Steps
Before you start
- Have a spice grinder or mortar and pestle ready
- Make sure all ingredients are dry and at room temperature
- Use a small airtight jar for storage
Prepare the chilis
- Lay the dried calabrian chilis on a clean surface.
- Using your fingers or a small knife, open each chili, remove the stem, and shake out most of the seeds (leave a few seeds for extra heat if desired).
- Lightly crush each chili pod into rough, thumbnail-sized pieces.
- This breaks down the flesh and releases aromatic oils before grinding.

Ready when: Chilis are loosely crushed into small, irregular pieces
Tip: Wear gloves if your hands are sensitive to chili oils; don't touch your face while handling
Toast the fennel seeds
- Place a small dry skillet over medium heat.
- Add the fennel seeds and toast for 60–90 seconds, stirring constantly, until fragrant and lightly colored.
- Transfer immediately to a plate to cool for 1–2 minutes.
- Toasting brings out the seeds' warm, slightly sweet licorice character.

Ready when: Fennel is fragrant and very lightly browned
Tip: Watch the skillet closely; fennel burns quickly and will taste bitter if overtoasted
Grind the blend
- Add the crushed calabrian chilis, toasted fennel seeds, oregano, garlic powder, and sea salt to a spice grinder.
- Grind in short 2–3 second pulses (total of 4–5 pulses) until the mixture becomes a coarse powder with small visible flakes of chili and fennel.
- Do not overgrind into a fine powder; the texture should be rustic and slightly chunky to preserve the distinct flavors and appearance.

Ready when: Blend is coarse, with visible red chili flakes and fennel seeds, not powdery
Tip: If using a mortar and pestle, grind in stages: chilis first, then fennel, then combine with remaining ingredients and mix well
Cool and jar
- Spread the blend on a small plate or cutting board and let it cool completely to room temperature, about 5 minutes.
- This prevents condensation in the storage jar.
- Transfer to a clean, dry glass jar with an airtight lid.

Good to know
Tips
- Use this blend on grilled vegetables (eggplant, zucchini, peppers), scattered over pasta with olive oil and cheese, mixed into soft cheeses like ricotta, sprinkled on cured meats, or stirred into soups for authentic Calabrian warmth.
- Calabrian chilis can be hard to find fresh or dried. Look for them in Italian specialty stores, online spice retailers, or in jars packed in oil at better grocery stores. If unavailable, Aleppo pepper or a mix of smoked paprika and red pepper flakes works in a pinch.
- Toast whole spices just before grinding to maximize aroma. Pre-ground spices lose potency much faster than whole spices stored together.
- For a smokier blend, lightly toast the crushed calabrian chilis in the same skillet as the fennel seeds, 45–60 seconds, before grinding (watch closely to avoid burning).
Make ahead
"Prepare this blend up to 1 week ahead and store it in an airtight jar. The flavors develop and meld over a few hours, peaking at 2–3 days."
Storage & reheating
"Room temperature: In an airtight glass jar away from light and heat, lasts 3–4 months. Refrigerator: Not necessary and may cause condensation; not recommended. Freezer: Not necessary; the blend is stable at room temperature."
Substitutions
- dried calabrian chilis, stems removed → ¼ tsp crushed red pepper flakes (use less; they are hotter and less complex) or 1½ tablespoons dried Aleppo pepper for milder heat with fruity notes. Calabrian chilis have a unique smoky, fruity character; dried Aleppo pepper is the closest match but milder
- fennel seeds → 1 tablespoon anise seed or ½ tablespoon ground fennel seed. Anise seed is slightly sweeter; ground fennel is more convenient but loses some aroma during storage
- dried oregano → 1 tablespoon dried marjoram or 1½ teaspoons dried basil. Marjoram is milder and sweeter; basil adds a more herbaceous, peppery note
- garlic powder → 1½ teaspoons granulated garlic or ½ teaspoon roasted garlic powder (deeper, milder). Roasted garlic powder is less sharp but adds a mellow sweetness
