Steps
Before you start
- Measure out barley and rinse it thoroughly
- Halve the pomegranate and have a bowl of water nearby to help release the seeds
- Bring the stock or water to a boil before adding barley
Rinse and cook barley
- Place pearl barley in a fine-mesh strainer and rinse under cool running water for 1 minute, stirring gently with your fingers to remove any debris.
- In a medium saucepan, bring the vegetable stock to a rolling boil over high heat.
- Add the rinsed barley and a pinch of salt.
- Return to a boil, then reduce heat to medium-low, cover, and simmer for 30–35 minutes, until the barley is tender but still has a slight chew to it and the liquid is mostly absorbed.

Ready when: Barley is tender but still slightly chewy; liquid is mostly absorbed
Tip: Do not rinse the barley after cooking, as the residual starch helps the salad hold together without becoming mushy.
Cool and season barley
- Spread the cooked barley on a large, shallow plate or baking sheet and let it cool to room temperature, about 10 minutes, stirring occasionally.
- Season with ½ teaspoon salt and a few grinds of black pepper.
- (The barley will absorb seasoning better while still warm.)

Ready when: Barley is no longer steaming and feels cool to the touch
Tip: Spreading the barley thin speeds cooling and prevents it from clumping together.
Toast pistachios
- While the barley cools, place the coarsely chopped pistachios in a dry skillet over medium heat.
- Toast for 3–4 minutes, stirring constantly with a wooden spoon, until fragrant and slightly darkened.
- Pour onto a plate and set aside.

Ready when: Pistachios are fragrant and slightly darker in color
Tip: Toast the pistachios separately so they stay crispy—adding them to the warm barley earlier would soften them.
Make whipped feta
- In a small food processor, combine the crumbled feta cheese, Greek yogurt, 1 tablespoon of the lemon juice, and the lemon zest.
- Blend until smooth and fluffy, about 1 minute, scraping down the sides as needed.
- Season with a pinch of salt and a grind of black pepper.
- (The whipped feta can be made ahead and refrigerated in a covered container for up to 3 days.)

Ready when: Mixture is smooth, light, and fluffy
Tip: Do not over-process, or the feta will become watery. Stop as soon as the mixture is smooth and aerated.
Make vinaigrette
- In a small bowl, whisk together the remaining 2 tablespoons of lemon juice, the olive oil, and the pomegranate molasses (if using).
- Season with ¼ teaspoon salt and a pinch of black pepper.
- Taste and adjust the balance of acid and oil to your preference.

Ready when: Vinaigrette is emulsified and seasoned
Tip: Pomegranate molasses adds depth and complexity; if you can't find it, omit it or add an extra ½ teaspoon of lemon juice.
Assemble salad
- In a large mixing bowl, combine the cooled barley, two-thirds of the pomegranate seeds, the mint, and the parsley.
- Drizzle with the vinaigrette and gently toss until everything is evenly coated.
- Taste and adjust the seasoning with salt and pepper.

Ready when: All ingredients are well combined and dressed
Tip: Reserve some pomegranate seeds and fresh herbs for garnish so they look bright and fresh on the finished salad.
Plate and garnish
- Divide the barley salad evenly among four plates or bowls.
- Top each portion with a generous dollop (about 3 tablespoons) of the whipped feta.
- Scatter the toasted pistachios, the remaining pomegranate seeds, and the reserved mint and parsley over the top.
- Drizzle any extra vinaigrette around the plate.

Ready when: Salad is plated and garnished
Tip: Add the whipped feta just before serving so it remains creamy and doesn't dry out or get absorbed into the warm barley.
Good to know
Tips
- If you cannot find pomegranate in season, use high-quality jarred pomegranate arils (which are already seeded), but drain them well and pat dry to remove excess liquid.
- Pearl barley has a naturally nutty, slightly sweet flavor that pairs beautifully with the bright acidity of lemon and the tang of feta. Do not substitute with hulled barley, which has a chewier texture and longer cooking time.
- This salad is best served at room temperature or lightly chilled, which allows the flavors to meld while the barley retains its tender texture. Avoid refrigerating for too long before serving, as cold temperatures dull the dressing's flavor.
- For a more substantial meal, serve alongside grilled chicken, lamb kebab, or roasted chickpeas. A drizzle of za'atar or sumac over the finished salad adds another layer of Middle Eastern flavor.
Make ahead
Whipped feta can be made up to 3 days ahead and stored in the refrigerator in a covered container. The barley can be cooked and cooled up to 2 days in advance. Assemble the salad no more than 2 hours before serving so the vegetables stay crisp and the herbs remain bright; add the whipped feta topping just before plating.
Storage & reheating
Store leftover salad (without the whipped feta topping) in a covered container in the refrigerator for up to 3 days. The whipped feta and toasted pistachios should be stored separately and added just before eating. To reheat, allow the salad to come to room temperature or serve chilled; do not microwave, as this will soften the pistachios and wilt the herbs.
Substitutions
- pomegranate molasses → 1 teaspoon balsamic vinegar or red wine vinegar. Pomegranate molasses is tangy and slightly sweet; balsamic adds complexity but is deeper in flavor. Use less as it is more concentrated.
- roasted, salted pistachios → toasted almonds, walnuts, or sunflower seeds. Any toasted nut or seed works; pistachios' buttery flavor is iconic, but adjust amounts if using denser nuts like walnuts.
- plain Greek yogurt → sour cream or mascarpone. For whipping the feta: sour cream adds tang, mascarpone makes it richer. Use the same amount and blend until smooth.
- pomegranate seeds → dried cranberries or currants, plumped in warm water for 5 minutes. Dried fruit adds chewiness and sweetness rather than tart juice. Use about ¾ cup and toss into the salad without plumping if you prefer them to stay chewy.
