  1. Prep the khlii

    • Pull or cut the khlii into bite-size shreds about ½ inch (1 cm).
    • Slice the garlic, chop the parsley, and crack each egg into a small bowl or cup, keeping the yolks whole.

Substitutions
  • khlii (Moroccan preserved spiced beef) → pastrami, dried beef or good-quality beef jerky, finely shredded. Less spiced, so add an extra pinch of cumin and paprika and a little garlic.
  • khlii fat from the jar → extra olive oil or ghee (smen). Use 1 tablespoon. Ghee adds a richer, more traditional flavor.
  • fresh flat-leaf parsley or cilantro → fresh cilantro. Use the same amount for a more classic Moroccan flavor.
