Steps
Before you start
- Chill the kombucha for at least 4 hours so it stays fizzy and cold.
- Make the ginger-honey syrup first; it needs about 25 minutes to steep and cool.
- Squeeze citrus fresh and strain out seeds and pulp for a clean, bright flavor.
- Kombucha contains trace alcohol from fermentation (usually under 0.5% ABV); check with your guests if they avoid it entirely.
Simmer ginger syrup
- Combine the sliced ginger, honey and water in a small saucepan.
- Warm over medium-low heat, stirring, until the honey fully dissolves, then keep at a bare simmer (tiny bubbles at the edges) for 5 minutes.

Ready when: Honey is dissolved, syrup smells strongly of ginger and looks slightly amber
Tip: Don't boil hard; honey can foam up and flavors turn muted.
Steep and cool
- Remove the pan from the heat, cover, and let the ginger steep for 20 minutes.
- Strain through a fine-mesh strainer into a small bowl or jar, pressing gently on the ginger.
- You should have about ¼ cup (60 ml) syrup.

Ready when: Syrup is at room temperature and tastes distinctly spicy
Tip: Cool syrup prevents the kombucha from foaming over when poured.
Juice the citrus
- Cut the orange in half and squeeze about ½ cup (120 ml) juice.
- Squeeze the lemon for 3 tablespoons (45 ml) juice.
- Strain both through the strainer to remove seeds and pulp.
- Set a few thin orange half-moons aside for garnish.

Ready when: Juice is smooth, with no seeds
Tip: Roll the fruit firmly on the counter first to get more juice.
Mix the base
- In a measuring cup or small pitcher, stir together the cooled ginger syrup, orange juice and lemon juice until blended.
- Taste; it should be quite sweet-tart, since kombucha will dilute and add tang.

Ready when: Mixture is evenly combined with no honey streaks
Tip: If your kombucha is very tart, add 1 teaspoon more honey now.
Prepare glasses
- Fill two 12 oz (350 ml) glasses with 1 cup (140 g) ice each.
- If using, twist each lemon peel strip over the glass to release its oils, rub it around the rim, and drop it in.

Ready when: Glasses are filled and frosty
Add base and kombucha
- Divide the citrus-ginger base evenly between the glasses (about ¼ cup plus 1 tablespoon each).
- Tilt each glass and slowly pour ¾ cup (180 ml) cold kombucha down the side to preserve fizz.

Ready when: Glasses are about ¾ full with a light foam on top
Tip: Pouring straight down makes it foam over; pour slowly down the glass.
Stir and garnish
- Gently stir each drink 3 or 4 times with a bar spoon, just to combine.
- Tuck an orange half-moon into each glass and serve immediately with a straw.

Ready when: Color is a uniform golden orange and bubbles are still rising
Tip: Over-stirring knocks out the carbonation, so keep it gentle.
Good to know
Tips
- Use kombucha with a mild flavor such as plain, ginger or lemon; heavily flavored berry varieties can clash with the citrus.
- Keep every liquid cold before assembling for the best carbonation.
- For more heat, add 2 extra slices of ginger to the syrup and steep 10 minutes longer.
- Scale up for a pitcher by combining the base ahead of time and pouring kombucha into each glass individually.
Make ahead
The ginger-honey syrup can be made up to 7 days ahead and refrigerated in a sealed jar. Citrus juice can be squeezed up to 1 day ahead. Add kombucha and ice only just before serving.
Storage & reheating
Serve right away; the mocktail loses its fizz quickly. Leftover mixed base (without kombucha) keeps covered in the fridge for up to 24 hours. Syrup keeps 7 days refrigerated, or up to 3 months frozen in an ice cube tray. Do not freeze kombucha.
Substitutions
- honey → maple syrup or agave nectar. Use the same amount; vegan-friendly, with slightly different flavor.
- ginger or plain kombucha → chilled sparkling water plus 1 tablespoon apple cider vinegar. Gives fizz and tang without fermentation, though less complex.
- fresh orange juice → fresh blood orange or tangerine juice. Same quantity; blood orange gives a pretty pink color.
- fresh ginger → 1 teaspoon ground ginger. Whisk into the syrup and strain through a coffee filter; flavor is less bright.
