Instant Pot Beef and Mushroom Meatballs

Tender ground beef meatballs with sautéed mushrooms in a silky sour cream sauce, prepared hands-off in the Instant Pot. Central European flavors come together quickly—no browning the meatballs individually required. Tangy, savory, and ready in about 40 minutes.

Steps

Before you start
  • Make sure your Instant Pot is clean and the sealing ring is in place
  • Prepare all ingredients (mise en place) before starting so you can work quickly once heat starts
  • Meatballs can be shaped up to 2 hours ahead and refrigerated on a plate
  • Have a measuring cup or small bowl of broth ready to pour into the pot
  1. Combine meatball mixture

    • In a medium bowl, combine the ground beef, breadcrumbs, minced onion, egg, milk, paprika, 1 tsp salt, and 1/2 tsp black pepper.
    • Using your hands or a fork, gently stir until just combined—do not overmix, as this will make the meatballs tough and dense.
    • Shape the mixture into 14–16 meatballs, each about 1.5 inches (4 cm) in diameter.
    • The mixture should just hold together when gently squeezed.

Ready when: Meatballs are formed and hold together; each is about 1.5 inches in diameter

Tip: Don't squeeze the mixture into dense balls. Light, loose shaping makes for tender meatballs. If the mixture feels wet, add another 1 tablespoon of breadcrumbs.

  2. Sauté mushrooms and garlic

    • Set the Instant Pot to sauté mode (high setting if available) and add the butter.
    • Once melted and foaming, add the sliced mushrooms.
    • Cook, stirring occasionally, for 3–4 minutes until the mushrooms are golden brown at the edges and have released some of their liquid.
    • Add the minced garlic and cook for 30 seconds until very fragrant.
    • Season with a small pinch of salt and a crack of black pepper, then transfer the mushrooms and all accumulated liquid to a plate.

Ready when: Mushrooms are golden brown at the edges, garlic is fragrant, and mushrooms have released visible liquid

Tip: Browning the mushrooms adds deep, savory umami flavor to your sauce. Don't skip this step.

  3. Deglaze and arrange meatballs

    • Pour the beef broth into the Instant Pot (it will deglaze any browned bits stuck to the bottom, adding extra flavor).
    • Return the mushrooms and any accumulated liquid to the pot and stir gently.
    • Arrange the shaped meatballs in a single layer on top of the mushrooms—don't stir them in.
    • They don't need to be fully submerged; the steam will cook them evenly.

Ready when: Meatballs are arranged in a single layer on top of the mushroom mixture

Tip: Placing meatballs on top rather than submerging them helps them stay intact and cook evenly under pressure.

  4. Cook under pressure

    • Close the Instant Pot lid and switch the pressure release valve to the sealing position.
    • Press the high-pressure (or manual) button and set the timer for 8 minutes.
    • The pot will take about 5–6 minutes to come to pressure while you wait (you'll hear the pressure release valve hiss slightly at first, then seal quietly).
    • The cooking timer will not start until full pressure is reached.

Ready when: High-pressure cooking timer beeps to signal completion

Tip: Resist the urge to open the lid or move the pot while it's pressurizing. This ensures the timing is accurate and the seal remains intact.

  5. Release pressure safely

    • Once the timer beeps, carefully switch the pressure release valve from sealing to venting (pointing straight down or to the open symbol, depending on your model).
    • You'll hear steam escape rapidly—this is normal and takes about 1–2 minutes for a quick release.
    • Alternatively, let the pot sit for 5–10 minutes for a gentler natural release, then carefully switch the valve to venting.
    • Wait until the float valve (the metal pin on top of the lid) drops completely and is no longer sticking up before you open the lid.

Ready when: Float valve has dropped completely; it is safe to open the lid

Tip: If you're unsure the meatballs are tender, use a natural release instead of a quick release for an extra-tender result.

  6. Stir in sour cream sauce

    • Switch the Instant Pot back to sauté mode (medium-high setting).
    • Stir in the sour cream and Dijon mustard (if using) until well combined with the broth and meatballs—there should be no lumps.
    • Heat gently for 2–3 minutes, stirring occasionally, until the sauce is warmed through but not boiling.
    • Taste and adjust seasoning with a pinch more salt and pepper as needed.
    • The finished sauce should be creamy, silky, and rich.
    + Show details

Ready when: Sauce is warm, creamy, and smooth; no signs of boiling or curdling

Tip: Don't let the sour cream boil vigorously, or it will separate and look curdled. Keep the heat moderate and stir gently. If the sauce seems too thick, stir in a splash of warm broth.

  7. Serve and garnish

    • Transfer the meatballs and sauce to a serving dish or individual bowls.
    • Garnish with fresh chopped parsley if desired.
    • Serve immediately over egg noodles, white or brown rice, creamy polenta, or with crusty bread for soaking up the delicious sauce.

Ready when: Meatballs are plated and ready to serve

Good to know

Tips
  • Don't overmix the meatball mixture. Stir just until the ingredients are combined with no visible streaks of beef. Overmixing causes tough, dense meatballs.
  • The mushrooms release their moisture as they cook, and this liquid becomes the base of the sauce along with the broth. This is why we don't skip sautéing them first.
  • Sour cream can curdle if exposed to high heat. Keep the heat at a gentle simmer in the final sauce step and stir often. If you see any curdling, remove the pot from heat and stir in 1–2 tablespoons of warm broth.
  • Serve these meatballs with egg noodles, rice, or crusty bread to soak up the creamy sauce. A simple green salad on the side balances the richness beautifully.
Make ahead

Meatballs can be shaped up to 2 hours ahead and refrigerated on a plate, or frozen for up to 3 months. Cook from frozen, adding 2–3 minutes to the pressure-cooking time. The finished dish can be made 1 day ahead and reheated gently on the stovetop over low heat or in the Instant Pot on sauté mode (add a splash of broth if needed).

Storage & reheating

Room temperature: up to 2 hours. Refrigerator: up to 4 days in an airtight container. Freezer: up to 3 months in a freezer-safe container. Reheat gently on the stovetop over low heat or in the Instant Pot on sauté mode, stirring occasionally and adding a splash of broth if the sauce has thickened.

Substitutions
  • ground beef → 50% ground pork and 50% ground beef, or all ground pork. Pork creates a more traditional Central European (Polish/Hungarian) flavor. Use the same total weight.
  • sour cream → Greek yogurt or crème fraîche. Use the same volume. Both work well and add a slightly different tanginess.
  • mushrooms → cremini, portobello, or a mix of mushrooms. Choose whatever is available. Larger mushrooms like portobello should be quartered rather than sliced.
  • Dijon mustard → whole grain mustard, omitted entirely, or 1/2 tsp ground caraway seeds. Caraway seeds are very Central European and add an authentic herbaceous note. Omit mustard if you prefer.
