Steps
Before you start
- Have all ingredients prepped and ready before you begin cooking—stir-fries move quickly
- Use waxy or red potatoes that hold their shape; avoid russets which break apart
- If your onions are very large, cut them into smaller pieces so they cook at the same rate as potatoes
Heat oil and toast spices
- Place a large wok or 12-inch skillet over medium-high heat.
- Add the vegetable oil or ghee.
- Once shimmering (about 1 minute), add the cumin seeds.
- Let them sizzle and darken slightly for about 30 seconds until fragrant.

Ready when: Cumin seeds darken and smell nutty
Tip: Toast the cumin briefly to unlock its flavor—don't let it burn or it will taste acrid
Add potatoes and cook
- Add the cubed potatoes to the hot oil immediately.
- Stir well to coat with oil.
- Spread them in a single layer in the wok.
- Let them cook undisturbed for 3 minutes to develop color on the bottom.

Ready when: Bottom of potatoes show light golden-brown color
Tip: Don't stir constantly at first—letting them sit builds flavor through browning
Stir and continue cooking
- Stir the potatoes and let them cook for another 4–5 minutes, stirring every 1–2 minutes so they brown on multiple sides.
- You want them partially cooked and mostly golden, not yet completely tender.

Good to know
Tips
- Cut potatoes into uniform ½-inch cubes so they cook evenly—larger pieces stay raw inside while smaller ones overcook
- Use a wok or wide skillet rather than a small saucepan; the open surface helps vegetables brown and release moisture
- Waxy potatoes (red, yellow, fingerling) hold their shape and texture much better than starchy russets, which become mealy
- If your wok or skillet feels crowded, cook in two batches rather than steaming the potatoes in their own moisture
Storage & reheating
Store covered in the refrigerator for up to 3 days. Reheat in a wok or skillet over medium heat, stirring often, for 3–4 minutes until hot. The stir-fry does not freeze well due to the potato texture.
Substitutions
- cumin seeds → ¾ tsp ground cumin. Ground cumin will not toast and bloom in flavor the same way, so add it with the turmeric instead of at the beginning. The flavor will be milder.
- fresh green chilies (such as serrano or jalapeño) → ½ tsp red pepper flakes or cayenne pepper. Add with the turmeric if using dried spices. The fresh pepper flavor will be lost, but the heat will remain.
- vegetable oil or ghee → coconut oil or mustard oil. Mustard oil is traditional in Indian cooking and adds a peppery note. Coconut oil adds subtle sweetness.
- waxy potatoes (such as red or yellow) → cauliflower florets or carrots cut into chunks. Extend cooking time for carrots to 8–10 minutes. Cauliflower cooks faster, about 8 minutes total. The dish character will change but the method stays the same.
