Steps
Before you start
- Preheat oven to 400°F (200°C)
- Line a large baking sheet with parchment paper
- Have all ingredients measured and ready—meatballs come together quickly
Mix meatball ingredients
- In a small bowl, combine 1 lb (450 g) ground beef, 2.5 tbsp (15 g) za'atar, 0.5 cup (50 g) panko breadcrumbs, 1 egg, 0.25 cup (40 g) finely minced onion, 2 minced garlic cloves, 0.5 tsp (3 g) kosher salt, and 0.25 tsp (0.5 g) freshly ground black pepper.
- Mix gently with your hands until just combined—do not overmix or the meatballs will be tough.

Ready when: mixture is evenly combined but not compacted
Tip: Overmixing develops gluten in the breadcrumbs, making dense meatballs. Stop as soon as ingredients are distributed.
Shape and arrange meatballs
- Using a 1-tablespoon scoop or wet hands, divide the mixture into 16 equal portions and roll each into a ball about 1.25 inches (3 cm) in diameter.
- Arrange them on the parchment-lined baking sheet in a single layer, spacing them about 1 inch (2.5 cm) apart.

Ready when: 16 balls evenly spaced on baking sheet
Tip: Wet hands prevent sticking; rolling to a consistent size ensures even cooking.
Bake meatballsOven 400°F / 205°C
- Place the baking sheet in the preheated 400°F (200°C) oven and bake for 12–14 minutes, until the meatballs are cooked through and lightly browned on the outside.

Ready when: meatballs are firm, browned on top, and register 160°F (71°C) at the center when tested with an instant-read thermometer
Tip: Use an instant-read thermometer to check doneness without cutting; 160°F is the safe internal temperature for ground beef.
Prepare tahini sauce
- While the meatballs bake, whisk together 0.5 cup (120 g) tahini, 3 tbsp (45 ml) fresh lemon juice, and 0.25 cup (60 ml) warm water in a medium bowl.
- Whisk until smooth and pourable, about 1–2 minutes.
- The sauce should have a consistency similar to yogurt; if too thick, whisk in a little more water.

Ready when: sauce is smooth, pale, and pourable
Tip: Tahini can seize if whisked too vigorously or if lemon is added too fast. Whisk gently and add lemon gradually, whisking constantly.
Finish meatballs
- Remove the meatballs from the oven and let them rest for 2 minutes.
- Drizzle the tahini sauce over the meatballs, then add 2 tbsp (30 ml) pomegranate molasses in small drizzles or dots across the platter.
- Sprinkle with 0.25 cup (15 g) chopped fresh parsley.
- Add pomegranate seeds if desired for color and brightness.

Ready when: meatballs are warm and sauced, garnish is evenly distributed
Tip: Apply pomegranate molasses in thin drizzles so it stays as a visible, tangy accent rather than pooling heavily in one spot.
Good to know
Tips
- Serve over a bed of hummus, in a pita with cucumber and tomato, or with rice pilaf for a more substantial meal.
- Do not skip the instant-read thermometer: ground beef meatballs can look cooked on the outside while remaining undercooked inside.
- If making these ahead, let the cooked meatballs cool completely before refrigerating so steam doesn't make them soggy.
- For a spicier kick, add a pinch of Aleppo pepper or cayenne to the tahini sauce.
Make ahead
Prepare and shape the meatballs up to 4 hours ahead; cover and refrigerate. Bake directly from the cold state (add 1–2 minutes to baking time). The tahini sauce can be made up to 24 hours in advance and refrigerated; stir before serving and add a little water if it has thickened.
Storage & reheating
Refrigerate cooked meatballs and sauce in separate airtight containers for up to 3 days. Reheat meatballs in a 350°F (175°C) oven for 6–8 minutes. Freeze cooked meatballs (before saucing) in a freezer-safe container for up to 2 months; thaw overnight in the refrigerator and reheat as above. The tahini sauce does not freeze well.
Substitutions
- ground beef → Ground lamb or ground chicken. Ground lamb yields a more traditional Middle Eastern flavor; ground chicken produces a lighter meatball. Both cook in the same time; ensure chicken reaches 165°F (74°C) internal temperature.
- tahini → Greek yogurt thinned with lemon juice (equal parts). This makes a tangier, lighter sauce with less richness. Use full-fat yogurt for best body.
- za'atar spice blend → 2 tbsp sumac + 0.5 tbsp dried oregano + 0.5 tbsp sesame seeds + 0.25 tsp salt. A reasonable approximation if you don't have za'atar on hand, though the oregano makes it slightly less herbaceous.
- pomegranate molasses → 1.5 tbsp lemon juice + 0.5 tbsp honey + 0.25 tsp sumac. Creates a lighter, less intensely tangy finish than pomegranate molasses, but similar brightness.
