Party-Perfect Tahini Date Fudge Cups with Sesame Rim

These elegant no-bake fudge cups combine creamy tahini and naturally sweet dates into a rich filling, dipped in dark chocolate and crowned with a toasted sesame seed rim. They're inspired by Middle Eastern confectionery traditions and require no oven—just a microwave, a food processor, and a light hand with chocolate. Perfect for parties, gift boxes, or an impressive dessert that comes together in under an hour.

Steps

Before you start
  • Line a 12-cup muffin tin with paper liners
  • Pit the dates and have them ready
  • Toast the sesame seeds in a dry pan over medium heat for 2–3 minutes until fragrant, then set aside to cool
  • Use a microwave-safe bowl for melting chocolate
  1. Blend dates and tahini

    • Add the pitted dates and tahini to a food processor.
    • Pulse 8–10 times until the mixture is finely combined and begins to hold together when squeezed.
    • The texture should resemble damp breadcrumbs with no visible chunks of date.
    • Stop and scrape down the sides as needed.
    + Show details

Ready when: Mixture holds together when squeezed; no visible chunks remain

Tip: Do not over-process into a smooth paste—the texture should be slightly grainy for the best eating consistency

  2. Add oil, salt, and vanilla

    • Add the coconut oil, sea salt, and vanilla extract to the food processor.
    • Pulse 4–5 times until the mixture is evenly combined and feels like soft fudge.
    • It should just barely hold together when pressed, and the surface should be slightly glossy from the oil.
    + Show details

Ready when: Mixture is glossy and holds together firmly without being wet or sticky

Tip: If the mixture feels too dry, add 1 teaspoon of coconut oil at a time. If too wet, let it rest for 5 minutes for the dates to absorb moisture

  3. Fill muffin liners

    • Spoon 1 tablespoon of the tahini-date mixture into each lined muffin cup, pressing gently with the back of the spoon or a small offset spatula to form a flat, compact layer about ¾ inch (2 cm) thick.
    • Ensure no gaps remain.
    • Chill in the freezer for 15 minutes until the filling is firm.
    + Show details

Ready when: Filling is firm to the touch and does not yield to light pressure

Tip: Press firmly to avoid air pockets, which can collapse when the warm chocolate is applied

  4. Melt chocolate carefully

    • Place the chopped dark chocolate in a microwave-safe bowl.
    • Microwave in 20-second bursts at 50% power, stirring between bursts, until fully melted and smooth (about 1 minute total).
    • The chocolate should be warm enough to pour easily but not hot—around 90–100°F (32–38°C) if you have a thermometer.
    • If it feels too hot, wait 1 minute before using.
    + Show details

Ready when: Chocolate is completely melted and pourable; no visible lumps remain

Tip: Low power prevents the chocolate from seizing or becoming too thick. If it does seize, stir in 1 teaspoon of coconut oil

  5. Dip and coat with chocolate

    • Working quickly, dip each chilled tahini cup into the melted chocolate, tilting the cup at a slight angle to coat the sides and top completely.
    • Let the excess chocolate drip back into the bowl for 2 seconds, then return the cup to its liner, chocolate-side up.
    • Repeat with the remaining cups.
    + Show details

Ready when: Each cup is fully coated with chocolate; no gaps in coverage remain

Tip: If the chocolate cools too much, gently reheat in the microwave for 10 seconds at 50% power. Work in batches if necessary to keep the chocolate warm

  6. Apply sesame seed rim

    • Before the chocolate sets, immediately sprinkle the toasted sesame seeds onto the top of each chocolate-coated cup, using about ½ teaspoon per cup.
    • Press gently so the seeds adhere to the still-warm chocolate.
    • Work quickly before the chocolate hardens.
    + Show details

Ready when: Sesame seeds are firmly pressed into the chocolate and do not shift when touched gently

Tip: If the chocolate has already set, let the cups sit at room temperature for 2–3 minutes to soften slightly before applying seeds

  7. Chill until set

    • Place the muffin tin in the refrigerator for 20 minutes until the chocolate coating is fully set and feels firm to the touch.
    • The fudge cups are now ready to serve.

Ready when: Chocolate coating is firm and no longer yields to pressure; no moisture beads on the surface

Good to know

Tips
  • For a prettier finish, apply sesame seeds while the chocolate is still slightly warm but not piping hot—around 90°F (32°C). This gives them maximum adhesion.
  • If you don't have a microwave, melt the chocolate in a heatproof bowl set over a pot of gently simmering water (double boiler), stirring constantly and removing from heat as soon as it is fully melted.
  • These cups hold up beautifully on a dessert platter at room temperature if your kitchen is cool. For a party, assemble 1–2 hours ahead and keep them in the refrigerator until 15 minutes before serving.
  • Toast your sesame seeds fresh in a dry skillet for maximum flavor—they will smell nutty and toasty. Do this before you start the recipe so they cool completely.
Make ahead

Prepare up to 3 days ahead: store in an airtight container in the refrigerator. You can also assemble through Step 3 (filling and chilling), wrap tightly, and freeze for up to 2 weeks; dip and finish the day of serving for the best sesame seed adhesion.

Storage & reheating

Room temperature (cool kitchen, below 72°F / 22°C): 2 days in an airtight container. Refrigerator: 5 days in an airtight container or parchment-lined box. Freezer: up to 2 weeks in a freezer-safe container; thaw in the refrigerator for 30 minutes before serving.

Substitutions
  • Medjool dates, pitted → Deglet Noor dates or pitted prunes. Use the same weight; they are slightly less sweet, so you may wish to add 1 teaspoon of honey to the mixture
  • Dark chocolate (70% cacao), chopped → Milk chocolate (50–60% cacao) or semi-sweet chocolate. The flavor will be sweeter and less complex; increase chocolate to 7 ounces (200 g) for better coating coverage
  • Sesame seeds (white or mix of white and black) → Chopped pistachios, toasted and cooled, or a mix of sesame and nigella seeds. Use the same amount by weight; toast pistachios for 3–4 minutes at 325°F (160°C)
  • Tahini (sesame seed paste) → Almond butter or peanut butter. Reduce to ½ cup (120 g) and add 2 tablespoons (30 g) of tahini or sesame oil for authentic sesame flavor
