Italian Parmigiano Herb Crust

A bright, savory dry blend combining Parmigiano-Reggiano powder with Mediterranean herbs and garlic. Use it as a crispy coating for chicken or fish, a finishing crust for roasted vegetables, or sprinkle over pasta, soups, and salads. Makes enough for multiple applications and stores well in an airtight container.

Steps

Before you start
  • Use a dry bowl and spoon to prevent moisture from clumping the blend
  • If your oregano and basil are old or dusty, rub them gently between your palms first to release flavor
  • Have an airtight container ready
  1. Combine dry herbs

    • In a small mixing bowl, combine the crushed dried oregano and dried basil.
    • Gently crush any larger leaf pieces between your fingers to release the essential oils and ensure a more uniform blend.

Ready when: Herbs are fragrant and any large leaves are broken into smaller pieces

Tip: Crushing the herbs wakes up their flavor, especially if they've been stored for a few months

  2. Add cheese and aromatics

    • Add the grated Parmigiano-Reggiano powder, garlic powder, and fresh cracked black pepper to the bowl.
    • If using red pepper flakes, add them now.
    • Stir everything together with a spoon until evenly distributed.

Ready when: All ingredients are uniformly mixed with no visible pockets of one ingredient

Tip: Mix thoroughly so that the garlic powder doesn't clump in one spot when the blend is stored

  3. Season to taste

    • Add sea salt and stir to combine.
    • Taste a small pinch if you wish (you can dip a clean finger into the blend, then taste).
    • Adjust salt or any other component to your preference, keeping in mind the blend will be used as a finishing touch or coating where flavors concentrate.

Ready when: Blend tastes balanced with savory cheese, herbal brightness, and a hint of garlic

Tip: Remember that this blend will be tasted alongside other foods, so slightly underseasoning is better than oversalting

  4. Store in airtight container

    • Transfer the finished blend to an airtight container or jar with a tight-fitting lid.
    • Seal well and label with the date.
    • Store in a cool, dark, dry place away from heat and direct sunlight.

Ready when: Blend is sealed in a container, preventing air exposure

Tip: A glass jar with a rubber-sealed lid works best to keep the blend fresh and prevent moisture absorption

Good to know

Tips
  • Use this blend as a coating for chicken cutlets or fish fillets by pressing it onto the surface before pan-searing or baking
  • Sprinkle generously over roasted vegetables like zucchini, eggplant, or tomatoes in the last 2 minutes of roasting for a crispy crust
  • Dust over buttered popcorn, roasted nuts, or breadsticks for an instant Italian flavor boost
  • Mix 2–3 tablespoons of this blend with 2 tablespoons of olive oil to create a paste for rubbing on chicken, pork chops, or whole roasted cauliflower before cooking
Make ahead

Prepare this blend in advance and store it. It will keep for up to 3 months, making it ready whenever you want a quick flavorful crust or topping.

Storage & reheating

Room temperature: 3 months in an airtight container away from heat, light, and moisture. No refrigerator or freezer storage needed. If moisture enters the container, spread the blend on a plate in a 200°F (93°C) oven for 5 minutes to dry it out, then return to storage.

Substitutions
  • Parmigiano-Reggiano cheese, finely grated or powdered → Grana Padano cheese, finely grated. Similar aged hard cheese with a slightly nuttier flavor; works identically in the blend
  • Dried basil → Dried marjoram. Milder and earthier than basil but maintains the Mediterranean profile; use the same amount
  • Garlic powder → Granulated garlic (slightly coarser texture but same flavor). Provides more texture and may add a subtle bite; use the same amount
  • Fresh cracked black pepper → White pepper for a milder, less sharp bite. Use the same amount; it will blend less visibly but the flavor will be similar
