Steps

Before you start
  • Have limes at room temperature for easier zesting
  • Measure out all granola ingredients before toasting
  • Read through to plan 15 minutes cooling time for granola
  1. Toast the granola base

    • Heat 3 tablespoons (45 g) butter and 3 tablespoons (40 g) brown sugar in a small saucepan over medium heat, stirring until the mixture is melted and combined, about 1 minute.
    • Add 1.5 cups (135 g) rolled oats and 0.75 cup (100 g) chopped pistachios.
    • Stir constantly for 6–7 minutes until the oats turn light golden and smell toasty; they will continue to darken slightly as they cool.
    • Watch carefully toward the end so they don't scorch.

Ready when: Oats are light golden brown and smell fragrant; no burned bits

Tip: Stir constantly to prevent burning. Oats and nuts will crisp up more as they cool, so don't overdo it on the heat.

  2. Season and cool the granola

    • Pour the hot oat mixture onto a shallow baking sheet or tray and spread it in a thin layer.
    • Sprinkle with 0.25 teaspoon (1.5 g) fine sea salt and 0.25 teaspoon (0.5 g) ground cardamom, then toss gently with a wooden spoon to coat.
    • Let cool completely on the tray, stirring occasionally, for 10–15 minutes.
    • Once cooled, break up any clumps.

Ready when: Granola is cool to the touch and crispy throughout

Tip: Resist stirring too much while cooling or you'll break up the granola into dust. Gentle tosses every few minutes are enough.

  3. Crush cardamom and infuse yogurt

    • Using the side of a knife or a mortar and pestle, lightly crush 6 green cardamom pods to release the seeds.
    • Remove and discard the pods.
    • Finely grate the zest from 2 limes using a microplane (you need about 2 tablespoons zest).
    • In a small bowl, combine 2 cups (500 g) Greek yogurt, the lime zest, the cardamom seeds, and 2 tablespoons (30 g) honey.
    • Whisk until smooth and well combined.

Ready when: Yogurt is evenly speckled with lime zest and cardamom; no lumps

Tip: Zest the limes before juicing them if you need lime juice for another use. Fresh cardamom pods have better flavor than pre-ground—crush them just before using.

  4. Fold in the mango to granola

    • Once the granola has cooled completely, fold in 0.5 cup (75 g) chopped dried mango pieces with a spatula, mixing gently so you don't crush the oats and nuts.

Ready when: Mango pieces are evenly distributed throughout

Tip: Add the mango after cooling so its sweetness isn't cooked into the granola—it stays fresher and chewier this way.

  5. Assemble and serve

    • Divide the lime-cardamom yogurt evenly among 4 serving bowls or glasses.
    • Top each portion with a generous handful of the pistachio-mango granola.
    • Serve immediately while the granola is still crispy.

Ready when: Bowl is visually appealing with creamy yogurt and crunchy topping

Tip: Assemble right before eating so the granola stays crispy and doesn't absorb moisture from the yogurt.

Good to know

Tips
  • Buying whole green cardamom pods (not ground) and crushing them fresh gives a much warmer, more complex flavor than pre-ground cardamom.
  • If your granola clumps during toasting, it's not a problem—just gently break it apart once cooled. Large clusters are actually nice and crunchy.
  • For extra crunch and flavor, lightly toast the pistachios separately before adding them to the oat mixture, though this step is optional.
  • This bowl tastes best when assembled just before eating; the contrast between the cool, creamy yogurt and warm spices with the crispy granola is key to the experience.
Make ahead

The granola can be made up to 3 days ahead and stored in an airtight container at room temperature. The cardamom-lime yogurt mixture can be prepared up to 1 day ahead and refrigerated in a covered bowl. Assemble the bowls just before serving so the granola stays crunchy.

Storage & reheating

Granola: Store in an airtight container at room temperature for up to 3 days. Yogurt mixture: Refrigerate in a covered bowl for up to 1 day. Full assembled bowls do not store well due to the granola absorbing moisture. Freeze is not recommended.

Substitutions
  • plain full-fat Greek yogurt → Plain whole-milk yogurt or coconut yogurt. Use 2.5 cups if substituting regular yogurt as it's thinner than Greek yogurt. Coconut yogurt works well for a dairy-free version.
  • green cardamom pods → 0.25 teaspoon ground cardamom (added in step 3 instead of fresh pods). Pre-ground cardamom is less aromatic but acceptable; reduce the amount slightly since ground spice is more concentrated.
  • raw unsalted pistachios → Raw almonds, cashews, or walnuts, roughly chopped. Maintains the crunchy texture; almonds and cashews work especially well. Walnuts will add earthiness.
  • unsweetened dried mango → Dried pineapple, dried apricots, or dried papaya, chopped. Any tart-sweet dried tropical fruit works. Apricots pair especially well with cardamom.
