Instant Pot Saffron White Beans with Almonds for Eid
A luxurious Persian-inspired side dish of creamy white beans infused with saffron, topped with caramelized almonds and edible rose petals. This elegant dish is traditionally served during Eid celebrations and pairs beautifully with rice, roasted meats, or fresh herbs. The pressure cooker dramatically reduces cooking time while developing deep, aromatic flavors from the saffron and toasted almonds.

Steps
Before you start
- Soak white beans overnight (or use the quick-soak method: boil 2 minutes, cover, let sit 1 hour)
- If using dried beans, drain and rinse well after soaking
- Have saffron threads ready to bloom in hot water
- Measure out rose petals and set aside for garnish
- Ensure the Instant Pot inner pot is clean and dry
Bloom the Saffron
- Pour ¼ cup (60 ml) of hot water into a small bowl.
- Add the saffron threads and let them steep for 10 minutes off the heat.
- This releases the saffron's color, flavor, and fragrance.
- Set aside.

Ready when: Liquid turns deep golden-red
Tip: Blooming saffron before adding maximizes its color and prevents it from settling to the bottom unnoticed.
Toast the Almonds
- Set the Instant Pot to sauté mode on high heat.
- Once hot (about 1 minute), add 1 cup (140 g) of sliced almonds in a single layer.
- Stir constantly for 3–4 minutes until fragrant and golden brown.
- Transfer to a paper towel-lined plate immediately to stop cooking.
- Set aside.

Ready when: Almonds are light golden and highly fragrant
Tip: Watch carefully—almonds can burn quickly. Remove them to a cool surface immediately or they'll continue cooking and turn bitter.
Sauté the Aromatics
- Keep the Instant Pot on sauté mode (high).
- Add 2 tablespoons (29 g) of the butter.
- When melted and foaming, add the halved onion and crushed cardamom pods (if using).
- Sauté for 2 minutes until fragrant, stirring occasionally.
- The onion will flavor the beans.

Ready when: Butter is melted and foaming; onion is slightly softened
Tip: Keep the halved onion intact so it's easy to fish out later; don't chop it finely or it will fall apart.
Build the Pressure Cooker Base
- Add the drained soaked beans (1 pound / 454 g) and 4 cups (960 ml) of water to the pot with the onion and cardamom.
- Stir well, scraping up any browned bits from the bottom.
- Add 1½ teaspoons (9 g) of salt and ¼ teaspoon (0.5 g) of black pepper.
- Stir to combine.

Ready when: Beans are fully submerged and ingredients are mixed
Tip: Make sure to deglaze the pot bottom to prevent a 'burn' notice when pressurizing.
Pressure Cook the Beans
- Cancel sauté mode.
- Place the lid on the Instant Pot and set the valve to 'sealing.' Cook on high pressure for 20 minutes.
- (Soaked beans cook faster than unsoaked; if cooking unsoaked beans, use 25–30 minutes.) Once the timer sounds, let the pressure release naturally for 15 minutes, then carefully turn the valve to 'venting' to release remaining steam.

Ready when: Beans are completely tender and easily mash between two fingers
Tip: Natural pressure release prevents beans from bursting. If you quick-release, they may split.
Finish with Saffron and Butter
- When the lid is safe to remove, carefully open the pot.
- Fish out and discard the halved onion and cardamom pods.
- Pour the bloomed saffron (with its liquid) into the beans and stir gently but thoroughly to distribute the color evenly.
- Add the remaining 2 tablespoons (28 g) of cold butter cubes and stir until melted and glossy.
- Taste and adjust salt and pepper as needed.

Ready when: Saffron is evenly distributed, beans are creamy and golden, butter is fully melted
Tip: The butter enriches the broth and gives the dish a silky finish. Don't skimp on this final enrichment.
Plate and Garnish
- Ladle the saffron beans into a serving bowl or individual bowls.
- Top with a generous handful of the toasted almonds, and sprinkle with dried rose petals if using.
- Serve warm as a side dish alongside rice, roasted chicken, or lamb.

Ready when: Dish is plated and garnished
Tip: Add the almonds just before serving so they stay crisp and don't become soggy from the cooking liquid.
Good to know
Tips
- Saffron is precious and expensive; bloom it separately to ensure none is wasted and to maximize its visual impact.
- Soaking beans overnight reduces cooking time and digestibility issues. If you forget, use the quick-soak method: boil 2 minutes, cover, sit 1 hour, then drain.
- Don't add salt until after the beans are fully cooked; salt can toughen beans during cooking.
- This dish is both elegant enough for a formal Eid dinner and hearty enough for everyday meals—a true celebration in a bowl.
Make ahead
The beans can be cooked through Step 6 up to 3 days ahead and stored in the refrigerator in their cooking liquid. Gently reheat on the sauté setting before garnishing with fresh toasted almonds and rose petals. Do not toast almonds more than 2 hours ahead or they will soften.
Storage & reheating
Store in an airtight container in the refrigerator for up to 4 days. Freeze the beans and broth (without almonds or rose petals) for up to 3 months. Thaw overnight in the refrigerator and gently reheat in a pot over low heat. Add fresh toasted almonds and rose petals just before serving.
Substitutions
- dried white beans (cannellini or navy beans), soaked and drained → Cannellini beans or great northern beans. Both work identically; use whichever you prefer or have on hand. Cooking time remains the same.
- sliced almonds → Sliced or slivered pistachios. Pistachios add a slightly different but equally festive flavor; toast the same way until fragrant and golden.
- dried edible rose petals → Pomegranate arils or a pinch of dried mint. Pomegranate arils add brightness and crunch; dried mint adds a fresh herbal note. Both honor the Persian tradition.
- green cardamom pods → A pinch of ground cinnamon or 1–2 whole cloves. These warm spices complement saffron beautifully. Use half as much if ground, as it's more concentrated.
