Steps

Before you start
  • Pit and measure your dates ahead of time
  • Choose a blender (immersion or countertop) that can handle hot liquid safely or allow for cooling
  • Have your milk at room temperature or slightly warm
  1. Blend base mixture

    • Place the 3 tbsp tahini, 4 pitted Medjool dates, and 2 tbsp honey in a blender.
    • Add ½ cup (120 ml) of the milk.
    • Blend on high speed for 2 minutes until completely smooth and creamy.
    • The mixture should look like a thick, uniform paste with no visible date pieces.

Ready when: Mixture is completely smooth with no visible chunks

Tip: If using an immersion blender, combine ingredients in a deep bowl or large measuring cup before blending to avoid splashing.

  2. Add remaining milk

    • With the blender running on medium speed, slowly pour in the remaining 1 cup (240 ml) of milk until fully incorporated.
    • Stop and scrape down the sides if needed.
    • The drink should be smooth and pourable but still creamy.

Ready when: All milk is incorporated and drink is uniform and pourable

Tip: Adding milk gradually prevents lumps and helps incorporate air for a silkier texture.

  3. Season and strain (optional)

    • Add the ¼ tsp ground cinnamon and a pinch of sea salt.
    • Pulse the blender 2–3 times to combine.
    • For an extra-smooth, restaurant-quality texture, pour the mixture through a fine-mesh strainer into a bowl, pressing gently with the back of a spoon; otherwise, skip this step.

Ready when: Cinnamon and salt are fully mixed in; drink is smooth or strained as desired

Tip: Straining removes any tiny fibrous bits from the dates for silky mouthfeel, but it's optional if you prefer a heartier drink.

  4. Heat milk gentlyOven 170°F / 75°C

    • Pour the blended drink into a small saucepan.
    • Heat over medium-low heat, stirring occasionally, for 5 minutes until steaming and hot to the touch (around 160–170°F / 70–75°C).
    • Do not let it boil or scorch on the bottom.
    • Alternatively, use a milk steamer or frother if you have one.

Ready when: Drink is steaming and reaches 160–170°F (70–75°C); no scorching on the pan bottom

Tip: Gentle heat preserves the tahini's nutty flavor; high heat can make it taste bitter or cause the drink to separate.

  5. Rest and serve

    • Remove from heat and let rest for 1–2 minutes.
    • Pour into two 10 fl oz (300 ml) mugs or serving glasses.
    • The drink will naturally thicken slightly as it cools.
    • Serve immediately with an optional sprinkle of cinnamon on top.

Ready when: Drink is poured and ready to drink at about 150°F (65°C)

Tip: The tahini will thicken the drink as it cools—this is normal and adds to its luxurious texture.

Good to know

Tips
  • Tahini can separate or clump if blended in cold liquid. Ensuring your milk is at least room temperature and blending thoroughly prevents this.
  • For a vegan version, use any plant-based milk and replace honey with maple or agave syrup in the same amount.
  • This drink is delicious over ice with a splash of cold milk for a refreshing iced version on warm days.
  • Toast a pinch of sesame seeds in a dry pan and sprinkle on top for extra nuttiness and visual appeal.
Make ahead

Store the blended (but unheated) mixture in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove over medium-low heat, stirring often, for 3–4 minutes until steaming. You can also serve it cold straight from the fridge if preferred.

Storage & reheating

Room temperature: consume immediately. Refrigerator: store leftover heated drink in an airtight container for up to 2 days; reheat gently on the stove. Freezer: not recommended, as the creamy texture breaks down when thawed. The blended unheated mixture freezes better (up to 1 month); thaw overnight in the fridge and reheat.

Substitutions
  • Medjool dates → 4 tbsp (60 g) of pure date paste or 3 tbsp (45 g) of maple syrup or brown rice syrup. Date paste adds the same natural sweetness and body; syrups work but are less thick—reduce the total milk to 1¼ cups (300 ml) to maintain creaminess.
  • honey → 2 tbsp (30 g) of agave nectar or coconut nectar. Both are neutral-flavored sweeteners with a similar consistency to honey; no change to method.
  • whole milk or unsweetened plant-based milk (oat, almond, or cashew) → Coconut milk, almond milk, oat milk, or cashew milk. Choose unsweetened varieties to control sweetness. Coconut milk makes the drink richer; almond and oat milk keep it lighter. Dairy-free versions require no cooking adjustment.
  • ground cinnamon → ½ tsp ground cardamom, ¼ tsp ground ginger, or ⅛ tsp ground nutmeg. Cardamom and ginger are traditional in some Middle Eastern versions; use alone or combine two spices for complexity.
