Steps
Before you start
- Chill the almond milk and juice glasses in the freezer for 15–20 minutes before blending
- Use room-temperature mandarins—they juice more easily than cold fruit
- Toast the pistachios lightly in a dry skillet (2–3 minutes) for deeper flavor, then let cool
Extract mandarin juice
- Cut the 3 medium mandarins in half and juice them using a citrus juicer or reamer.
- You should have about 0.75 cup (180 ml) of fresh juice.
- Strain through a fine-mesh sieve to remove any pulp or seeds if you prefer a smoother texture, though leaving fine pulp adds body.

Ready when: You have clear or lightly pulpy mandarin juice, no large pieces
Tip: Room-temperature mandarins yield more juice than cold ones; cold fruit takes longer and resists juicing
Blend pistachios with almond milk
- Add the cooled 0.5 cup (60 g) of shelled pistachios and 1 cup (240 ml) of cold almond milk to a high-speed blender.
- Blend on high for 60–90 seconds until the mixture is completely smooth and creamy with no visible pistachio pieces.
- You should see a pale beige, uniform liquid.

Ready when: Mixture is silky and homogeneous with no gritty texture
Tip: A high-speed blender emulsifies the pistachios into a true cream; a regular blender may leave a grainy texture
Strain pistachio cream
- Pour the blended pistachio mixture through a fine-mesh strainer or nut-milk bag into a clean bowl, pressing gently with the back of a spoon to extract as much creamy liquid as possible.
- You'll capture about 0.75 cup (180 ml) of strained pistachio cream; discard the dry pulp.

Ready when: Strained liquid flows easily through the sieve; barely any liquid drips from the pulp
Tip: Don't squeeze the nut pulp too hard—it releases bitterness; a gentle press extracts the cream without the tannins
Combine and season
- In the rinsed blender, combine the 0.75 cup (180 ml) mandarin juice, the 0.75 cup (180 ml) strained pistachio cream, 1.5 tablespoons (22 g) honey, 0.125 teaspoon (0.5 g) ground cardamom, a pinch of fine sea salt, and 0.75 cup (150 g) ice cubes.
- Blend on high for 30–45 seconds until the juice is frothy and well combined.

Ready when: The juice is smooth, frothy on top, and ice is fully broken down
Tip: Add ice last and blend only briefly to keep the drink cold and airy; over-blending melts the ice and dilutes the flavor
Pour and rest
- Divide the juice between 2 chilled glasses.
- Let sit for 2–3 minutes to allow the foam to settle slightly and flavors to marry.
- The juice will naturally separate a little—stir gently before drinking to recombine.

Tip: Pre-chilled glasses keep the juice cold longer and enhance the luxurious mouthfeel
Good to know
Tips
- For a creamier texture and richer mouthfeel, use half almond milk and half heavy cream or Greek yogurt (adjust amounts equally).
- If your blender isn't high-speed, soak the pistachios in hot water for 10 minutes before blending to soften them—this makes the cream smoother.
- Toast raw pistachios in a dry skillet over medium heat for 2–3 minutes until fragrant; this deepens the nutty flavor dramatically.
- This juice is naturally high in fiber and antioxidants from the pistachios and vitamin C from the mandarin. It's nutrient-dense, so a small serving is satisfying.
Storage & reheating
Best served immediately. If you must store, refrigerate in an airtight glass bottle for up to 6 hours; the cream and juice will separate, so shake or stir well before serving. Freezing is not recommended—the texture becomes watery and separated upon thawing.
Substitutions
- roasted, unsalted pistachios → blanched almonds or raw cashews. Use the same amount. Toast lightly for deeper flavor. The juice will be milder and less distinctly nutty but equally creamy.
- unsweetened almond milk, cold → cashew milk, oat milk, or coconut milk (full-fat). Use the same amount. Coconut milk will add tropical notes; oat milk will be nuttier. All work equally well.
- fresh mandarin oranges, at room temperature → fresh navel oranges or tangerines. Use the same weight (450 g). Navel oranges are slightly less sweet and more tart; tangerines are sweeter and more fragrant. Adjust honey to taste.
- ground cardamom → a tiny pinch of ground ginger or ¼ teaspoon orange zest. Both brighten the drink. Ginger adds warmth; zest adds citrus complexity. Omit entirely if you prefer a pure mandarin-pistachio flavor.
