
Lemony Pearl Couscous Salad with Chickpeas and Herbs
Toasted pearl couscous is steeped off the heat, then tossed with chickpeas, crisp cucumber, mellowed red onion, and plenty of parsley and mint in a bright lemon-cumin dressing. It's a make-ahead side that travels well and works as a light vegan lunch.

Steps
Before you start
- Use pearl (Israeli) couscous, the large round pearls about the size of peppercorns. Fine Moroccan couscous will turn mushy with this method.
- Boil about 2 cups (480 ml) of water in a kettle before you start toasting the couscous.
- Drain and rinse the canned chickpeas, then pat them dry so the dressing clings.
- Wash and dry the parsley and mint thoroughly. Wet herbs make the salad watery.
Mellow the onion
- Zest both lemons into a small bowl and set the zest aside.
- Juice the lemons to get 3 tablespoons (45 ml) juice.
- In your large mixing bowl, combine the diced red onion, the lemon juice, and ½ teaspoon of the salt.
- Stir and leave it while you cook the couscous.
- The acid softens the onion's sharp bite.

Ready when: Onion pieces turn bright pink and slightly softened after about 10 minutes.
Tip: Keep the zest for the dressing. It carries most of the lemon aroma.
Toast the couscous
- Set the saucepan over medium heat.
- Add 1 tablespoon of the olive oil and the dry pearl couscous.
- Stir constantly with a wooden spoon for 3 to 4 minutes.
- Meanwhile, bring the water to a full boil in the kettle.

Ready when: Most pearls are pale golden with a few brown flecks, and the pan smells nutty.
Tip: Stir without stopping. The small pearls scorch quickly and burnt spots taste bitter.
Steep off the heat
- Turn off the burner and move the pan off the heat.
- Carefully pour in the 1¾ cups (420 ml) boiling water.
- It will hiss and bubble.
- Stir once, cover with the tight lid, and leave untouched for 15 minutes.

Ready when: Lift the lid and bite a pearl: it should be tender and chewy with no hard white center. If a chalky core remains, re-cover for 3 to 5 more minutes.
Tip: Don't lift the lid early. Escaping steam leaves the pearls undercooked.
Drain and cool
- Tip the couscous into the fine-mesh strainer to drain any water left in the pan.
- Spread it in a thin layer on the baking sheet and fluff with a fork to break up clumps.
- Leave it to cool while you make the dressing and prep the vegetables in the next two steps, at least 15 minutes.

Ready when: Couscous feels barely warm to the touch and the pearls are separate, not sticky.
Tip: Toss warm couscous with herbs and the herbs wilt and turn dark. Cool it first.
Whisk the dressing
- To the bowl with the onion and lemon juice, add the lemon zest, grated garlic, cumin, black pepper, and the remaining ¾ teaspoon salt.
- Slowly pour in the remaining ¼ cup (60 ml) olive oil while whisking.

Ready when: The dressing looks slightly thickened and cloudy, with no pool of separated oil.
Tip: Grate the garlic to a paste so no one bites into a raw chunk.
Prep the vegetables and herbs
- Seed and dice the cucumber into ½-inch pieces.
- Roughly chop the parsley, including the tender stems.
- Thinly slice the mint.
- Pat the rinsed chickpeas dry with a clean towel.

Ready when: Cucumber and chickpea pieces are similar in size, and the herbs are dry and fluffy.
Tip: Slice the mint right before you toss. It blackens at the edges if cut early.
Toss everything together
- Add the cooled couscous, chickpeas, and cucumber to the bowl with the dressing.
- Fold gently with a large spoon for about 1 minute, scraping up the dressing from the bottom.
- Add the parsley and mint and fold again just until the herbs are spread through the salad.

Ready when: Every pearl has a light, glossy coating and the herbs are evenly distributed.
Tip: Fold instead of stirring hard so the chickpeas stay whole.
Rest, taste, and serve
- Leave the salad at room temperature for 15 minutes so the pearls absorb the dressing.
- Taste and adjust: add a pinch of salt if it tastes flat, or a squeeze of lemon if it needs brightness.
- Transfer to a serving bowl and sprinkle with sumac, if using.

Ready when: The salad tastes bright and well seasoned, and the couscous is moist but not swimming in dressing.
Tip: Cold mutes seasoning. If you chill the salad, re-taste it before serving.

Tips
- Taste a pearl before the 15-minute steep ends. Brands differ, and the extra 3 to 5 minutes is the difference between chewy and chalky.
- Don't skip the toasting. It adds nutty flavor and helps the pearls stay separate instead of gluey.
- For a heartier main dish, add crumbled feta, halved cherry tomatoes, or toasted pine nuts.
- Always cool the couscous completely before adding the herbs. Warm couscous wilts them.
Make ahead
"Make the salad up to 24 hours ahead without the parsley and mint. Cover and refrigerate, then fold in the herbs and check the seasoning just before serving. For the best texture, bring it to room temperature for 20 minutes first."
Storage & reheating
"Room temperature: up to 2 hours. Refrigerator: airtight container, up to 4 days. The herbs darken after day 2 but the flavor holds. Freezer: not recommended, since cucumber turns watery when thawed. Serve chilled or at room temperature. Stir in 1 tablespoon of olive oil and a squeeze of lemon to refresh leftovers."
Substitutions
- pearl (Israeli) couscous → Fregola or orzo. Fregola gives a similar chew. Orzo is softer and should steep only 10 to 12 minutes, then be checked.
- fresh mint leaves → Fresh dill or cilantro. Use the same amount. Dill gives a more Mediterranean taste and cilantro a fresher, greener one.
- red onion → Thinly sliced scallions (3). Milder and needs no soaking. Add them with the herbs in the tossing step.
- ground sumac → Extra lemon zest (½ teaspoon). Gives a similar tang if you don't have sumac.
