Steps

Before you start
  • Have a fine-mesh strainer or cheesecloth ready
  • Use fresh, firm ginger root for the best flavor
  • Wash beets thoroughly before peeling to remove any soil
  • Squeeze fresh lemon juice (not bottled) for brightest flavor
  1. Prepare the vegetables

    • Peel the beets using a vegetable peeler or sharp knife, discarding the skin.
    • Rinse again under cold water and cut into ¼-inch (6 mm) cubes—roughly uniform size helps them cook evenly.
    • Peel the ginger root and slice thinly (about ⅛ inch/3 mm) to release more flavor during simmering.
    • You should have about 1½ cups (225 g) diced beets and about 3 tablespoons (20 g) sliced ginger.

Ready when: Beets are evenly diced and ginger is thinly sliced

Tip: Keep a damp paper towel handy—beet juice stains hands temporarily. Cut on a cutting board you don't mind getting pink.

  2. Simmer the beets and ginger

    • Pour the 4 cups (950 ml) of filtered water into a 2-quart (2 L) saucepan and bring to a rolling boil over high heat, about 5–6 minutes.
    • Add the diced beets and sliced ginger, then reduce heat to medium and simmer uncovered for 12–14 minutes, until the beet pieces are very tender and the liquid has turned deep pink-red.
    • The ginger will have infused its warmth into the broth.

Ready when: Liquid is deep pink-red and beets are very soft

Tip: Do not cover the pan—you want some liquid to reduce, concentrating the beet and ginger flavor.

  3. Add turmeric and steep

    • Remove the pan from heat and stir in the ½ teaspoon (2.5 g) of ground turmeric.
    • Stir well to combine and let the mixture sit for 3–5 minutes.
    • The turmeric will bloom off the heat and won't lose its vibrant color to prolonged boiling.

Ready when: Mixture smells warm and spiced, turmeric is fully integrated

Tip: Turmeric's vibrant golden-orange color fades if boiled too long, so adding it after cooking preserves both taste and appearance.

  4. Strain the liquid

    • Set a fine-mesh strainer over a clean pot or pitcher and carefully pour the beet mixture through it, letting the liquid drain fully.
    • Discard the solids (beet pieces and ginger slices) or save them for composting.
    • You should have roughly 3½–3¾ cups (830–900 ml) of strained liquid.
    + Show details

Ready when: Liquid is clear of particles and deep crimson-pink

Tip: Line your strainer with a single layer of cheesecloth if you prefer an even clearer, more refined drink without any fine sediment.

  5. Finish with citrus and honey

    • Stir in the 3 tablespoons (45 ml) of fresh lemon juice and 2 tablespoons (30 g) of raw honey.
    • Stir until the honey dissolves completely into the warm broth.
    • Taste and adjust: add more honey if you prefer sweetness, or more lemon for brightness.
    + Show details

Ready when: Honey is fully dissolved and flavor is balanced

Tip: Add lemon juice after cooking to preserve vitamin C. Raw honey keeps its enzymatic properties if not boiled excessively.

  6. Season and serve

    • Divide the drink among four cups (about 8–10 fl oz each).
    • Top each serving with a pinch of freshly ground black pepper to enhance turmeric absorption and add a subtle spice.
    • Serve immediately while hot, or let cool to room temperature and chill for at least 2 hours if serving cold.

Ready when: Drink is portioned and ready to serve

Tip: Black pepper contains piperine, which increases turmeric's bioavailability—this small addition makes the wellness benefits more effective.

Good to know

Tips
  • Fresh beets stain hands and cutting boards temporarily—this is normal and fades within a few hours. Wearing disposable gloves while peeling beets prevents staining your hands.
  • For the strongest immune boost, serve this drink warm and drink it slowly, allowing your body to absorb the antioxidants and anti-inflammatory compounds from the beets, ginger, and turmeric.
  • If ginger root is not available, use the same quantity of ground ginger added in step 3, though fresh is preferred for a sharper, brighter flavor profile.
  • This drink can be made as a cold concentrate: prepare through step 4, cool completely, then refrigerate. Dilute with hot or cold water to taste just before serving (use ½ to ¾ cup drink per 4–6 oz water).
Make ahead

You can make the entire drink up to 2 days ahead. Prepare through step 4 (after straining), then cool, cover, and refrigerate. Warm gently on the stovetop over low heat or in the microwave just before serving, then add lemon juice, honey, and black pepper.

Storage & reheating

Room temperature: cool quickly and consume within 1 hour. Refrigerator: store in an airtight container for up to 3 days; reheat gently on the stovetop over low heat or in a microwave, stirring occasionally. Freezer: not recommended, as the fresh flavors diminish and texture changes upon thawing.

Substitutions
  • raw honey → maple syrup or agave nectar. Use the same amount (2 tablespoons / 30 g). Maple syrup adds earthiness; agave is neutral.
  • fresh ginger root → ground ginger. Reduce to ½ teaspoon (1.5 g) ground ginger; add it in step 3 with the turmeric. Flavor will be slightly more subtle.
  • fresh lemon juice → fresh orange or lime juice. Use the same amount (3 tablespoons / 45 ml). Orange adds sweetness; lime adds tartness.
  • medium beets, uncooked → beet powder or beet juice concentrate. Use 1 tablespoon (7 g) beet powder or 2 tablespoons (30 ml) juice concentrate stirred into the hot water with the turmeric. Saves prep time but less complex flavor.
