Piloncillo Cinnamon Swirl Blondies
Rich, chewy blondie bars infused with the warm molasses flavor of piloncillo and swirled with ground cinnamon. More complex and flavorful than traditional brown sugar blondies, with a distinctly Mexican character. Perfect on their own or paired with coffee or cinnamon hot chocolate.

Steps
Before you start
- Ensure eggs are at room temperature before mixing
- Line your 8×8-inch baking pan with parchment paper, leaving overhang on two sides
- Preheat oven to 350°F (175°C) while you prepare ingredients
Prepare pan and preheat ovenOven 350°F / 175°C
- Line an 8×8-inch (20×20 cm) square baking pan with parchment paper, leaving an overhang on two opposite sides for easy removal.
- Preheat your oven to 350°F (175°C).

Tip: Having the pan lined before you start mixing saves time and keeps your hands clean
Melt piloncillo with butter
- Chop the piloncillo into ½-inch (1 cm) chunks to help it melt evenly.
- In a small saucepan over medium heat, combine 6 oz (170 g) of the unsalted butter and chopped piloncillo.
- Stir frequently for 4–5 minutes, breaking apart the piloncillo pieces with your spoon.
- The mixture should be mostly liquid with some grainy texture (complete melting is not necessary).
- Remove from heat and let cool for 2–3 minutes until warm but not hot.

Ready when: Piloncillo mostly dissolved, mixture is mostly liquid with some graininess remaining
Tip: Medium heat prevents the butter from browning too much; don't let the mixture get too dark or the blondies will taste burnt
Whisk in eggs and vanilla
- Whisk 2 large eggs and 1.5 tsp vanilla extract together in a small bowl until pale and frothy.
- Pour the cooled piloncillo mixture into a medium mixing bowl.
- Slowly whisk the egg mixture into the piloncillo mixture, stirring constantly until smooth and fully combined with no visible streaks of eggs.

Ready when: Mixture is smooth, pale, and uniform with no egg streaks visible
Tip: Tempering the eggs by slowly whisking them into the warm (not hot) piloncillo mixture prevents scrambling and ensures a smooth batter
Combine flour, baking powder, and salt
- In another bowl, whisk together 1¼ cups (155 g) all-purpose flour, ½ tsp baking powder, and ¼ tsp salt.
- Whisk for about 30 seconds until evenly combined with no lumps of baking powder remaining.

Ready when: All ingredients are evenly distributed
Fold ingredients together
- Pour the dry ingredient mixture into the wet piloncillo-egg mixture.
- Using a spatula, fold gently with 15–20 strokes until no white flour streaks are visible and the batter is uniform.
- If using the optional pecans, fold them in now with a few final gentle strokes.
- Stop immediately when combined; do not overmix.
- The batter will be thick and dense.

Ready when: No flour streaks visible, batter is thick and uniform
Tip: Overmixing develops gluten and makes blondies tough and cake-like instead of chewy
Assemble layers and prepare swirl
- Pour half of the blondie batter (about 1½ cups) into the prepared pan and spread it into an even layer using a spatula.
- In a separate small bowl, whisk 2 tbsp (28 g) melted unsalted butter, 3 tbsp (35 g) piloncillo (finely chopped), 1½ tsp ground cinnamon, and ½ tsp vanilla extract until you have a thick, spreadable paste.
- Drop spoonfuls of this swirl mixture over the base layer.
- Gently spread it into a rough layer (it doesn't need to cover completely).
- Pour the remaining blondie batter over the swirl and gently spread to cover most of it, leaving some swirl visible at the edges.

Ready when: Layers are in place and the pan is ready to swirl
Tip: The cinnamon-piloncillo mixture spreads more easily if the piloncillo is finely chopped; if stiff, whisk in a few drops of water to loosen
Marble and bakeOven 350°F / 175°C
- Using a butter knife or wooden skewer, drag it through the batter in 4–5 strokes (either straight lines from edge to edge or a zigzag pattern) to create a marbled, swirled effect.
- Don't over-swirl or the cinnamon layer will completely mix in and lose its definition.
- Transfer the pan to the preheated 350°F (175°C) oven and bake for 25–30 minutes.
- The blondies are done when the top is golden brown and a toothpick inserted into the center comes out with moist crumbs clinging to it (not wet batter, but not completely dry).
- The edges will be set, and the center will still have a very slight jiggle when you gently shake the pan.

Ready when: Top is golden brown, toothpick has moist crumbs, edges are set but center jiggles slightly
Tip: Underbaking is better than overbaking; a toothpick with moist crumbs ensures chewy blondies, not dry ones
Cool and cut into squares
- Remove from the oven and place the pan on a wire cooling rack.
- Let cool in the pan for at least 10 minutes; they'll firm up enough to slice cleanly.
- For a firmer, fully set blondie, cool for 15–20 minutes in the pan.
- Lift the parchment overhang to remove the entire sheet of blondies onto a cutting board.
- Cool for another 10–15 minutes until completely cooled to the touch.
- Using a sharp knife, cut into a 4×4 grid to create 16 equal squares.
- Wipe the knife between cuts for neat edges.
- Serve warm or at room temperature.

Tip: Don't cut while still hot or the bars may crumble and fall apart
Good to know
Tips
- Piloncillo is denser than brown sugar. Chop it into ½-inch pieces before melting to ensure it dissolves evenly and distributes throughout the batter.
- The cinnamon-piloncillo swirl mixture will be quite stiff. Finely chop the piloncillo pieces and whisk vigorously, or add a few drops of water to make it more spreadable.
- These blondies are best when slightly underbaked—a toothpick with moist crumbs clinging to it, not wet batter. This keeps them chewy rather than cakey.
- If adding the optional pecans, toast them lightly in a dry skillet for 2–3 minutes until fragrant before folding into the batter. Toasting significantly brings out their flavor.
Make ahead
These blondies are best fresh but can be made up to 2 days ahead. Store in an airtight container at room temperature. Reheat in a 300°F (150°C) oven for 5–8 minutes if you prefer them warm.
Storage & reheating
Room temperature: up to 3 days in an airtight container. Refrigerator: up to 1 week in an airtight container. Freezer: up to 3 months in an airtight, freezer-safe container; thaw at room temperature or warm in a 300°F (150°C) oven for 8–10 minutes.
Substitutions
- piloncillo → packed brown sugar. Use the same amount of packed brown sugar. You'll lose the deep molasses character, but the blondies will still be delicious.
- ground cinnamon → 1 tsp ground cinnamon + 0.5 tsp ground cloves or nutmeg. This adds warmth and complexity. Mix the spices into just the swirl layer for maximum impact.
- pecans → walnuts or toasted chopped almonds. Any nut works well. Toast lightly first to bring out flavor. Omit entirely for plain blondies.
- unsalted butter → clarified butter (ghee) or coconut oil. Use the same amount by weight. Ghee adds subtle richness; coconut oil changes flavor slightly.
