk eggs with milk and spices

    • In a mixing bowl, whisk together the 8 eggs, milk, cinnamon, nutmeg, salt, and black pepper until smooth and well combined.
    • The mixture should be uniform in color with no streaks of egg white.

Ready when: mixture uniform, no visible egg-white streaks

Tip: Whisking thoroughly ensures the spices distribute evenly and the eggs cook uniformly.

  5. Pour egg mixture and bakeOven 375°F / 190°C

    • Carefully pour the whisked egg mixture over the dates and almond layer in the baking dish.
    • Sprinkle the remaining toasted almond and breadcrumb mixture over the top.
    • Place in the preheated 375°F (190°C) oven and bake for 15–18 minutes, until the eggs are just set but still slightly jiggly in the very center—they will continue to cook slightly as they cool.
    • The top should be light golden.

Ready when: eggs set at edges, barely jiggly in center; top light golden

Tip: Overbaking will make the eggs tough and dry. The slight wobble in the center is crucial—carry-over cooking finishes the job perfectly.

  6. Rest and drizzle with honey

    • Remove the baking dish from the oven and let it rest for 5 minutes.
    • If using honey, warm it slightly and drizzle it over the top just before serving.
    • The warmth of the eggs will gently warm the honey without cooking it further.

Tip: Resting prevents the dish from looking wet and allows carryover cooking to finish the center perfectly.

Good to know

Tips
  • This dish is high in protein and healthy fats, making it perfect for suhoor—it sustains energy through the fasting hours.
  • The combination of dates and eggs is traditional in Middle Eastern breakfasts: dates provide quick carbs and energy, while eggs offer sustained protein.
  • Do not skip the rest period; it allows the eggs to finish cooking gently with carryover heat and makes serving much easier.
  • For a make-ahead option, prepare everything except the egg mixture the night before. Whisk the eggs the morning of serving to ensure they're fresh.
Make ahead

Prepare and measure all ingredients (toast almonds, pit and halve dates) the night before. Assemble the dish (up through step 3) 1 hour before baking and refrigerate. Add 2–3 minutes to baking time if baking straight from the refrigerator.

Storage & reheating

Store leftover eggs in an airtight container in the refrigerator for up to 3 days. Reheat gently in a 300°F (150°C) oven for 8–10 minutes, covered with foil, until warmed through. Do not microwave, as it toughens the eggs. Not suitable for freezing.

Substitutions
  • ghee (clarified butter) → unsalted butter or olive oil. Ghee adds authentic richness, but butter works well. Avoid extra-virgin olive oil for this dish as its flavor will overpower the delicate spices.
  • Medjool dates, pitted → dried figs or apricots, roughly chopped. Figs give a earthier sweetness; apricots are brighter. Sauté as directed. Use 1 cup (130 g) figs or 1.25 cups (200 g) apricots to match the texture and sweetness of dates.
  • raw almonds → pistachios or walnuts, coarsely chopped. Pistachios add color and subtle nuttiness; walnuts are earthier. Use the same amount by weight.
  • whole milk → heavy cream or Greek yogurt thinned with water (1:1). Cream creates a richer custard; yogurt adds tang. Both work well with the spices and dates. Use 2 tablespoons (30 ml) yogurt + 2 tablespoons (30 ml) water.
