Steps
Before you start
- Line a baking sheet with parchment paper
- Toast almonds in a 325°F (163°C) oven for 8–10 minutes until fragrant, then let cool
- Have all ingredients at room temperature for easier mixing
Blend dates and chocolate
- In a food processor, combine pitted Medjool dates (1½ cups / 240 g) and finely chopped dark chocolate (4 oz / 115 g).
- Pulse 10–12 times, scraping down the bowl occasionally, until the mixture is crumbly and the chocolate is broken into small pieces, about 1–2 minutes total.
- The dates should begin to break down and hold moisture.

Ready when: Mixture is crumbly with small chocolate pieces visible
Tip: Don't overblend; you want texture, not a smooth paste.
Add almonds and binders
- Add the finely chopped roasted almonds (¾ cup / 105 g), room-temperature coconut oil (2 tablespoons / 28 ml), vanilla extract (½ teaspoon / 2.5 ml), and sea salt (⅛ teaspoon / 0.75 g) to the processor.
- Pulse 8–10 times until the mixture comes together into a moist, cohesive mass that holds its shape when pinched.
- It should resemble wet sand that packs together but is not a smooth dough.

Ready when: Mixture clumps together and holds shape when pinched
Tip: If too dry, add ½ teaspoon more coconut oil and pulse briefly. If too wet, add 1 tablespoon cocoa powder.
Prepare coating stations
- Pour unsweetened cocoa powder (⅓ cup / 30 g) into one shallow bowl and unsweetened shredded coconut (½ cup / 45 g) into a second shallow bowl.
- You'll use these to coat the balls in the next step.
Form and coat balls
- Using a small spoon or melon baller (about 1 oz / 28 g), scoop portions of the mixture onto the parchment-lined baking sheet, spacing them about 1 inch apart.
- Using damp hands or the palm of your hand, gently roll each portion into a compact ball, about 1¼ inches (3 cm) in diameter.
- Roll 12 balls in cocoa powder and 12 in shredded coconut, pressing gently so the coating adheres.
- Place the coated balls back on the baking sheet.

Ready when: All balls are formed, compact, and evenly coated
Tip: Keep hands slightly damp to prevent sticking and make rolling smoother. If the mixture is sticky, chill for 15 minutes before shaping.
Chill until firm
- Refrigerate the coated balls on the baking sheet for 90 minutes, or until the chocolate is set and the balls feel firm to a gentle press.
- The cocoa and coconut coatings will set slightly, helping them hold together.

Ready when: Balls are firm to the touch and no longer sticky
Tip: Don't skip this step; chilling prevents the balls from falling apart when removed from the baking sheet.
Good to know
Tips
- Toast the almonds yourself for fresher flavor and better texture; store-bought roasted almonds can taste stale.
- For a Middle Eastern twist, add ¼ teaspoon ground cardamom or a pinch of cinnamon to the mixture in step 2.
- Make a two-tone treat by rolling some balls in both cocoa and coconut; coat with cocoa first, then lightly press coconut onto wet areas.
- These freeze beautifully and serve as ready-to-eat frozen treats straight from the freezer on a hot day.
Make ahead
Prepare up to 5 days ahead. Form and chill the balls, then store in an airtight container. They improve slightly as the flavors meld over 1–2 days.
Storage & reheating
Room temperature (60–70°F / 15–21°C): up to 3 days in an airtight container, separated by parchment. Refrigerator (40°F / 4°C): up to 1 week in an airtight container. Freezer (0°F / −18°C): up to 2 months in a freezer bag or airtight container; thaw at room temperature for 20–30 minutes before serving.
Substitutions
- Medjool dates, pitted → Deglet Noor dates or dried figs. Use the same weight. Deglet Noors are slightly less moist; add an extra ½ teaspoon coconut oil if the mixture feels dry.
- Dark chocolate (70% cacao) → Cacao nibs or raw cacao powder. Use ⅓ cup (30 g) raw cacao powder in place of chocolate for a less sweet, more bitter flavor. You may need to add 1 extra teaspoon of coconut oil to bind.
- Roasted unsalted almonds → Roasted hazelnuts, pistachios, or walnuts. Use the same weight. Walnuts will add earthiness; pistachios will bring a subtle green hue.
- Unsweetened shredded coconut → Finely chopped pistachios, sesame seeds, or additional cocoa powder. Use the same weight or adjust by ¼ cup if using seeds or nuts; they may not coat as evenly as coconut.
