Steps

Before you start
  • Chill the ice cream maker bowl for at least 24 hours before churning
  • Have all ice cream base ingredients at room temperature or cold as specified
  • Read through the miso caramel timing—it goes from sugar to caramel quickly in the Instant Pot
  1. Heat milk and cream

    • Add the cold whole milk and heavy cream to the Instant Pot.
    • Press the Sauté button and set to Normal/Medium heat.
    • Warm the mixture until it just begins to steam and small bubbles form around the edges—do not boil.
    • This should take 4–5 minutes.
    • You want it hot enough to temper the egg yolks but not so hot that it scrambles them.

Ready when: Small bubbles form around the edges and steam rises

Tip: Watch carefully—you want steam, not a rolling boil, or the yolks will cook unevenly

  2. Temper and combine yolks

    • In a separate bowl, whisk together the egg yolks and granulated sugar until pale and thick, about 2 minutes.
    • Slowly pour the hot milk mixture into the egg yolk mixture while whisking constantly—this prevents the yolks from scrambling.
    • Whisk until fully combined and smooth.

Ready when: Mixture is smooth, pale, and evenly combined

Tip: Add the hot milk slowly while whisking to prevent lumps and uneven cooking

  3. Cook custard in Instant PotOven 160°F / 70°C

    • Press the Sauté button on the Instant Pot and set to Normal/Medium heat.
    • Pour the tempered mixture back into the pot and stir continuously with a whisk for 3–4 minutes.
    • The custard should reach 160°F (71°C) on an instant-read thermometer for food safety.
    • It will thicken slightly and coat the back of a spoon.
    • Cancel the Sauté function.

Ready when: Custard reaches 160°F (71°C) and coats a spoon

Tip: Keep whisking to prevent hot spots and ensure even cooking; stop if you see scrambling at the bottom

  4. Strain and cool custard

    • Pour the custard through a fine-mesh strainer into a bowl to remove any scrambled bits.
    • Stir in the vanilla extract and fine sea salt.
    • Set the bowl in an ice bath (a larger bowl filled with ice and water) and stir occasionally until the custard cools to room temperature, about 30–40 minutes.
    • Alternatively, refrigerate for at least 4 hours or until thoroughly chilled.

Ready when: Custard is completely cool or thoroughly chilled

Tip: A chilled base churns more smoothly and freezes faster; don't skip the cooling step

  5. Make miso caramel sauce

    • In a medium saucepan, melt the cold butter pieces over medium heat.
    • Add the brown sugar and stir continuously for 2–3 minutes until the mixture is smooth and bubbling gently.
    • Remove from heat and whisk in the miso paste until completely dissolved—no lumps.
    • Pour in the heavy cream very slowly while whisking to combine evenly (it will bubble up slightly).
    • Stir in the vanilla extract.
    • Let the sauce cool in the pan for 10–15 minutes, then transfer to a bowl.
    + Show details

Ready when: Miso paste is fully dissolved; sauce is smooth and slightly thickened

Tip: Add cream slowly to avoid splattering; the sauce will thicken as it cools, making it easier to swirl

  6. Churn the ice cream

    • Activate the chilled ice cream maker according to the manufacturer's instructions.
    • Pour the cold custard into the machine and churn for 20–25 minutes, until the mixture reaches a soft-serve consistency (it should look thick and hold a small peak when the paddle lifts).
    + Show details

Ready when: Mixture is thick, pale, and holds a small peak; paddle moves with slight resistance

Tip: If your ice cream maker is taking longer than 30 minutes, the base may not be cold enough—chill longer next time

  7. Swirl and freeze

    • Transfer half of the soft-serve ice cream into a freezer-safe airtight container.
    • Drizzle one-third of the cooled miso caramel sauce over it.
    • Add the remaining ice cream, then drizzle the rest of the sauce on top.
    • Using a skewer or butter knife, gently swirl the sauce through the ice cream 4–5 times to create ribbons—don't overmix, or the sauce will blend into the ice cream.
    • Cover the container and freeze for at least 4 hours, preferably overnight, until firm.
    + Show details

Ready when: Ice cream is solid and scoopable; sauce is visible in swirls throughout

Tip: A light hand on the swirl keeps the caramel in visible ribbons; aggressive swirling muddies the color and flavor distribution

Good to know

Tips
  • White or chickpea miso is milder and sweeter than red miso, making it ideal for this dessert. It adds umami without overpowering savory notes.
  • If you don't have an ice cream maker, freeze the cooled custard in a shallow pan, stirring every 30 minutes for 3–4 hours until soft-serve consistency, then swirl in the caramel and freeze solid.
  • The miso caramel will thicken slightly as it cools, which makes it easier to swirl into the soft ice cream without it sinking to the bottom.
  • For extra richness, substitute 0.5 cup (120 ml) of the whole milk with additional egg yolk (1 large yolk), bringing the total to 5 yolks.
Make ahead

Prepare the miso caramel sauce up to 2 days ahead and store in the refrigerator; warm gently before swirling into soft-serve ice cream. The custard base can also be made 1 day ahead and chilled thoroughly.

Storage & reheating

Store in an airtight freezer container for up to 2 weeks. The texture remains smooth for about 1 week; after that, ice crystals may form. To serve, let the ice cream sit at room temperature for 5–10 minutes for easier scooping. Do not refreeze after thawing.

Substitutions
  • white or chickpea miso paste → Red (aka) miso paste. Red miso is stronger and more fermented; use 2–2.5 tablespoons for a less intense but still savory caramel
  • packed light brown sugar → Muscovado sugar. Use the same weight (165 g) for a darker, molasses-forward caramel with deeper notes
  • vanilla extract → Vanilla bean paste or scraped seeds from 1 vanilla bean. Use 1 teaspoon vanilla bean paste or the seeds from half a bean per vanilla extract amount called for
  • heavy cream (at least 36% fat) → Crème fraîche (for a more tangy ice cream base). Substitute up to 0.5 cup (120 ml) of the heavy cream; the ice cream will have a subtle tang
