Steps
Before you start
- Gather all ingredients and measuring spoons before starting
- Ensure all tools and the bowl are completely dry (moisture causes clumping)
- Decide whether to include the optional onion powder and thyme
- Have a clean, airtight glass jar ready for storage
Measure umami base ingredients
- Gather a small mixing bowl and ensure it is completely dry.
- Using measuring spoons, carefully measure 2 tablespoons (10g) of dried mushroom powder, 2 tablespoons (15g) of nutritional yeast, and 1 tablespoon (15g) of sea salt.
- Add each ingredient to the bowl as you measure.

Ready when: All umami base ingredients measured and in the bowl
Tip: Use completely dry measuring tools and bowl—any residual moisture causes clumping and reduces shelf life.
Add aromatics and pepper
- Measure 1 tablespoon (9g) of garlic powder and 1 teaspoon (2g) of black pepper.
- Add both to the bowl.
- If using optional ingredients, also measure 1 teaspoon (3g) of onion powder and ½ teaspoon (0.5g) of dried thyme and add them to the bowl now.

Ready when: All aromatics and seasonings are in the bowl
Tip: Adding these in a second step helps you identify when to include optionals and ensures they're not neglected.
Whisk until fully blended
- Using a fork or small whisk, vigorously stir and press the mixture for 2–3 minutes.
- Break apart any clumps of nutritional yeast or mushroom powder that may stick together.
- Continue until the blend is completely uniform in color with no visible pockets of individual ingredients.
- The finished blend should look like a single, cohesive powder or fine granules.

Ready when: The blend is completely uniform in color and texture with no visible clumps
Tip: Don't skip this step—uneven mixing means some portions will taste too salty or too garlicky. Thorough whisking ensures balanced flavor in every use.
Transfer to airtight container
- Transfer the finished seasoning blend into a clean, dry airtight glass jar or spice container with a capacity of 4–6 ounces (120–180 ml).
- Seal the container tightly.
- Label the jar with 'Mushroom Umami Seasoning' and today's date so you can track freshness.

Tip: Glass containers are superior to plastic, which absorbs oils and odors. Store in a cool, dark cabinet away from heat and direct light to preserve vibrancy.
Good to know
Tips
- For the deepest umami, source the finest, most finely-ground mushroom powder available, or grind dried porcini mushrooms yourself in a dedicated spice grinder.
- This blend works beautifully on roasted vegetables, popcorn, scrambled eggs, grilled tofu, mashed potatoes, pasta, and avocado toast. Stir it into sour cream or Greek yogurt for an instant dip.
- For an optional extra umami boost, add ½ teaspoon of soy sauce powder or kelp granules (kombu) to the blend before mixing.
- One tablespoon of the blend will season about 2–3 servings of a vegetable side dish or approximately 2 cups of popcorn. Start with ½ teaspoon per dish and adjust to taste.
Make ahead
Yes. Make this blend up to 1 week ahead. It stores well for up to 3 months in an airtight glass container at room temperature.
Storage & reheating
Room temperature in an airtight glass jar away from heat and light: up to 3 months. The blend is best used within the first month for maximum flavor vibrancy. Does not require refrigeration or freezing. If the blend seems muted after 2–3 months, it hasn't spoiled—just use it in cooking rather than as a finishing seasoning where the flavors would be most noticeable.
Substitutions
- Dried mushroom powder (porcini or mixed varieties) → Shiitake or mixed porcini-shiitake powder. Use the same amount for a richer, slightly earthier flavor
- Nutritional yeast → Miso powder or additional dried mushroom powder. If using miso, reduce to 1 tablespoon (9g) as it is more intense; or add more mushroom powder for a less tangy version
- Garlic powder → Garlic granules. Use 1 tablespoon (10g) for the same flavor with a slightly coarser texture
- Black pepper, freshly ground → White or pink peppercorns, freshly ground. Use 1 teaspoon (2g) for a milder, more floral heat profile
