Steps

Before you start
  • Use true steel cut (Irish) oats, not rolled or quick oats; they need different liquid and time.
  • Plan on about 10 minutes for the pot to come to pressure and 20 minutes for natural pressure release, in addition to the 4-minute cook.
  • Use a 6-quart (5.7 L) Instant Pot or larger; oats foam, so do not scale up beyond the 6-quart max fill line.
  • If using frozen berries, you can add them straight from the freezer; they will thaw into a juicy topping.
  1. Toast the oats

    • Press Sauté and set to Normal/Medium heat.
    • When the display reads Hot, add the butter and let it melt and foam, about 1 minute.
    • Add the steel cut oats and stir constantly for 3 minutes.

    Ready when: Oats smell nutty and look a shade darker and slightly glossy.

    Tip: Keep stirring so the oats toast evenly and do not scorch on the bottom.

  2. Add liquid and seasoning

    • Press Cancel.
    • Pour in the water and milk, then add the salt, cinnamon and vanilla.
    • Scrape the bottom of the pot well with a spoon to release any stuck oat bits, which prevents a Burn warning.

    Tip: Do not fill past the half-way mark of the pot, since oats foam as they cook.

  3. Seal and pressure cook

    • Lock the lid and turn the steam valve to Sealing.
    • Select Pressure Cook (Manual) on High pressure and set the time to 4 minutes.
    • The pot will take about 10 minutes to come to pressure before the countdown begins.

  4. Natural release

    • When the cooking time ends, leave the pot alone and let the pressure release naturally for 20 minutes.
    • Do not touch the valve during this time.
    • After 20 minutes, carefully turn the valve to Venting to release any remaining steam, keeping hands and face away from the steam.

    Ready when: The float valve drops and the lid unlocks easily.

    Tip: A quick release can spray foamy oatmeal out of the valve, so wait the full 20 minutes.

  5. Stir and rest

    • Open the lid and stir the oatmeal vigorously for 30 seconds.
    • It will look thin and a bit soupy at first.
    • Put the lid back on loosely and let it sit 5 minutes.

    Tip: If it is too thick, stir in a splash of hot water or milk. If too thin, rest 5 more minutes.

  6. Prepare the berries

    • While the oatmeal rests, combine the berries and 1 tablespoon of the maple syrup in a small bowl.

  • pure maple syrup → honey or brown sugar. Use honey 1:1; use 3 tablespoons packed brown sugar for the whole recipe.
