Steps

Before you start
  • Chill two glasses in the freezer for at least 5 minutes
  • Have ice on hand
  • Use chilled sparkling water straight from the fridge
  1. Chill the glasses

    • Place two 12–14 oz (350–400 ml) glasses in the freezer for at least 5 minutes, or fill them with ice and let sit while you prepare the drink base.

Ready when: Glasses are frosted and very cold to touch

Tip: Cold glasses prevent the drink from warming up too quickly

  2. Mix the base

    • In a large measuring cup or pitcher, whisk together the mango puree (¾ cup / 180 ml) and passion fruit juice (½ cup / 120 ml) until fully blended.
    • Stir in the fresh lime juice (3 tablespoons / 45 ml).
    • The mixture should be smooth, vibrant orange-pink, and homogeneous.

Ready when: Base is smooth with no streaks of unmixed puree

Tip: Use room-temperature mango puree so it blends smoothly with the juice

  3. Fill glasses with ice

    • Remove the chilled glasses from the freezer.
    • Fill each glass with about ¾ cup (100 g) of ice cubes, leaving about 1 inch (2.5 cm) of space at the top.
    + Show details

Ready when: Each glass is three-quarters full of ice

Tip: Don't overfill with ice—you need room for the drink and topper

  4. Pour the mango-passion fruit base

    • Divide the mango-passion fruit mixture evenly between the two glasses, pouring it over the ice.
    • Pour slowly so the mixture distributes evenly and the ice doesn't crack.
    • Each glass should receive about 6 oz (180 ml) of the base mixture.

Ready when: Base reaches about halfway up the glass

Tip: Pour slowly to avoid splashing and to let the drink settle evenly

  5. Top with sparkling water

    • Top each glass with ½ cup (120 ml) of ice-cold sparkling water.
    • Stir gently with a bar spoon or long spoon for about 10 seconds to distribute the carbonation and blend the flavors slightly without losing fizz.

Ready when: Drink is bubbly, light orange-pink, and well-mixed

Tip: Add sparkling water last and stir gently to preserve the carbonation

  6. Garnish and serve

    • Drop a lime wedge or thin lime slice into each glass.
    • Serve immediately while cold and fizzy.

Ready when: Garnish floats on top and drink is ready to enjoy

Tip: Serve immediately—do not let it sit more than a minute before drinking

Good to know

Tips
  • For frozen mango puree, thaw it to room temperature first so it blends smoothly with the juices instead of forming clumps.
  • If using fresh passion fruit, cut the fruit in half, scoop the pulp into a fine-mesh strainer, and press gently to extract the juice—discard the seeds and skin.
  • Make double the base mixture (without sparkling water) and store it for easy entertaining throughout the week.
  • For a creamier version, add 2–3 tablespoons (30–45 ml) of coconut milk or coconut cream to the base mixture.
Make ahead

You can prepare the mango-passion fruit base up to 8 hours ahead and store it in the refrigerator in a sealed container. Keep the sparkling water chilled separately and combine when serving for maximum fizz.

Storage & reheating

Best served immediately. If you have leftover base (no sparkling water), store it in an airtight container in the refrigerator for up to 2 days. The drink does not freeze well due to the carbonation and delicate fruit flavors.

Substitutions
  • ripe mango puree, smooth → 1 cup (240 ml) fresh mango chunks blended until completely smooth. Use ripe, sweet mango for best flavor. Blend in a food processor until no lumps remain, then strain if you prefer an even smoother consistency.
  • passion fruit juice, fresh or bottled → ½ cup (120 ml) guava juice or pineapple juice. The drink will be slightly less tart but still tropical and delicious. Use quality bottled juice for consistency.
  • fresh lime juice → 2–3 tablespoons (30–45 ml) fresh lemon juice. Lemon is milder than lime, so use the higher amount. The drink will be less bright but still refreshing.
  • sparkling water, chilled → club soda or seltzer water. These have a neutral taste and will work identically to sparkling water.
